I’m having my breakfast right now & have to head to uni in about half an hour. Today it’s going to be all about statistics.. not my favourite topic, but I have to deal with it anyways.
Currently it’s raining outside, also it’s still quite dark and foggy. This kind of weather seriously makes it hard for me to motivate myself to leave the flat.. guess I’m on the best way to develop an autumn-winter blues.

Throwing it back to the weekend and celebrating being inspired every day by wise people like @drchatterjee who said something that really resonated with me: “4 years ago if you asked me why the most important aspect of health was, I would have said nutrition.  If you ask me that same question today, I’d say stress.” I’d second that and raise you to stress/ sleep. 
Lack of sleep and stress has to be one of the most underrated parts of health and goes hand in hand with our modern day busy lives.  Especially in hectic cities like London- where we try to squeeze every second out of the day 
As I’m talking about insulin resistance and pre diabetes this week, do know that stress and lack of sleep are just as important here than diet. 
One study showed that just one week of sleeping only five hours a night reduced insulin sensitivity by 24%. I've been very guilty of sacrificing sleep to get up to train when I was competing. It took me a long time to come around to the idea that sleep was more important than running for hours, even when trying to lose weight. I mean you:re not exactly burning calories when sleeping.

But l've been proven wrong. Prioritise that sleep.

Today I have literature classes which is amazing, because I love reading so much. I’m also considering writing my BA thesis in English Literature, but didn’t think about a topic yet. I really should do that since there’s only a month left until I have to sign up for the dissertation. It’s gonna be fun, but at the same time loads of work. 
Also, I want to let you guys know that I got my grade for the assignment I wrote last semester.. I reached 9/10! I’m so so so happy about it & still can’t believe it as you can tell by my excitement haha
Now back to the food! These are bacon-wrapped meat balls. You have to try these if you haven’t before.. Very addictive!

Looking for a simple, delicious, keto friendly appetizer or party dish? Here is one of my all time favorites. Israeli cheese spread. All you need is an 8-ounce package of cream cheese, 1/4 cup of sesame seeds, (the recipe is usually made with white sesame seeds I just had black seeds on hand too so I️ mixed them), 2 Tablespoons dried oregano and plenty of good quality, extra virgin olive oil. First toast the sesame seeds in a small skillet over medium heat until the begin to look golden and pop slightly. Remove them from heat and set aside. Split the cream cheese in half to make two pieces. Place each piece between two layers of plastic wrap and press out into a discs of about equal size. Place one piece of cream cheese on a salad plate or serving dish and sprinkle it with half of the toasted sesame seeds and one Tablespoon of the oregano. Pour over a generous amount of olive oil. Then place the other piece of cream cheese on top and repeat with the rest of the sesame seeds, oregano and another generous helping of olive oil. Cover with plastic wrap and refrigerate for at least an hour to allow the flavors to marry. When ready to serve bring back to room temperature and serve with your favorite vegetables or low carb crackers. I️ toasted @cutdacarb wraps in the oven until crisp and then broke them into cracker sized pieces. They work really well with this flavor combination. Chunks of Sweet peppers, cucumber slices, peppadew peppers, or even pickled turnips would all be delicious with this cheese spread. The ingredients are simple but the flavor is so satisfying and delightful. You can also roll the cream cheese into balls and then roll them in the sesame seeds and oregano and coat them in olive oil for perfect hors d’oeuvres with out the dipping. Instructions:
1. Preheat the oven to 200 C / 400 F. Start by grating the cauliflower to make the cauli-rice.Grate the mozzarella and parmesan and place in a bowl. Keep some cheese aside for topping.
2. Heat a large pan greased with 1 tablespoon of oil over a medium-high heat and add the cauli-rice. Season with salt and lower the heat. Cook for about 15 minutes while stirring. Cook on low heat to remove as much moisture as you can without burning it. Once cooked, remove from the heat.
3. Place the cooked cauli-rice into a bowl. Add a cup of grated mozzarella and ¾ cup of grated parmesan cheese. Add the garlic powder, dried oregano and one egg white. Mix until well combined using your hands.
4. Place the dough on a pizza tray (I used a 13-inch tray) lined with strong parchment paper and flatten to create the pizza crust using your hands. The crust should be no more than ½ inch (1 cm) thick. Brush with some oil and leave the rest for the other side.
5. Place in the oven and bake for 15-20 minutes. Then, remove from the oven and put put another piece of parchment paper on top of the crust. Flip on the other side so that the new parchment paper is on the bottom.
6. Peel the top parchment off - use a knife to loosen it if needed. Cooking on both sides will help the crust get crispy. Brush with the remaining oil.
7. Place back in the oven for another 10 minutes or until golden. Remove from the oven and spread the marinara sauce on top of the crust.
8. Add the remaining mozzarella cheese and parmesan cheese and top with slices of Pepperoni (I put 2 layers of Pepperoni, about 30 slices).
9. Place back in the oven and cook for another 5-10 minutes or  until crisped up.
10. When done, remove from the oven and set aside to cool down for 5 minutes. Garnish with fresh basil leaves and drizzle with extra virgin olive oil. Enjoy hot or cold!

* ½ tsp salt (I like pink Himalayan)

Toppings:

So happy it turned out sooooo good even better than the regular pizza it was my first time to do this recipe and it was a success the whole fam loved it and they didn’t even notice it was made of cauliflower not until aomebody asked me where I got my dough lol! I made these this morning! ❤ 
They turned out LOVELY! 😮 
You can pretty much stuff them with anything your little heart desires. 
KETO FATHEAD STUFFED MUFFINS. I went with the classic mince meat and cheese combo. I had some leftover pesto that I made the night before.. So I added that in as well. Here's the recipe:
2 ounces cream cheese
2 cups mozzarella, shredded
2 eggs, beaten
1 cup almond flour
pinch salt & pepper
2 ounces hard cheese of your choice (cheddar, colby, etc.)
6 breakfast sausage patties, pre-cooked
1. Preheat the oven to 400°F (200°C).
2. Combine the shredded mozzarella and cubed cream cheese in a large bowl. Microwave for 2 minutes, stirring halfway through.
3. In a small separate bowl, combine beaten egg and almond flour. Add cheese mixture and mix well, again, REALLY well.
Dough may be sticky, this is ok. Dust it with additional almond flour if you need to. 
4. Roll out into a log and cut into sections to form 8 to 10 balls, depending on the size of the sausage. Flatten dough balls, place sausage on the dough, then cheese and wrap dough around. Put the stuffed dough into a greased muffin tin.
5. Bake for 12-15 minutes or until golden and set. Top with more mozzarella if desired.
Make more to have all week! These freeze really well. Remove from the freezer and microwave for about 1 minute.
