I know I post this meal a lot, but it’s seriously one of my faves and so easy to make. Keto overnight “oats”. I’ll post the recipe cuz y’all need to try it! Makes 1 ¼ cup (300 ml)
Vanilla Keto Overnight Oats
⅔ cup (160 ml) full-fat coconut milk, plus more for the following day
½ cup (75 grams) Manitoba Harvest Hemp Hearts
1 tablespoon chia seed
2 teaspoons confectioners’ erythritol or 3 to 4 drops of liquid stevia
½ teaspoon vanilla extract
pinch finely ground Himalayan rock salt
12 whole almonds, omit for nut-free
6 whole raspberries
Add all ingredients to a 12 fl. oz. (350 ml), or larger container with a lid. (Or a sandwich bag if you can’t find a clean dish like me sometimes. 🙋🏼) Stir until combined. Cover and set in the fridge overnight, for at least 8 hours.
The following day, add additional milk until desired consistency is reached. (I’ve never needed to add more). Add toppings if desired, and enjoy.
In case anyone wants the recipe here you go:
1 cup almond butter
1 cup coconut oil
1/3 cup coconut flour
1/2 cup Dutch cocoa powder
3 Tbs Dolcedi apple sweetener (it’s a natural apple based sweetener and is not what the original recipe called for but I have a hard time with stevia and couldn’t find munk fruit sweetener)
⚜️Over medium heat in a small pot combine almond butter and coconut oil in a pot and melt
⚜️in same pot add dry ingredients and sweetener ⚜️pour melted mixture in a bowl and place in freezer for about 40-45mins, or pour into silicone molds (which is what I used, if you do use a silicone skip the next two steps) ⚜️once solidified remove the bowl from the freezer and form into balls. Then return balls to the freezer.

Keto dessert!!! These too are amazing 😉💕
1 tablespoon chia seeds
1/2 cup almonds
2 tablespoon butter
2 teaspoon vanilla extract
2 tablespoons coconut flour
1 tablespoon coconut oil
5 sachets of organic stevia
0.3 cups of milk
1️⃣Grind almonds in food processor until it forms a paste then add 2 sachets of stevia and continue until butter forms
2️⃣in a pan, melt butter until browned
3️⃣Add milk to butter once its browned and 2 sachets stevia and vanilla extract. Turn heat to low and stir.
4️⃣Add almond butter to the mix in the pan let it cook into a paste.
5️⃣In a bowl add almond paste mix and add the remaining ingredients. Mix well
6️⃣put into a baking did or into silicone muffin cups and Freeze for an hour at least.
7️⃣Remove from freezer and cut into pieces if it is in a baking dish.

I’m a firm believer in the power of carbohydrate restriction... as you will notice most of my meals are high in fats, greens and moderate protein intake of 4oz per meal. With unlimited vegetables and few servings of fats.
My dinner is always been bulletproof ice cream 🍨 for a treat. Keep in mind that the ice cream is packed with many nutrients and high saturated fats to allow my body do go through an 18hr intermittent fasting.
