Sundays call for a dozen donuts from @royalcitydonuts. Because...why not? Seriously, if you live in New West or close to you MUST try their donuts. They are AMAZING!! They don’t have a location yet but they take orders via their Instagram, and will be popping up at the New West Winter Farmer’s Market on Begbie St every 1st + 3rd Saturday of the month! 🍩🍩🍩 .

Lemon Blueberry Yogurt Cake !!! What you need:
3/4 cup milk 1.5%
1/4 cup. lemon juice
1/2 cup. yogurt 2% (115 g)
1 tbsp shredded linseed (5 g)
1 1/2 tbl. lemon zest (basic)
1 tsp. vanilla extract (6 g)
3 tbl. coconut oil * or vegetable oil (30 g)
2 cups. all-purpose flour (250 g)
2/3 cup. xylitol or black sugar or stevia (attention to the ratio you have!) (130 g)
4 tsp. baking powder
1 tsp. salt
1/16 tsp. stevia or 2 more. Brown sugar
1 cup. blueberries (140 g)
1/3 cup. extra blueberries (50 g)
To overlay. 1/2 cup. yogurt 2%
1 tbsp. stevia (or 3kg of powdered sugar)
· 1/2 tbl. vanilla extract
1 tbsp. lemon juice
I preheat my oven to 175 ° C and melt the walls of a small round pan with some oil.
In a bowl I put the first 7 ingredients - yes, and flaxseed - and mix with a wire (or spoon) and leave for a while at the edge.
In another bowl, I put the rest of the ingredients-except the last cup of blueberries and mix well.
Now I mix the two mixes (better squeeze the liquids into the bowl with the solids) and stir them vigorously until I have a single blend!
I mix my mix in the dish and decorate over with the extra blueberries (those we left?). I bake for 45-50 minutes or until I invade my knife and come out clean!
I leave it on a metal base (eg grill), for about 15 minutes to cool and unpack.
Finish the sweet, stirring all the coating materials well and spraying it over with a spoon!
