Well today I was supposed to head into the office so I can catch up on some work 👩💻 but Jayla got sick last night so of course that was cancelled ✖️ Not going to lie I was pretty excited to be kid free for the day 😂 even though I was going to work! Who else would sometimes rather go to work than stay home with your crazy kids all day?! 🙋🙋♂️🙋🙋♂️ So these ketones today are helping me deal with the whines and cries today 🦄

To late to be breakfast, to early for lunch but I was hungry. 2 eggs fried in @kerrygoldusa and topped with @traderjoes everything but the bagel. Side of bacon. Mixed 2 pieces of bacon in my eggs. Yummm
One Pan Parmesan Tuscan Chicken
TAG SOMEONE WHO YOU WANT TO MAKE THIS FOR YOU BELOW 👇🏼
Prep time: 5 Mins
Cook time: 30 Mins
-1 lb chicken breasts
-1 tbs vegetable oil spread
-8 oz sliced baby Bella mushrooms
. -4 cloves garlic, minced
-1 1/2 cups almond milk
-1/2 cup nonfat Greek yogurt
-1 tbs cornstarch + 2 tbs water
-1 tbs garlic powder
-1/4 cup shaved Parmesan cheese
-1/4 cup sun-dried tomatoes
-salt and pepper to taste
-parsley (optional garnish)
1.Spray medium nonstick skillet and turn on the heat to medium-high. Add the chicken breasts to the skillet, season with salt and pepper and cook all the way through, approx 8-10 minutes on each side. Transfer the chicken breasts to a plate.
2.Melt the vegetable oil spread in the skillet and then add the garlic and mushrooms. Cook until the mushrooms are browned and tender. Add the almond milk, Greek yogurt, garlic powder, salt and pepper and Parmesan cheese. Whisk occasionally until the cheese has fully melted and the sauce begins to boil. Mix the cornstarch with the water to create a slurry and whisk into the sauce. Once the sauce begins to boil and thicken, reduce the heat to low and add the chicken back to the skillet along with the sun-dried tomatoes. Simmer until the chicken is warm, approx 5 minutes

I've got an incredible testimonial for you guys today... "My son Jake started having seizures at age four.
We have no family history of epilepsy or seizures so this came as quite a surprise to us. It's hard not to get emotional as I'm writing this. His seizures are life threatening. We experienced a parents worst nightmare as one evening he had a seizure, stopped breathing, was lifeless and completely unresponsive for what seemed like forever! God gave us a miracle with a second chance for Jake at living as he finally came out of the seizure thankfully without any brain damage. Jake doesn't have the typical convulsive seizure so it took us a couple years, going through many tests, 4 different neurologists and hospitals to finally get him properly diagnosed. Once diagnosed with Epilepsy he was put on seizure meds to help control his seizures. Jake had bad reactions to the medications besides gaining a bunch of weight so we had him weaned off the meds only to find out he had developed a secondary type of seizure that left him having 100's of seizures a day. We decided to work with his diet and we started seeing his seizures dropping down to 60 then 35 a day.
Jake's neurologist recommended that he start the Ketogenic Diet (Low Carb High Fat). So we decided as a family to support Jake and do this diet along with him. This diet was extremely restrictive with absolutely no sugar or no carbs and higher amount of fat then we've ever eaten before. (2% carbs, 10% protein, 88% fat) He was allowed 3 grams of carbs per meal (carbs coming from veggies) and 10 carbs for the day to get Jake into a therapeutic level of ketosis.
This type of eating was so completely foreign to us since we were so used to eating light, lean and low fat everything our whole lives.
