Finally living up to the cakes part of my name! Lemon meringue pie with Italian meringue topping which I had way too much fun blow torching. Used a lemon curd filling with a sweet short crust base. Couldn’t try it myself as I’m still going vegan, which was fairly rough. I’m told it was tasty though.
