I quartered up a zucchini added S&P and a four cheese cheese mix from Trader Joe’s. Microwaved for 5 minutes. YUM. And we had Cesar salad - I love the salad kits!
Don’t even get me started on the ribeye Pz cooked. It was perfect! .

Roasted cauliflower soup and coconut-crispy chicken:

Soup:
▫️1 head organic cauliflower (about 13 oz)
▫️1 clove garlic
▫️1/2 organic white onion ▫️1 T. Ghee ▫️sea salt/pepper
** throw it all in to a glass baking dish and roast for an hour at 400. Throw it in to a food processor with 8oz unsweetened cashew milk, more sea salt and pepper and purée.

▫️3 pastured Chicken thighs ▫️sea salt/pepper/hot sauce/oregano ▫️1 pastured egg ▫️1 T. Organic coconut flour ▫️2 tsp ghee ** dip chicken in whisked egg/hot sauce and then dredge in bowl with coconut flour/sea salt/pepper/oregano. Cook 6 minutes each side in ghee over medium-high heat. Top with fresh thyme

Makes travelling easier particularly in Australia where kebab stores are everywhere. Watch Tabouli though if you are gluten intolerant as it has bulghur wheat in it  and avoid the lamb doner kebab as it is it is generally full of fillers and very processed. Lamb shish kebobs are a good alternative.

I was a vegetarian for 30 years and now I eat liver? Yes it’s hard to believe but I was prepared to do anything when I developed osteoarthritis of the spine,  I was in agony, I couldn’t move like I used to and even sleeping was difficult. When the prescription medicine actually made me feel worse I knew I had to dig deeper to finding some answers that were outside of mainstream medicine. Firstly I had to let go of my food dogma...I realised that I was really a Carbatarian, meaning I ate carbs for breakfast, lunch & dinner which were artificially fortified and provided low nutritional content and question any nutritional advice I’d learned at Uni & along the way, such as fats are bad for you, eat margarine or don’t eat eggs, eat wholegrains and dairy they’re good for you.
I had other symptoms which I know now are all autoimmune(psoriasis) Really? but it took reading books from Dr Mercola, Dr William Davis, Dr David Perlmutter, Gerson Therapy, Dr Jason Fung, Tom Obryan, Steven Gundry, Dr. Terry Whals & Dr. Amy Myers and listening to podcasts by Chris Kresser, Dr. John Bergman, Dr. Ben Lynch, Rhonda Patrick, Dr. Dan Pompa and David Asprey for me to finally get it!
Today, I refused to accept these diseases and other symptoms as poor genetics, ageing or natural degeneration and have been slowly but surely reversing them through changes in food, supplements and lifestyle.

Tried a few bites but I don’t get the fuss. I had high hopes for chicken crust pizza tonight but I couldn’t get into it. Yuck, won’t be doing that again. I have better ways to make chicken taste good 😝 I still say give it a try because it’s definitely lower carb then fathead but don’t expect miracles.

Made a chicken curry tonight from scratch, and it came out awesome. Started with a base of minced onion, garlic, and ginger; and stirred in cumin, garam masala, cinnamon, cloves, nutmeg, cayenne pepper, salt, coriander, and turmeric with some water and brought the curry to a boil, then added chunks of de-skinned, de-boned chicken thighs, along with some half and half and cream cheese (mmmmmmmm), and let it simmer on medium heat until the curry thickened and the chicken was cooked through. I served it with cauliflower rice (cooked with garlic and cumin) and fathead garlic naan. And it was daaaaaank.

Lesson on how to peel a fresh tomato. I've just posted my recipe for a low carb pasta sauce onto KETohh with the option of tinned or fresh tomatoes. If you want to use fresh tomatoes and you don't want to use the skin then try this. 
Cut into the skin and create four (or more) segments. Plunge into boiling water for 30 seconds. Remove and drop straight into icy cold water. The skin should just peel off easily. If it is under ripe you may have to do it a second time. If your tomato is too green then this method might not work.

GRILLED PORTOBELLA MUSHROOMS WITH SPINACH AND CHEESE

INGREDIENTS:
.
3 portabello mushroom caps
.
1 tablespoon canola oil
.
4-ounces reduced-fat cream cheese, softened
.
1 cup grated extra sharp cheddar cheese (about 4 ounces)
.
1 clove garlic, grated or finely minced
.
2 cups firmly packed fresh spinach, finely chopped
.
salt and pepper to taste
.
DIRECTIONS:
.
Preheat the grill to medium heat.
.
Wipe the mushrooms with a damp paper towel to clean off any dirt. Dry well. Do not rinse under water. Using a spoon, take out the black gills of the mushrooms. Also remove the stems. Using your hands, rub oil onto the outside of the mushrooms.
.
In a mixing bowl, mix together softened cream cheese, sharp cheddar, garlic and spinach. Taste and add salt and pepper to taste. Mix until combined. Divide cheese mixture between three prepared mushroom caps (I used my hands for this!).
.
Put on the grill, cover and cook until cheese is melted and mushroom is cooked, about 10 minutes. Transfer to a serving dish and serve immediately
.
Note: If grilling season is over where you live – make these in the oven, 425 degrees Fahrenheit for 10 minutes should be good! You want to see the cheese bubbling.

Using a spoon, take out the black gills of the mushrooms. Also remove the stems. Using your hands, rub oil onto the outside of the mushrooms. . In a mixing bowl, mix together softened cream cheese, sharp cheddar, garlic and spinach. Taste and add salt and pepper to taste. Mix until combined. Divide cheese mixture between three prepared mushroom caps (I used my hands for this!). . Put on the grill, cover and cook until cheese is melted and mushroom is cooked, about 10 minutes. Transfer to a serving dish and serve immediately . Note: If grilling season is over where you live – make these in the oven, 425 degrees Fahrenheit for 10 minutes should be good! 300 gram cream cheese
6 egg yolks

2tbsp stevia (sweetener) 
60 gram unsalted butter
50 ml heavy cream
2 tsp lemon zest
27 gram almond flour and 27 gram coconut flour 
1/4 tsp salt

Meringue
6 egg whites
2 tbsp stevia (sweetener) 
METHOD:

Pre-heat oven to 200°C / 392°F (Top and bottom heat, no fan force)
Grease 8″ x 3″ cake pan with butter, line bottom with baking paper
Whisk cream cheese till smooth over a warm water bath
Add yolks and whisk
Add setvia and whisk
Warm heavy cream and butter in microwave (high, 1 min) or stove, whisk into batter
Add salt, lemon zest and whisk
Remove from water bath, sift almond  and coconut flour and fold into mixture
Whisk whites at low speed till foamy
Add stevia 
Gradually add stevia and beat till soft peaks
Fold whites into batter 1/3 at a time
Pour into cake pan and tap the pan on the counter to release air bubbles
Bake with water bath on the bottommost rack in a preheated 200°C / 392°F for 18 mins, then lower to 140°C / 284°F for another 30 mins (let the heat in the oven to drop gradually with door closed) and turn off the oven and leave cake in the closed oven for another 30 mins. 2 thinly sliced chicken breasts

2 Tbsp Sriracha

6 corn tortillas

1 cup chopped red cabbage

Instructions

Preheat oven to 375 degrees.

Place the chicken breasts on a baking sheet and top with Sriracha. Bake for 30 minutes (or until they're fully cooked).

While the chicken is baking, heat the tortillas up (optional).

Top each tortilla with chopped red cabbage and chopped peppers.

When the chicken has finished baking, shred it and place in the tortillas.

Seaweed, shitake mushrooms and bone broth combine to make this yummy broth & it’s so easy to make using a steamer over a boiling broth. 
Remove the salmon skin and drizzle with coconut oil & season and place in a 160C oven until crispy, in the meantime heat bone both with some miso paste, toss in seaweed and chopped mushrooms. Place on top a lined steamer with the salmon wrapped in a quarter sheet of nori and steam for 5 mins.

8 bone-in, skin-on chicken thighs

1 tablespoon smoked paprika

Kosher salt and freshly ground black pepper, to taste

3 tablespoons unsalted butter, divided

3 cloves garlic, minced
.
1 cup chicken broth
.
1/2 cup heavy cream
.
1/4 cup freshly grated Parmesan
.
Juice of 1 lemon
.
1 teaspoon dried thyme
.
2 cups baby spinach, chopped
.
DIRECTIONS:
.
Preheat oven to 400 degrees F.
.
Season chicken thighs with paprika, salt and pepper, to taste.

Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; drain excess fat and set aside.
.
Melt remaining tablespoon butter in the skillet. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in chicken broth, heavy cream, Parmesan, lemon juice and thyme.

Bring to a boil; reduce heat, stir in spinach, and simmer until the spinach has wilted and the sauce has slightly thickened, about 3-5 minutes. Return chicken to the skillet.

Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes.

Serve immediately.

Note:

The bacon should be very thinly sliced. Per one roll of white meat is needed a 5-6 bacon slice, depending on the width or height. It is essential that bacon is meaty, so as not to completely melted during the baking.

From  each half white meat, make more steak and hit the hammer for meat, in order to be as thin as possible. it must be thin to be able to roll.

From Avocado make a guacamole sauce as follows

Take Avocado flesh out of the peel and mash into the puree. Add a chopped tomato and pepper, and coriander, juice, and grated lime peel. Season with salt and pepper and mix all.

A Guacamole divided to into 4 equal parts (for 4 steaks of chicken white). Then, on each piece of meat put part of the mashed avocado. Then fold the ends and wrap everything in a roll.

On a plastic foil, arrange the bacon. Then place a bacon over the chicken rolls. With the help of the foil all wrap in the bacon. With a foil all good squeeze and leave in the fridge for a while to cool down and to tighten (if not longer, that even while the oven heats up).

Turn the oven to 250 degrees to warm up. Take out the foil from the meat rolls and place them in a baking pan lined with baking paper. If you do not have paper, you can put everything in a baking pan and without paper.

Chicken rolls with avocado in bacon bake at the same temperature for 10-15 minutes until the meat is roasted.

My biggest takeaway from this life changing protocol is to eat 9 cups of veges, leafy greens, sulphur rich & colour per day.
Salad bowl of mint, basil, rocket, red onion, 🥑 pomegranate & everything’s heightened with a squeeze of my mum’s lemons. On the side my home fermented turmeric cauliflower.
💛💚❤️ My personal commitment to my health in NOvember is saying no to dairy, and continuing with a low lectin, no nightshade plant paradox diet.

EASY KETO CHILLI CASSEROLE

Total Time 25 minutes

Ingredients
.
1 onion quartered and sliced
.
500 g mince/ground beef
.
2 cloves garlic crushed
.
1/2 red pepper/capsicum diced
.
1/2 green pepper/capsicum diced
.
2 tsp ground cumin
.
2 tsp ground coriander/cilantro
.
1 tsp chilli powder
.
2 tsp tomato paste
.
250 ml tinned/canned tomatoes
.
salt/pepper to taste
.
100 g shredded/grated cheese
.
To serve
.
50 g sour cream
.
Instructions
.
Fry the onion and garlic until soft, add the mince/ground beef and cook until all the meat has browned.
.
Add the peppers/capsicums and cook until soft.
.
Add all the other ingredients, stir and cook for a few minutes (the beef is already cooked) then pour into a baking dish.
.
Sprinkle the shredded/grated cheese over and cook at 180C/350F for 20 minutes.
.
Spoon into individual serving bowls. Garnish with sour cream and a sprinkle of coriander.
