Received my portion control measuring cups, journal, and the GFRR book yesterday and so happy to see this is not a diet program! Last night's dinner! One of the New Catalogue products, Southern Baked mix (has Chia seeds!) For my chicken, steamed broccoli with Lemon Dilly seasoning and a little bit olive oil, rice with my yummy Broccoli Bliss nutritional yeast sprinkle, and some avocado for good fat! Now that's a meal! So good and the kids all loved the chicken!! Win! ❤

Whole wheat pasta with cauliflower sauce (cauliflower, spinach, cilantro, garlic, nutritional yeast, a little bit of olive oil, water, onion powder, black pepper, pink Himalayan salt), and fried tomatoes+kale. 💚 We eat greens everyday, if not in smoothie, then in different sauces, dips and salads 🌿🌱☘️

These cold NorCal afternoons feel like chili is order plus it came as a request from one of my kiddos 😊. Happy to please as we all know dinners can be a struggle. I added some lean ground turkey to my recipe of kidney beans, black beans, low sodium 🍅 soup, chopped onion, ground cumin, ground allspice, garlic powder, s&p. I also added some light handed red 🌶 for a little kick. I precooked the meat and then added it all to my crockpot. All set, on the run! Dinner is served 🥄+ some scooping chips + dab of sour cream. There’s work to do with that one. #chickenpiccata with sautéed russet potatoes (microwave them until just softened first, then “roast” in a sauté pan with a light coating of olive oil, tossing regularly, for about 15 minutes). For the piccata I pounded chicken breast until very thin, coated *very* lightly with cornstarch and S&P, then pan fried in a tbsp of butter until brown and crispy. Remove from pan; deglaze with white wine, lemon juice & capers (and more S&P). Drizzle pan sauce over breasts and serve! And her 3-year-old sister calls for “Stella shakes!” I can honestly say this mom is dedicated to her children’s health and knows it starts with food. Through three pregnancies mom has lived according to LGN guidelines...through three breast fed babies she has (is) living according to the LGN plan!

On a different note these kiddos’ parents do a really good job with keeping their children’s health and food a priority and they were happy to show you that this program is safe and family friendly for all! I have so many happy moms and dads in my program because their kids love the food and they can rest assured that their littles are having healthy, nutrient dense meals — the shakes are a bonus because they are quick, yummy and easy!

Let me also note that I do not recommend feeding a child just any smoothie on the market. We use @designsforhealth professional-grade products to ensure the ingredients are free of gluten, soy, dairy, eggs, corn, peanuts, added sugars and artificial sweeteners. A smoothie also needs to contain protein, healthy fat and fiber to be a complete meal and to maintain healthy blood sugar. Some are concerned the products we use can be pricey, but when you breakdown the math on them, you are making over 30 meals at the price of $2.90 each plus the cost of almond or coconut milk and frozen fruit. When can you ever feed your family and yourself a healthy meal free of junk ingredients for so little?? Healthy doesn’t mean impossible. I’m happy to show you the ropes!

Super easy dinner. Ingredients:
Hoagie buns-must not be pre-cut. If they are, make sure they’re not sliced all the way through (they’ve gotta hold the contents!), frozen meatballs, jar of pasta/marinara sauce, shredded mozzarella. Cook the meatballs in the sauce until done. Place 3-4 meatballs in each hoagie roll using a slotted spoon. Spoon remaining sauce on top of the meatballs (so you don’t have soggy sandwiches) and sprinkle with mozzarella. Crockpot Chicken Tacos! I have handed this recipe out more times than I can count. I buy my chicken tenders in bulk at Sams and separate it out 9-10 tenders per freezer bag, so when I grab chicken for a recipe it's normally around 1.5 lbs. RECIPE:1-1.5 lbs of chicken (breast or tenders) 1 taco seasoning packet. 1 packet of dry ranch dressing/seasoning mix. 8-10 oz of chicken broth. Dump all ingredients into crockpot and cook on low 6-8 hours. If you will be gone all day while this is cooking I would do 10oz of chicken broth so they won't dry out. If your home or in/out all day just eye ball it and if the liquid is cooking down you can add a little more. Stir and shred up chicken serve on a tortilla and top with all your favorite taco toppings. Yum! This is wonderful easy recipe the whole family loves. One thing I find helpful is to keep shredded cheese in the freezer. It's handy for certain recipes or for making pizzas with the kids to already have the cheese ready to go.

It FINALLY happened! Cauliflower crust pizza that WORKED and is NOT annoyingly hard to make. Thanks to a tip from a great friend, the recipe for a cauliflower pizza crust from @mommypotamus is a real winner. No cooking and straining the water out nonsense. Just blitz it, mix it, and in the oven it goes. I promise you, this is one of those low carb swap outs that truly does taste delicious. This was great, it held up like a real pizza crust (see second pic), and leftovers were just as tasty. Give it a try this will be in regular rotation at our house. .

Ingredients:
1 tablespoon olive oil 
1 large jar of your favourite tomato-based sauce (mine is  @paulnewmansownanz Bolognese Sauce 💕)
2 large chicken breasts, halved lengthways 
2 zucchinis, quartered 
1 punnet cherry tomatoes 
200g mozzarella, sliced 
Small handful basil leaves

Method:
Preheat the oven to 180°C, and grease a large baking dish with the olive oil. Pour half of the tomato-based sauce into the baking dish. Place the chicken breast and zucchini into the sauce. Top with the remaining sauce, cherry tomatoes, and mozzarella. Place in the oven, and cook for 20-25 minutes, or until the chicken is cooked through. 
Remove from the oven, and top with basil leaves to serve. Serves 4.

I woke up this past weekend to one my FAVORITE breakfast dishes my husband makes. A runny egg, black beans with @goyafoods seasoning and rice. He grew up eating it as a kid. Noah tried it and ate TWO BOWLS of it. #truestory. So simple. So easy. And soooo good. Kids requested breakfast sandwiches so made them with leftover spiral ham and thin veggie egg omelette. They don’t mind veggies if it’s in egg omelette and chopped fine. On the menu:
* Curry spiced quinoa with added carrots, peas and cottage cheese. ( I cooked 1/2 cup of quinoa as instructed on the package and just added small diced carrots and peas and curry spice and boil everything and once cooked then a knob of butter and 2 tbsp of cottage cheese) SUPER yum makes a great finger food too.

* Steamed broccoli (just put a sieve on top of the pot you’re cooking the quinoa with and put a lid on and it will steam on its own. Saving you dishes to wash later)

* Roasted Salmon with spices (dill and pepper)
.
It was all gobbled down without any complains. So will call this a win situation 😄 (also made humus 🙈 just didn’t show as that’s a standard here at home we eat hummus to everything)
