Upon the suggestion of @reblclark we had something to the effect of Cook broccoli longer than usual from the archives of @ciaosamin. TO MAKE: Mix 1/2 cup whole wheat pancake mix, 1 whole large egg, 1/3 cup of organic milk (or milk alternative), 2 tbsp of hemp seeds, 1 tsp Agave, 1/4 tsp vanilla extract, 1/8 tsp of cinnamon. Spray coconut oil on medium heat pan and cook until bubbly. Es dif穩cil, pero Toni ayer fue prueba de que funciona. Desde hace meses no le gustan los camarones, en general el pescado, pero he seguido intentando. Probamos varias recetas, maneras de cocinar y nada. Pero nunca cambie el menu e intentaba por lo menos una vez al mes de darle mariscos. Trato de no contar en frente de el que no le gusta, aunque no es f獺cil. Anoche cocine una pasta  con camarones y tomate y se la devor籀. Comi籀 tres camarones y no dejo nada. No fue necesario esconderlos en la receta o triturarlos, comio a la par con nosotros. Oh my gosh guys its OFFICIAL not only did I create a meal plan approved dinner, and took 5 minutes to prep and 20 minutes to make!

Most IMPORTANTLY it is 12-year-old and an eight-month-old approved!!!  Officially feeling like a BAD A$$ MAMA!

I could have never thought this would be a real life moment! 
I mean guys I literally lived on guacamole and eggs cooked 12 different ways for the large majority of my LIFE!!! But guess what clean eating tonight absolutely AMAZING!!!! #kidfriendlymeals #8monthold #girlmom #sheatefish

Its whats for dinner!!! Easy and good for everyone.

Pecan Crusted Chicken Strips

1 chicken breast (or about 6 tenderloin strips)
2 slices wheat bread or panko 
1/2 cup pecans
1/4 cup Dijon mustard
1 tsp honey

1.  Process bread and pecans until breadcrumb consistency.
2.  Slice chicken into 6 strips
3.  Combine mustard and honey in a dish big enough for dipping
4.  Coat strips in mustard/honey mix and then roll in crumbs to coat.
5.  Bake at 400 for 20-30 minutes.  Ideally cook them on a rack over a baking sheet (like a cookie cooling rack or something like that).
6.  Check when almost done - you may want to flip them over to make them evenly crispy.

1 red, 1 blue, 1 yellow

This lentil recipe has been a big hit and a big help. And it's super easy. 
Ingredients:
1-2 sweet potatoes peeled and diced
1 1/2 cups carrots chopped
1/2 cup onion chopped 
1 cup butternut squash
1/3 cup split red lentils 
1 3/4 cup chicken broth

Directions: saut矇 carrots and onions in oil till tender (5 mins). Add everything else and bring to boil, then simmer covered for at least 20 mins. .
I keep it as it is for the 2 year old and blend it for the 10 month old. You could also add more broth and have this as a soup!! .

Ive always wanted to really do a workout challenge, like really really try to win. I go to LifeTime gym and they have 60 day weight loss and transformation challenges all the time but I havent ever been in the right place at the right time.

Luckily I recently joined a group on Facebook called No Excuse Mom, its all about getting healthy as a mother, perfect fit for me.

The first two weeks of this challenge I really focused on completing my regular workouts and making sure I got back in the rhythm of meal prepping and sleeping well.

The kids devoured these pumpkin pancakes a little bit ago! They are the easiest thing to make + they are healthy! They are naturally sweet so no maple syrup needed.

Pumpkin Pancake Recipe

1 small ripe banana
1 TBSP pumpkin pur矇e
1 + 1/2 tsp coconut flour
1/2 teaspoon pumpkin pie spice
A pinch of @redmondrealsalt
2 eggs (I only use @thefamilycow soy-free)

Directions:

Place all ingredients in a blender. Heat a griddle or pan with a small amount of butter. Too much and the butter will burn. Test one silver dollar sized batter until the edges bubble. Flip once edges start to brown. Repeat! Top with grass-fed butter and cinnamon! You can use coconut oil instead if you are #dairyfree

I zoodled a zucchini plus chopped one up in the sauce. This is a great meal for hiding vegies and it all cooks in the Thermomix in around 20 minutes! 
Miss 3 tells me she LOVES the chicken everytime I make this as she gobbles up the zucchini pieces (don't ask me what she thinks the green skin on her 'chicken' is )

Se puede hacer en la parrilla o al horno, 10 minutos a 400f y luego 1h-1.30h a 275-300f. Lo mas importante es que el pollo quede a 165f.

So I found this yummy High Protein-Low Carb/Sugar recipe for Peanut Butter Chocolate Banana Muffins over at @throughthelens_blog YUM!!! My boys love them. I made a few changes based on things we had on hand and they still turned out great! SWIPE FOR THE RECIPE!! A few notes: First I doubled the recipe because we had bananas I needed to use up. My favorite kinds of recipes are those that have 5 ingredients or less and that are simple to make. This Coconut Macaroons recipe only has 3 ingredients! My kids won't eat sandwiches on the wkend so i didn't pick any up bread yesterday. Instead I picked up a can of crescent. Honey mustard turkey gouda melts for lunch.  The other three I smeared butter, cinnamon, and sugar and they had those with yogurt. I have tried my best to eliminate processed and canned foods in our house! I finally caved in yesterday to the pleadings of my oldest and bought canned mushroom soup!  So tonight the kids were excited for supper tonight . Hope this gives him a fix for awhile

Cheesy goodness made even better with lots of pesto? YES PLEASE. Ill take this with a big bowl of tomato soup for lunch. Seriously though- these pesto grilled cheese sliders are comforting and delicious for grown-ups and kiddos alike. I love making stuff like this for play dates that happen during meal time because they bake all at once in the oven. EASY. Recipe is live on the blog now! #setthetableblog

Made sweet potato steak fajitas tonight and they were a hit! Can't see the sauteed veggies or avocado well but these were delicious and simple. Im always looking for other options for breakfast besides eggs. Dont get me wrong I love eggs but I do like to mix it up and something I can make in under 10 minutes and is delicious is always a win for me. Sweet potato is something I never thought to have for breakfast but once I start adding to my mix it stuck.

I absolutely love this recipe and use it for meal prep as well as a quick make and eat option. I have found many different topping combos that work for me. I suggest you start out with this base and add similar toppings to the ones you would have on oatmeal. Recipe on the blog!  Happy cooking!

Leftover chicken soup- basically a big pot of whatever I found in our fridge. I used 4 cups water (didnt have broth...). Heat and add 1.5 cups of chopped chicken, 1/2 cup fresh/canned tomato, 1/2 chopped onion, 1/4 cup brown rice. Cook for 30 minutes. In the meantime add spices and a little olive oil. Then add 1/2 cup black beans (canned, drained) and 1/2 chopped zucchini- low heat for 5 minutes. Add lime, cilantro, and/or avocado to make it even yummier (didnt have any! ) Served with sweet potato corn chips from TJs. #leftovers #chickensoup #bulkcooking #kidfriendlymeals #lazynutritionist #lazynutrition #bushwick #cloudyday @traderjoes #traderjoes
