🦕Vegan In-n-Out🦕 (No) Animal Style Double Double and Fries (sans cheese because I I forgot and then we really just wanted to shove these burgers in our faces 😂) For those unfamiliar with the double double... two patties (@beyondmeat Beyond Burger split into two smaller patties), two slices of American cheese (@followyourheart 😍), homemade spread, caramelized onions, pickles, lettuce, tomato (for @ianjekelis 🍅😁 ), and a buttered (@earthbalance ) bun! Oh! And you gotta mustard grill the patties! 🍔 💚🐄💚
🌿What started out as a 😥"ok we need to clean out the fridge/freezer/pantry to prepare for holiday foods" meal turned into one of my favorite dinners😌! 🥔Roasted baby potatoes (tossed in olive oil, garlic, thyme, oregano, onion, salt, pepper, and paprika), 🍄🍚mushroom rice (leftover white jasmine rice with garlic, onions, and sauteed mushrooms), 💚🐤chick'n strips (from @simpletruth4u at @ralphsgrocery ! They are delicious and I dare anyone to say they don't taste exactly like those Tyson nuggets 😂), and a very colorful slaw using the rest of the 🥦 Cruciferous Crunch Salad from @traderjoes (added some shredded carrots, a little @followyourheart Vegenaise, dash of white vinegar and a sprinkle of sugar)! 🖤🖤
🌱Vegan 'Pollo Asado'🌱 We marinaded some big hunks of our vegan chick'n, shredded it, seasoned the hell out of it, sauteed it until this happened, and then shoved it in some burritos 😍😍 those crispy edges are everything! 🖤🐔🖤

🖤Okay, one more Trader Joe's post....THESE ARE AMAZING‼️ First of all the crackers are the most flavorful crackers I've had in a long time. Just whoa...and this Almond Dip...my goodness. 😍😍 It's like a spicy almond cheese spread 🤗🤗 @ianjekelis says that a Rosemary Cracker+ Almond Dip taste like a Chuck E Cheese Pizza 😂😂 thanks @traderjoes 😘😘😘
💚💜Pesto Gnocchi w/ Chick'n and Sauteed Cruciferous Mix! 💚💜 Super easy, colorful, and so yummy! The pesto is the new Kale, Cashew, and Basil Pesto from @traderjoes (it's just amazing), and the Chick'n is our homemade shredded chickun tossed in spices and sauteed until crisp (you can easily sub some Gardein or Beyond Meat strips here!). @ianjekelis turned the Trader Joe's Cruciferous Crunch Collection salad into this masterpiece of garlicky goodness too! It has kale, brussels sprouts, broccoli, red cabbage, and green cabbage! 🥦🖤🥦
Mondo Nachos @veggiegrill - I’m not gonna pretend I’m not the last to the Veggie Grill party. Like... it’s 3am and i just wandered in like “Sup guys? 🧐We partying? I’m so ready.”
I just don’t normally do the chain thing. Clearly, that’s my bad.
The Mondo Nachos have a bed of Corn Chips, some kickin’ Chickin', Queso Chorizo Sauce, Black Beans, Tomatoes, Green Onions, Guacamole and Jalapeños.
I’m not gonna issue a best new Nachos Alert. You gotta really work it for that. BUT, it does scratch that Vegan Nachos itch in a new way that I have no complaints about.
Also, the Lucky Star burger (Not pictured) is probably my favorite Vegan Burger I’ve had yet. The Beyond Meat patty absolutely crushes the vegan patty party when done right, and here they do it justice.
So, if somehow you’re like me and have missed this 🚂. I highly recommend hoping aboard right quick.
⭐Pasta Bake!⭐ We kinda just threw this together but it ended up being one amazing creation! @ianjekelis made his incredible pasta sauce while I made a killer vegan ricotta...we roasted some squash and garlic, sauteed some mushrooms and spinach...and then mixed it all together with some cooked whole wheat pasta and baked it! So delicious and and shockingly healthy! 😂 🖤🍝🖤
🌿 Leftover Sandwich 🌿 Is it acceptable to skip the whole "everything separate on the plate" and go right to "put it all in a bun"? Because...whoa😍😍😍😍 Took some slices of the @traderjoes Turkey-less roast and lightly fried them in a pan, warmed up the yams, and put those on a toasted roll with butter (@earthbalance ), cranberry sauce, and @followyourheart Vegenaise. I could have eaten about 4 of these 😂 (these are leftovers from 2 posts back 💚) 🖤🦃🖤
💥Mega Burger💥 Beyond Burger stuffed with homemade mac n cheese (see three posts back for example of inside 😁), topped with a pile of sauteed mushrooms and @followyourheart Provolone. Plus lettuce, tomato, Vegenaise, and a dash of @traderjoes Onion Salt & black pepper! All on a @pretzilla bun! (Side Note 📜 This is proof that vegan cheese melts, so please stop putting cold vegan cheese on burgers 🤗)
🦃🦃 Impromptu pre-holiday holiday meal last night 😍 Tried out the Turkey-less Roast from @traderjoes! It's definitely different from previous year's roasts but we really enjoyed it! The "meat" is a bit more dense (think Gardein+Field Roast), and it had quite a little kick to it, which was awesome! Also...I highly recommend just eating a slice of the leftovers cold, right out of the fridge, because it might be even better 😂. We (well...really @ianjekelis did all this 😍) also made roasted garlic baby potatoes, glazed carrots with dill, roasted brussels sprouts, mashed yams, roasted green beans/asparagus, cranberry sauce (yes...the jelly kind from a can...you can hold your judgement 😂), and a buttered (@earthbalance ) roll. 🖤🖤🖤🖤📸 Is pre gravy so you can see that yummy stuffing 😉
🌿Super easy and delicious stirfry, garlic/gochujang green beans, and veggie spring rolls! The stirfry consists of @gardein Porkless Bites, red bell pepper, mushrooms, cashews, pineapple, green onions, and sesame seeds; tossed in a mix of the sauce the Bites come with and some soy sauce, on top of white jasmine rice. Green beans are cooked with lots of garlic and tossed in gochujang. And the spring rolls are from @traderjoes 😊😊 🖤🐖🖤

Black & White Waffles 😍👌❤ Recipe for 4 waffles:
1 ripe banana
75 ml almond milk
5 g plant-based oil
80 g spelt flour
20 g cornstarch
1 tsp baking powder
1 tsp apple vinegar
1 tbsp raw cacao
Blend banana, milk, oil. Add vinegar. Add dry ingredients. Wait 10 minutes. Bake 2 waffles in a waffle iron for big waffles. Add cacao to the remaining batter and bake 2 chocolate waffles.

We have been trying to make a serious attempt to cut down dairy. But then every once in a while, we will buy a can of milk for a guest and what do you do with the leftovers? Fresh paneer it is!
