Lucy’s 10min improv salad from random ingredients in the fridge: unpasteurized sauerkraut, carrots, tofu, baby kale, peashoots, and mustard. I’m not a fan of mayo so I mixed soft tofu, mustard, and wild canned salmon together. This could have gone terribly wrong but it turned out great! I call it zesty mayo-free salmon salad 😆. Canned salmon is steamed with bones in so it has extra calcium. This meal is also high in omega 3, anti inflammatory qualities from the yellow mustard, and live probiotics from the sauerkraut. #lazymeals#healthysalads
I slaved for this bowl of soup. Not! I was craving a warming soup today, but didn't want to spend too much energy cooking it. This is the @wholefoods organic minestrone boxed soup. I added spinach, flaxseed meal and olive oil for added nutrients. Easy lunch tastes so good!

Do you have one of these? I had forgotten how incredibly useful it is to chop n chuck your favourite veg and stock into the pot at the beginning of the day and simply lift the lid when are ready for your evening meal. Thick stew for you or curry in a hurry is my favourite and I do like a lentil or mushroom dish to. All we do is decide the sauce flavour and imagine which plants compliment it n chuck those in and because it's always wise to consider which other nutrients to add such as sweet potato or extra veg (as in my pic) plus a healthy heap of leafy green fibre of course. That way it's easy to have 3 different dishes over 3 nights simply by choosing a different staple such as sweet potato or rice or spaghetti or even thick crusty bread. Anyway. .. I thought that I would share this with you because Cook pots are awesome and vegan dishes contain no saturated fat or cholesterol unless you fancy coconut milk in yours. Coconut Curry.. now theirs a thought! : )))♡
Frugal eating doesn’t have to be difficult but it is a skill more people need. Minimum wage is not a living wage, but tvp is a cheap healthy and importantly shelf stable food. These tacos took less then ten mins, I had half an onion from the half off shelf and fried it in vegetable oil. Added 2 cups tvp with taco seasoning (cumin, coriander, garlic, onion, chili flakes , paprika, cayenne, oregano and salt n pepper) with two cups of water and cooked until it was absorbed. Slow cooked lamb chops, so easy and versatile. I always throw in the base of the crock chopped up sweet potato (with skin) and onion then a layer of forequarter chops, for a sauce you can really add anything as long as it makes up 1 cup. I’ve thrown in some garlic, tamari, honey, tomato passata and made the rest up with beef broth and a good handful of rosemary. Cooed while we worked and we came home to the most amazing comforting smell of a nourishing home cooked meal. Edamame, roasted tofu & rice for lunch, then my go-to snacks are always #proteinpacked : hard boiled eggs & NF Greek yogurt with almonds, honey, & dried fruit. Hey, it works!
