What a day....actually, I did not want to post something today, as I was simply too tired (played all night nurse for my beagle who thought she could simply overeat on chocolate and dought). Therefore, my entire day was upside down and instead of catching up with my friend, I spend morning and late afternoon at the vet....On top, I do not feel at all like going out, social duty is calling and look what? A #NSV comes up! Remember that I wanted to wear that dress at Xmas? I still can, however it fits already now (actually the first time, could not even close it in the store....and yes, girls do such things!)! So off we go, hope I mange to eat low carb, in the worst case I go only for a vodka and say I also have stomach problems 😂😂😂 ps: yes, I need to work on my light set-up in my walk-in closet 🙈
Needed to see this to boost my spirits today after seeing the scale go up 2lbs. The left and center is today. Trying a dress back on for my anniversary dinner tonight. Haven't been able to fit into this for a while. Also noting I'm not wearing any sort of shape ware underneath it. It's all me. To the right, an uncomfortable, trying to cover up with a shawl and god knows how much Spanx girl. Wishing she didn't have to be in any photos. I feel so much happier and healthier now. I can't believe I ever let myself get that unhealthy. Keto has changed my life for the better. So thankful I have been given this opportunity.
I got my butt up early on this Saturday morning and got my workout done. I needed to sweat a little to fight this cold or sniffle I still have going. Also my kids were still asleep. I'm ready to start my day. It's wet here in California so not sure how far I'll be going today. What do you guys have planned for this Saturday?
A cold and rainy day here in Pittsburgh can only call for one thing , low carb Apple Cider Donut bites with chocolate dipping sauce!. The amazing folks at @cocopolosuperfood sent me chocolate to try out and it is seriously the best Ive had! The one I used here was their 39% Cocoa brand. It is sweet, creamy, chocolatey and you cannot even tell it's low carb! It also melts down very easily like regular chocolate. And before you say Apple's aren't really low carb, I know 😊 I only used 1/4 cup apple cider, less than 1 net carb/ bite.

🍩Apple Cider Doughnut Bites
½ Cup Coconut Flour
¼ Cup Swerve
1 Tsp Baking Powder
¼ Tsp Salt
Dash of Cinnamon, Nutmeg and Clove
¼ Coconut Oil, Melted
½ Tsp Vanilla
¼ Cup Apple Cider
¼ Cup Almond Milk, unsweetened
About 1 cup Oil of Choice, for frying
¼ Cup Granulated Erythritol
1 Tablespoon Cinnamon
🍫Chocolate Sauce- optional (will add a total of 5 Net Carbs to recipe)
40g 39% @cocopolosuperfood Chocolate Nibs, melted
1. Combine the flour, erythritol, baking powder, salt and spices.
2. In a separate bowl, combine the eggs, melted oil, vanilla, cider and milk.
3. Preheat the oven to 325.
4. Combine the wet and dry mixtures and let set until the oven heats up.
5. In a mini muffin pan, fill the holes with about 2 tablespoons of mixture. The batter will be thick.
6. Bake for 15 minutes.
7. Meanwhile, heat oil of choice in a heavy bottomed pot to 350 degrees.
8. Remove the donuts from the tin and fry them for 2-3 minutes. Careful not to let them burn.
9. Carefully remove them from oil, and place on paper towel.
10. Mix the cinnamon and Erythritol in a paper bag (or large bowl). Drop the donuts in the bag and shake until covered.
11. Dip into melted chocolate and enjoy !
Makes 16 Donut bites / .7 Net Carbs each

Yesterday I let my PMS cravings get the best of me. I wasn't listening to my body when it was telling me I wasn't hungry, even though I justified to myself that everything I was eating was keto. I should have listened, body really does know best. Even though I'm disappointed I'm not going to let this set me back. Pushing through my disappointment, I have a goal to reach. I know 2 pounds doesn't seem like much but when you have struggled with weight your whole life it can really mess with you. Some days we thrive and others we are fall but we have to keep getting back up no matter what. 💕
Praying my brain doesn't put a damper on me enjoying my anniversary dinner tonight.
11/18/17 today is an exciting day for me!! I hit my goal in my #dietbet this morning! I was worried I wouldn’t make it, since I had set backs last week on my work trip, but I have been working really hard on getting back into ketosis! I needed to lose about 9 pounds in this bet, and I’ve exceeded that by more than a pound already! Yay! .
Tomorrow is the last day, and it just happens to be my 4 year wedding anniversary tomorrow as well. What a great gift. I hope to be my wedding-day weight by June of next year, when my sister gets married. So I have about 30 pounds to go. I can’t even believe that I’ve found something that really works for me. I am so thankful for the #ketolifestyle . I finally feel free!! .
Enjoying my peppermint white chocolate mocha bullet proof coffee and writing out my Thanksgiving grocery list while my hubby prepares for weekend duty. How many of you guys are "ketofying" their Thanksgiving recipes? We will be eating with non keto friends, not to mention my husband is a carboholoc as well. Since my girlfriend and I are splitting the cooking 50/50 I'm making sure at least what I bring will be keto. She is so sweet she always makes keto things for me as well. I find that the majority of people love keto food so it's really never a problem sharing. The only things I'll be missing out on this year is the stuffing and mashed potatoes but that's okay because I'm bringing two keto desserts 🍰🍰😍 Here is what I'll be dining on this Thanksgiving!
