What is Keto?

Thai Turkey Lettuce Cups! A huge hit with the family !! Super-quick to assemble, and the flavors were bright and bold, but apparently still kid-friendly!
A few tips: pick up a 16-oz bag of matchstick cut carrots for just around $2 at @wholefoods. Totally saves time! Also, the fresh mint is a must — balances out the savory and highlights the veggies.👍🏼 Doubling the recipe made enough for our family of 4 to have dinner, as well as the kids to have lunch the next day.

Probamos varias recetas, maneras de cocinar y nada. Pero nunca cambie el menu e intentaba por lo menos una vez al mes de darle mariscos. Trato de no contar en frente de el que no le gusta, aunque no es fácil. Anoche cocine una pasta con camarones y tomate y se la devoró. Comió tres camarones y no dejo nada. No fue necesario esconderlos en la receta o triturarlos, comio a la par con nosotros. It’s what’s for dinner!!! Easy and good for everyone.
Pecan Crusted Chicken Strips
1 chicken breast (or about 6 tenderloin strips)
2 slices wheat bread or panko
1/2 cup pecans
1/4 cup Dijon mustard
1 tsp honey
1. Process bread and pecans until breadcrumb consistency.
2. Slice chicken into 6 strips
3. Combine mustard and honey in a dish big enough for dipping
4. Coat strips in mustard/honey mix and then roll in crumbs to coat.
5. Bake at 400 for 20-30 minutes. Ideally cook them on a rack over a baking sheet (like a cookie cooling rack or something like that).
6. Check when almost done - you may want to flip them over to make them evenly crispy.

Confession: I struggle with lunch. Not just for me but for my kiddos! I want to make sure they have something nutritious and easy for the babysitter to give them when I'm at work. .
This lentil recipe has been a big hit and a big help. And it's super easy.
1-2 sweet potatoes peeled and diced
1 1/2 cups carrots chopped
1/2 cup onion chopped
1 cup butternut squash
1/3 cup split red lentils
1 3/4 cup chicken broth
Directions: sauté carrots and onions in oil till tender (5 mins). Add everything else and bring to boil, then simmer covered for at least 20 mins. .
I keep it as it is for the 2 year old and blend it for the 10 month old. You could also add more broth and have this as a soup!! .

Vegan taco night strikes again. Grilled veggies, raw carrots, leftover jalapeño slaw featuring red wine vinegar, and “refried” black beans. Those were made by heating up black beans and a touch of canned coconut milk, water, garlic, onion, and cumin. I’ve always wanted to really do a workout challenge, like really really try to win. I go to LifeTime gym and they have 60 day weight loss and transformation challenges all the time but I haven’t ever been in the right place at the right time.
Luckily I recently joined a group on Facebook called No Excuse Mom, it’s all about getting healthy as a mother, perfect fit for me.
The first two weeks of this challenge I really focused on completing my regular workouts and making sure I got back in the rhythm of meal prepping and sleeping well.

I zoodled a zucchini plus chopped one up in the sauce. This is a great meal for hiding vegies and it all cooks in the Thermomix in around 20 minutes!
Miss 3 tells me she LOVES the chicken everytime I make this as she gobbles up the zucchini pieces (don't ask me what she thinks the green skin on her 'chicken' is 😂)
I am always on the lookout for kid-friendly high protein snacks and breakfast options. So I found this yummy High Protein-Low Carb/Sugar recipe for Peanut Butter Chocolate Banana Muffins over at @throughthelens_blog YUM!!! My boys love them. I made a few changes based on things we had on hand and they still turned out great! 👉👉👉SWIPE FOR THE RECIPE!!👉👉👉 A few notes: First I doubled the recipe because we had bananas I needed to use up. Instead of honey, I used 1/4 cup Truvia + 4 Tbsp of Half-n-half milk for double batch. You could use alternative sweeteners and milk. I have tried my best to eliminate processed and canned foods in our house! I finally caved in yesterday to the pleadings of my oldest and bought canned mushroom soup! So tonight the kids were excited for supper tonight 😬. Hope this gives him a fix for awhile 😜

I’m always looking for other options for breakfast besides eggs. Don’t get me wrong I love eggs but I do like to mix it up and something I can make in under 10 minutes and is delicious is always a win for me. Sweet potato is something I never thought to have for breakfast but once I start adding to my mix it stuck.
I absolutely love this recipe and use it for meal prep as well as a quick make and eat option. I have found many different topping combos that work for me. I suggest you start out with this base and add similar toppings to the ones you would have on oatmeal. Recipe on the blog! Happy cooking!
Leftover chicken soup- basically a big pot of whatever I found in our fridge. I used 4 cups water (didn’t have broth...). Heat and add 1.5 cups of chopped chicken, 1/2 cup fresh/canned tomato, 1/2 chopped onion, 1/4 cup brown rice. Cook for 30 minutes. In the meantime add spices and a little olive oil. Then add 1/2 cup black beans (canned, drained) and 1/2 chopped zucchini- low heat for 5 minutes.
