They say when life gives you lemons make lemonade! To say I over ordered lemons for one of our festivals is a slight understatement! However, after that mini heatwave we just had in the UK I have to say I am truly grateful, I have been making this super refreshing lemonade ever since (just a tad addicted!!) I do like it quite sharp but it's so delicious; simply juice 6 lemons, add 100g sugar, bring to the boil and simmer until all the sugar has dissolved. Add about 1l of filtered water and chill in the fridge overnight (or until needed!). This makes just over 1.5l, enough for a day or two at least!! And today it looks like it going to be sunny again so it's perfect! 🍋🍋🍋 Today I'm also joining the lovely Arzu @vitalityandmore in her #mondaymindfulnessmantra , I've given this a lot of thought over the last week and this has given me focus to be aware of my own thoughts, the world around us, and my own impact on that world. So today I've chosen "Be kind, whenever possible. And it's always possible" I often imagine a world that's led by kindness and not greed or obsession, a world without pain or war, one full of understanding and tolerance, empathy and love. We can all be a part of that world, we can make that world each one of us ... ✨✨✨
