DESSERT ALERT: choco-strawberry shake 🎉🎉🎉 1. in a blender, put in strawberries
2. add 1/2 cup heavy whipping cream
3. also 1 cup almond milk
4. option to add 1 packet (sweetener)
5. add 1 tbsp unsweetened cocoa powder
6. you may also add chia seeds
7. add ice
8. blend well
*you can put in h2o and coconut milk if you want

Keto Friendly Spicy Almonds
I used to make this AGES ago but hadn't especially now since being keto.
I had recently discovered that Swerve not only melts but carmelizes. Had I known this last year, I would have played around with a few more recipe ideas for the cookbook. No matter I can have fun with it now.
Now knowing this, I tried out this recipe using Swerve. Compared to the carby version, it isn't as sweet but it sure is tasty. And I warn you, it's addictive!
Wonderful as a snack and great to give as gifts.
1.5 tsp salt
1.5 tsp ground cumin
1 tsp hot pepper flakes
1 tbs Swerve
3 tbs ghee or high smoke point oil (I used walnut oil because I had it on hand)
2 cups raw almonds
1/2c Swerve sweetner
1. Mix ingredients for spice mix and set aside.
2. Prepare a cookie sheet, wrap in foil.
2. Heat oil in a 10" cast iron pan on medium heat until just at smoke point.
3. Add in almonds, stir around to coat with oil and heat up about a minute.
4. Gradually sprinkle in Swerve while stirring almonds.
5. Keep stirring almonds after all the Swerve has been added. About 1-2 minutes to carmelize.
6. Remove pan from heat.
7. Sprinkle a third of the spice mix all over the almonds while stirring. Once incorporated, sprinkle in another third while stirring. Then the last third to ensure it's mixed well.
8. Pour almond mixture onto the cookie sheet and spread it out.
9. Let almonds cool on cookie sheet.
10. Once cool, transfer to an air tight container or cello bags.
A quick dinner after a hectic getting ready for Thanksgiving Day! BBQ chicken thighs marinated in balsamic dressing,with skin, steamed zucchini and asparagus with a side of organic ranch for dipping. Time for bed!!!
Swipe --> So I might be a little crazy, but I made a bunch of pudding shots for my family's Thanksgiving, then decided to do a ton of math to get the individual nutritional info... Yikes... Worse than I thought, lol and I even used sugar free pudding which cut the carbs down by 17? grams/serving. Looks like I will only be having one or two, then I am undecided on whether to go wild with mashed potatoes or not bc I don't want to feel bad (physically) or mess up my progress... We shall see... .
This post is also important in that it shows how much more carbs were in these than I'd expected. I saw 6g carbs/serving with 4 servings/box for the pudding, for example, and thought "well, it'll be divided up into a bunch of individual shots, so no biggie...." Well yeah no biggie until everything gets added up together.. I didn't even really consider the graham crackers or milk. 😐 Oh well, now I know. ALSO- the little "sips or dips" add up too... I probably had a shot from licking the bowl and spoon. 🙄 I need to get it together lol

I received a packet of the new Club House Organic Taco seasoning to test out for free! I was interested to see how it compared to our usual brand. I definitely like it better!! The flavour is more complex and no funny aftertaste. The carb count is a bit high, but could easily fit in your macros if you meal plan your day!! ..

✳️Herb and Butter Roasted Turkey Breast
⏳Prep Time: 15 min
⏰Cook Time: 180 min
6 lb Turkey Breast
1 stick Unsalted Butter, softened
1 Tbsp Fresh Thyme, chopped
1 Tbsp Fresh Rosemary, chopped
1 Tbsp Fresh Sage, chopped
1 Tbsp Garlic, minced
1 tsp Salt
½ tsp Pepper
2 Sprigs Rosemary
1 Sprig Sage
5 Sprigs Thyme
1 Lemon, sliced
Salt, to taste
Pepper, to taste
1️⃣Preheat oven to 325F.
2️⃣In a deep baking dish, layout the lemon sliced in the center of the pan.
3️⃣Drain any juices from the turkey and place on top of the lemons.
4️⃣Pat the turkey dry with a paper towel.
5️⃣Run your fingers between the skin of the turkey and the meat breaking the membrane so that the skin is loose but still attached to the turkey.
6️⃣In a small bowl, mix the butter, chopped herbs, garlic, salt, and pepper until combined.
7️⃣Take the butter mixture and evenly stuff it under the skin of the turkey and on top of the meat of the whole breast, this will ensure a crispy skin and juicy turkey meat.
8️⃣Stuff the herb sprigs in the breastbone cavity of the turkey.
9️⃣Drizzle the turkey with olive oil and season with salt and pepper.
🔟Massage the oil and seasoning into the turkey.
1️⃣1️⃣Place the turkey in the oven and cook until the thickest part of the breast reaches 160F.
1️⃣2️⃣If the skin starts to become too dark, cover the turkey with foil and continue to cook.
1️⃣3️⃣When the turkey reaches 160F, remove from the oven and let rest for 30-45 minute before carving. (The turkey will continue to cook to 165F while resting.
1️⃣4️⃣After 30/45 minutes of resting, carve and serve.

I'm going to be close to home today so I figured to make some heavy cream yogurt!
I'm using @avalondairybc heavy cream. The yogurt cups are made by the Instant Pot company and can be found on Amazon.
The Instant Pot model I'm using is the Smart, it's a 6qt with Bluetooth connectivity.
What's the difference between the Smart and the DUO60?
-you can create your own programs (I rarely use this but still have full intentions of doing so)
-I can monitor the pot from the living room (not really necessary but cool!)
FYI my 2nd pot is a DUO60 (I picked it up when I was developing recipes for the cookbook)

For breakfast today is the "spinwich" at the Yellow Deli in Chilliwack. It's a packed egg and spinach patty with parmesan and cheddar cheese topped with mayo, ketchup and spinach leaves.
Normally served on a bun so I got it without. (I should have brought, bake in a minute buns!) I would have asked them to hold the ketchup had I known but it was listed as "special" sauce.
The melty cheese was great, I mean who doesn't love melty cheese?! I don't come here often but I think I found something that I can have. It is open 24hrs week days so if I'm feeling peckish at 3 am and want to go out, I'll consider it. 😉
