One of the quickest proteins to cook are scallops. The beautiful thing about them is how delicate they are and how little they require. I love to cook scallops in garlic butter and scallions. What a match made in heaven.

I took my leftovers of @nomnompaleo sausage crust pizza and tried to figure out why the texture was throwing me off. Decided I needed a crispier crust. Put the pizza on a hot cast iron skillet for a while and 💥 this became delicious meatza.

Because it’s that good... cauliflower bake again. 😋 (Sorry I’ve been M.I.A. lately. Haven’t been feeling well and have been eating very little and very basic. But keeping mostly keto... except for the couple of days I ate only a handful of crackers. 🤢)
Made my own soft chocolate caramel!✨ You need:
50 grams of butter
1 dl whipped cream
2/3 dl fiber syrup
2 tablespoons sweetener (I used sötströ)
2 tbsp cocoa
Put all ingredients in a saucepan. Boil for about 40 minutes until the batter reaches 125 degrees. Dress a small baking dish with baking paper and pour the caramel into the bowl. Allow to solidify in a refrigerator. Cut into pieces of the desired size.✨👌🏼

This is the first trip (in quite a while) that I’m actually excited to wear cute outfits!! Choosing my clothes to pack was a fun activity.... for a change! .
Please excuse the laundry, it’s laundry week, so it’s everywhere. BUT LOOK AT THIS SHIT! I’M GETTING SKINNY DAMNIT! I’ve been seeing progress again after being ‘stalled’ for a few months. (Mostly because I was getting that carb creep on the weekends. And work stress too) I’m so close to my first major milestone. Even if the numbers on the scale aren’t exactly what I wanna see all the time how can you deny those inches lost!? I’m so happy that I decided to try what it meant to NOT give up for once and learn from my mistakes and that it’s almost been a year and I’m STILL GOING STRONG! I got tired of starting over and giving up and saying I’ll start tomorrow, or next week, or whenever. I just said eff this I’m starting NOW and just went with it. I am noticing all the time small changes and I look at myself in the mirror sometimes and I don’t register that it’s me for a sec because I got so used to seeing the old me. I used to go days or weeks without really looking at the mirror except a quick wardrobe check to make sure I matched or something. Now I notice I spend time there, looking, noticing, and being HAPPY with my reflection. It’s so awesome!
