Meal-prepping breakfast for my kiddies makes the week a little easier. This week we are enjoying waffles! I prepare them ahead of time, throw them in the freezer, then pop them directly in the toaster for a fast meal!
Everyone has heard horror stories about worms living in people’s intestines, (or has seen that horrible episode of Grey’s Anatomy) but no one thinks parasites can live in their own body. Most people in western society think parasites only exist for those living in the “3rd world”. Wrong!

Sunday’s are for salmon! (That’s not actually a thing in our household, it just sounded good together 😁)
Dinners don’t have to be super complex, sometimes our favourites ones are just a mix of whole foods. Tonight’s was salmon, a mix of rice and quinoa, zucchini, green beans and a cucumber salad 👍🏼

I don't stress too much about the kids appetites. Sometimes they eat a lot, sometimes they don't. But finding something my girl will eat is always a chore.
I found out today she really loves bacon....😅 And she ate every single thing on her plate and didn't throw even one crumb on the floor. SUCCESS! (though if I were to make it again next week she'll probably say "yuck, no").

Super excited to be on this 90 - Day Good Food Real Results Program (GFRR)! Received my portion control measuring cups, journal, and the GFRR book yesterday and so happy to see this is not a diet program! It's really about eating the right amounts of protein, healthy fats, veggies, starch, etc.! This program also helps boost your energy levels as I am constantly tired, this is what I need to keep up with my children! 😂
Last night's dinner! One of the New Catalogue products, Southern Baked mix (has Chia seeds!) For my chicken, steamed broccoli with Lemon Dilly seasoning and a little bit olive oil, rice with my yummy Broccoli Bliss nutritional yeast sprinkle, and some avocado for good fat! Now that's a meal! So good and the kids all loved the chicken!! Win! ❤

Dinner tonight was inspired by a reminder from my friend @wendyhthomas, and the 12-year-old declared it “my new favorite”. 6yo . . . well. There’s work to do with that one. #chickenpiccata with sautéed russet potatoes (microwave them until just softened first, then “roast” in a sauté pan with a light coating of olive oil, tossing regularly, for about 15 minutes). For the piccata I pounded chicken breast until very thin, coated *very* lightly with cornstarch and S&P, then pan fried in a tbsp of butter until brown and crispy. Remove from pan; deglaze with white wine, lemon juice & capers (and more S&P). Drizzle pan sauce over breasts and serve! World’s youngest #LGN fan! Her mom says when the blender gets going she starts yelling and dancing! And her 3-year-old sister calls for “Stella shakes!” I can honestly say this mom is dedicated to her children’s health and knows it starts with food. Through three pregnancies mom has lived according to LGN guidelines...through three breast fed babies she has (is) living according to the LGN plan!
On a different note these kiddos’ parents do a really good job with keeping their children’s health and food a priority and they were happy to show you that this program is safe and family friendly for all! I have so many happy moms and dads in my program because their kids love the food and they can rest assured that their littles are having healthy, nutrient dense meals — the shakes are a bonus because they are quick, yummy and easy!
Let me also note that I do not recommend feeding a child just any smoothie on the market. We use @designsforhealth professional-grade products to ensure the ingredients are free of gluten, soy, dairy, eggs, corn, peanuts, added sugars and artificial sweeteners. A smoothie also needs to contain protein, healthy fat and fiber to be a complete meal and to maintain healthy blood sugar. Some are concerned the products we use can be pricey, but when you breakdown the math on them, you are making over 30 meals at the price of $2.90 each plus the cost of almond or coconut milk and frozen fruit. When can you ever feed your family and yourself a healthy meal free of junk ingredients for so little?? Healthy doesn’t mean impossible. I’m happy to show you the ropes!

I'm a huge fan of Indian cuisine. Having traveled there last year I got even more hooked on their yummy dishes. I've cooked Indian food before but a lot of recipes usually contained copious amounts of uber fattening heavy whipping cream. Super easy dinner. Ingredients:
Hoagie buns-must not be pre-cut. If they are, make sure they’re not sliced all the way through (they’ve gotta hold the contents!), frozen meatballs, jar of pasta/marinara sauce, shredded mozzarella. Cook the meatballs in the sauce until done. Place 3-4 meatballs in each hoagie roll using a slotted spoon. Spoon remaining sauce on top of the meatballs (so you don’t have soggy sandwiches) and sprinkle with mozzarella. Crockpot Chicken Tacos! I have handed this recipe out more times than I can count. I buy my chicken tenders in bulk at Sams and separate it out 9-10 tenders per freezer bag, so when I grab chicken for a recipe it's normally around 1.5 lbs. RECIPE:1-1.5 lbs of chicken (breast or tenders) 1 taco seasoning packet. 1 packet of dry ranch dressing/seasoning mix. 8-10 oz of chicken broth. Dump all ingredients into crockpot and cook on low 6-8 hours. If you will be gone all day while this is cooking I would do 10oz of chicken broth so they won't dry out. If your home or in/out all day just eye ball it and if the liquid is cooking down you can add a little more. Stir and shred up chicken serve on a tortilla and top with all your favorite taco toppings. Yum! This is wonderful easy recipe the whole family loves. Cruciferous vegetables are loaded with vitamins and minerals that act as antioxidants and provide other health benefits as well as decreasing carbs during meals by crowding them out. Result: You feel full with less carbs in the same portion size.
Sometimes the last thing you want to do is something that's good for you ... like an agility workout ! 😆. Heres a hack I've learned that I've been working on using to get myself into gear ➡️➡️➡️ : the 5 Second Rule. (its a real thing, check out Mel Robbins' book by that title!) Count down from 5 until 1 and then G-O!! Your brain doesn't have time to think, just gets it into action mode. It works pretty well with my twins, too when I ask them to do something and they just sit there 🙄... .

Feeling way too lazy for a "real" dinner tonight so we turned to @annieshomegrown Bunny Mac & Cheese!
Spiced it up with some salt & parsley. Was wanting a super creamy, cheesy sauce so I whisked the cheese packets (made 2 boxes) in about a cup of warm milk, added some flour, and ended it up in being super dooper delicious! Yay to lazy dinners!
Today I made the One-Pot Pasta and Beef Dinner from No Whine with Dinner. It was very tasty! My 5 year old loved it but the 3 year old wouldn't touch it. She's not a fan of pasta.
I added mushrooms and garlic to the recipe because I had them on hand.
One thing I find helpful is to keep shredded cheese in the freezer. It's handy for certain recipes or for making pizzas with the kids to already have the cheese ready to go.

I woke up this past weekend to one my FAVORITE breakfast dishes my husband makes. A runny egg, black beans with @goyafoods seasoning and rice. He grew up eating it as a kid. On the menu:
* Curry spiced quinoa with added carrots, peas and cottage cheese. ( I cooked 1/2 cup of quinoa as instructed on the package and just added small diced carrots and peas and curry spice and boil everything and once cooked then a knob of butter and 2 tbsp of cottage cheese) SUPER yum makes a great finger food too.
* Steamed broccoli (just put a sieve on top of the pot you’re cooking the quinoa with and put a lid on and it will steam on its own. Saving you dishes to wash later)
* Roasted Salmon with spices (dill and pepper)
It was all gobbled down without any complains. So will call this a win situation 😄 (also made humus 🙈 just didn’t show as that’s a standard here at home we eat hummus to everything)
