Lemon Cupcakes with Blueberry Cream Cheese Frosting 💙
To make 12 cupcakes: -1 1/3 cup + 4 tablespoons flour
-1/2 tsp baking soda
-1 1/4 tsp baking powder
-1/8 tsp kosher salt
-1/2 cup softened butter
-3/4 cup sugar
-1/2 tsp lemon extract
-1/4 cup sour cream
-1/4 cup milk
-4 tablespoons lemon juice
Preheat the oven to 350. In a small bowl, whisk together the dry ingredients. Set aside. In the bowl of an electric mixer, beat butter and sugar together, scraping down sides of bowl as needed. Add eggs and lemon extract. Mix. Mix in sour cream, milk and lemon juice. Fill cupcake liners 3/4 of the way full. Bake for 18 minutes, until a toothpick inserted comes out clean.
Blueberry Cream Cheese Frosting
-1/3 cup blueberries
-2 tablespoons lemon juice
-6 tablespoons softened butter
-6 tablespoons softened cream cheese
-2 cups powdered sugar
-1/4 tsp lemon extract
In a small saucepan over low heat, add blueberries and lemon juice. Mix and mash. Bring to a simmer. The juices will start to come out. Take off heat. Strain with a fine mesh sieve to get rid of any skin. Set the blueberry juice aside.
In the bowl of an electric mixer over medium speed, beat butter for 4 minutes, scraping down sides of bowl as needed. Add cream cheese. Beat for another minute. Add powdered sugar and lemon extract. Beat. Add in the blueberry juice. Mix well.
