I MADE BAGELS 😍 With 5 ingredients 😍 In 15 minutes 😍 Pretty amazing right?! It’s safe to say this bagel loving mama is OBSESSED!!!
I got the recipe from @skinnytaste snd used my air fryer to make them ( don’t worry, you can use an oven too!! ) The recipe makes 4 and Trader Joe’s Everything But the Bagel seasoning is pretty much perfection sprinkles on top 👌🏼 You can check out the skinnytaste blog for the oven method or check out the air fryer method I used below.
1 cup flour ( I’ve tried both white and whole wheat and loved both! You can also use GF but they don’t rise as much )
1 cup plain Greek yogurt ( MUST be thick Greek yogurt! )
2 tsp baking powder
3/4 tsp kosher salt
1 egg, beaten
In a bowl combine the flour, baking powder and salt and mix well. Add the yogurt and mix with a fork or spatula until well combined, it will look like small crumbles.
Lightly dust flour on a work surface and remove dough from the bowl, knead the dough a few times until dough is tacky, but not sticky, about 20 turns (it should not leave dough on your hand when you pull away).
Divide into 4 equal balls. Roll each ball into 3/4-inch thick ropes and join the ends to form bagels.
Top with egg wash and sprinkle both sides with seasoning of your choice.
Preheat the air fryer 325F degrees and set for 11 to 12 minutes. Transfer in batches without overcrowding and bake 11 to 12 minutes, or until golden. No need to turn. Let cool at least 10 minutes before cutting.
Healthy banana bread - feels just like eating cake but without the sugar, butter and processed flour! This particular recipe includes banana, oat flour, small amount of raw honey, a couple of eggs, vanilla paste, chia seeds and frozen raspberries. Straight out of the oven I could attempt eating the whole loaf!

Chickpea and Lentil burgers 😋🤤👌
1 onion, chopped
2 cloves garlic, minced
1 tin of chickpeas, drained and rinsed
1 tin lentils, drained
1 tsp ginger
1 tsp cumin
1 tsp turmeric
1 cup breadcrumbs
Flour for dusting
Oil for frying
Cook onion in frying pan until they start to go golden, add garlic and cook for a minute, add ginger, cumin and turmeric and cook off for another minute.
Put chickpeas, and half the lentils in a bowl, add the onion mixture. Blend together in a food processor or with a stick blender. Add in other half of lentil, egg and breadcrumbs. Combine with a spoon, use hands to finish combining. Lightly sprinkle flour on the bench and hands, shape into 6 burger patties.
Heat oil in a pan and fry patties on each side for 2-4 minutes, until golden brown. Serve on a burger bun with your choice of toppings.
After having bean burgers last week, I was craving burgers once again! Decided to try a different type with chickpea and lentils, I based my recipe on a couple of different ideas, and the end result worked really well and was absolutely delicious. I was impressed, so was my daughter and I can't wait to eat another one tomorrow (or maybe later tonight if pregnancy hunger takes over 😉).

In the picture today , #oatmeal and #banana pancake in the making..the battery on my phone died, the kids were hungry and cranky and so I didn't get a chance to take a pic of the pancake after it was fully done.
If you're looking for a kid friendly breakfast/snack that is both nutritious and delicious , here's once such dish.
I powdered coarsely 1/2 a cup of unprocessed steel cut oats in the blender. To this I added 1 egg(you could also substitute egg with apple sauce) and a banana and pureed them to a smooth paste. I added milk to bring it to the right consistency and also a splash of vanilla. I then greased a non-stick pan with ghee and made pancakes.
I poured a ladle full of batter onto the griddle (it'll spread out on it own). once tiny bubbles started to appear, I topped the pancake with finely chopped walnut and raisins. Flipped over the pancake once. I served them with honey!
While we are on the topic of oats, I 've to tell you that I've switched from Quaker oats to unprocessed steel cut oats or groats on the advice of my dear friend Malathy at the HealthyIndian ..long story short, processed oats have no nutrition.. Malathy does all this research and so when she told me this, I just promptly made the switch. I had no clue that there was something called groats..Did you? I was under the impression that the processed oats I was using was was fortifying us while in reality it was doing nothing for us. I first started making my kids these almond-crusted chicken tenders nearly five years ago. The recipe (inadvertently) calls for #Whole30 compliant ingredients, and we’ve been playing around with them lately-doing a 🥥 coconut-crusted version as well as marinating the chicken in @primalkitchenfoods 🌱Greek Goddess Dressing. 🙌🏻 Any way we’ve had them, we just can’t seem to get enough!
