It's a lazy Saturday night in, and that calls for some Vanilla Hot Chocolate. I topped this with fresh whipped cream and chocolate shavings to feel fancy 😁 Recipe Below!
Keto Hot Chocolate For 1
☕1 Cup Unsweetened Vanilla Almond Milk
☕ 1-2 tbs granulated erythritol, dependent on taste
☕ 1 tbs unsweetened cocoa powder ☕ 1 tsp Vanilla Extract
☕ Dash of Salt
🥄 Mix together cocoa, erythritol and salt in a mug.
🥄 Microwave the almond milk for 1min 30 seconds (until warmed through)
🥄 Add the milk to the cocoa mug, slowly. Add the vanilla and mix.
🥄 Optional, add whipped cream and chocolate shavings (I had left over carbs, so I added some in the photo 😊)

Quick skillet meal! I had all the food prepped so just threw it together for a quick meal. Cauli rice, hamburger meat, and chunks of bacon cooked in EVOO and broth, and a bit of seasoning. Homemade Cheesy Cauliflower Tots😍😍 I👏CAN'T👏STOP👏EATING👏THESE -1 (1lb) Bag Cauli Rice
-2 Tbsp HWC
-2 Tbsp Almond Flour
-1/3 Cup Grated Parm
-1/2 Cup Sharp Cheddar
-1/2 tsp Onion & Garlic Powder
-Salt & Pepper to Taste
Thaw cauli rice if frozen. Grease mini muffin tin throughly. Mix all ingredients in a bowl, scoop about 1 Tbsp of mix in each muffin cup. Bake @ 400° for 15 minutes. Carefully flip tots and bake for an additional 15 minutes. Makes approximately 4 dozen tots. *Grease pan between batches.

You’ll have to get the recipe from the book but here are my pics to show just how easy it was. I did have to make one minor swap: I couldn’t find radicchio anywhere so I used red cabbage. I am not sure if that is anywhere close, but it all tastes amazing! There’s zucchini, cream cheese, andouille sausage and red onion all up in dis bacon dish! 🤤 Have you check out this comprehensive book out yet?! Recipes are just one small portion of this book.
