...And this is what happened - 'LAHORI CHARGHA' spiced, PAN SEARED CHICKEN FILLET BRIOCHE BURGERS! 🍔🍟 I don't know anyone who doesn't like a good homemade burger, and anyone who doesn't, probably isn't worth knowing! 😜Using dry ground spices only - a mix of those commonly incorporated in a traditional #chargha blend (paprika, turmeric, ginger, garlic, home ground cumin and fennel seeds, cinnamon - tiny quantities of the latter three spices) the juice of one lemon and a good sprinkling of #himalayanpinksalt , I rubbed the #masala#marinade ' into the roughly cut chicken breast pieces and allowed it to sit for about 10 mins. Pan fried in #oliveoil on a fairly high heat, the spices and lemon juices melded and created a burnished caramelisation on the chicken, making for a delicious, smoky-spiced flavour. Once browned, I put the lid on the pan and allowed the chicken to gently cook in the steam to keep it moist and retain that delicious succulence! 👌🏼Now, there must be a thousand shop bought sauces available on the market. I'll eat maybe five of them! Mayo has to be @hellmansmayonaise and hot chilli sauce is mostly @enconasauces or similar. Yes, anyone who knows me KNOWS I'm a 'bit' of a condiment phobe (it's complicated😷), so this burger, slathered in mayo and hot chilli sauce was the hubsters (just how he likes it), while the boys and I had all the sides, but burgers either sans all the sauce, or very consciously and conservatively squeezed onto the side of the plate, not touching the burger bun till it was 'required'. I have 'sauce' (and soggy burger) issues, OK! 😆🍔 Btw, #wheatfree bun for mama tonight as already suffering all day with a sore tummy. 😥

Week 4 (Day 22)
A bowl of Chinese Chicken & Corn Soup with 1/2 breast of a Lahori Chargha
Posting it a little late, but this is what I had for lunch today. Yup, there is no bread on the side or salad for that matter. Didn't have time for any vegetables, and as far as bread/Roti/Naan is concerned. I will start trying to avoid, or eat as little "bread" as I can for some time.
I have been checking my weight every Monday since I actively started watching my weight. A month to be exact. And, for the first time the scale moved upward than going down.
While I know what caused the 1.5 lb gain (Hormones). I also realized I need to push a little extra. I do plan to discuss this issue on my next doctor's visit. But for now I will try to cut down on carbs & fats as much as I can.
Note: While this plate doesn't look like it has any extra carbs, it does have two slices of potatoes. And, more than anything that Chicken & Corn Soup bowl has quite a good amount of carbs in the form of corns & the cornstarch which was used to "thicken" the soup. Enough to give me the energy I needed for the next couple of hours.
It's Monday. The most dreaded day of the week for some. But also a fresh start to a new week. Here is to hoping we stick to it throughout the week.
God knows I have been struggling lately. And, if you are, then know that it's only human to struggle.
Know that as long as you know your plan, & you pick yourself up from where you left off. You will slowly but surely reach your goal.
