INGREDIENTS

250 g Paneer, cut into 1-inch cubes

2 medium onions, finely chopped

1 tsp chopped ginger

3 – 4 garlic cloves

3 medium tomatoes

6 – 8 Naturz cashew nuts, soaked in water for 15 minutes

1 small piece of bay leaf

2 Green Chillies, slit lengthwise

½ cup full fat milk

2 tsp Kasuri Methi (dry fenugreek leaves)

½ tsp Garam Masala Powder

1 tbsp Naturz coriander Powder

1 tsp or to taste Naturz Red Chilli Powder

2 tbsp fresh cream

2 tbsp butter

2 tbsp oil

Salt to taste

METHOD:

1. If using frozen paneer cubes, then defrost them.

2. Grind the onion, ginger and garlic in a grinder and make onion paste. Grind soaked cashew nuts with 2 tablespoons water to make cashew nut paste. Blanch the tomatoes and blend them to prepare tomato puree.

3. Heat cooking oil and butter in a non-stick frying pan over medium flame. Add onion paste and bay leaf and sauté until onion paste turns light brown for approximately 4 – 5 minutes.

4. Add green chilli and red chilli powder and sauté for 30 - 40 seconds. Add cashew nut paste. Stir and cook for 2 minutes.

5. Add tomato puree and cook until oil starts to separate from the puree, it will take around 3 – 4 minutes. Add coriander powder and garam masala powder and mix well.

6. Add ½ cup milk, ½ cup water and salt; mix and cook until oil comes on the surface or for approximately 4 – 5 minutes. Add paneer cubes, kasuri methi and cook for approximately 2 minutes or until you get the desired consistency gravy.

7. Add fresh cream and mix. Transfer prepared curry to a serving bowl and enjoy!

I love sweet potatoes, but it can get old just eating them the same old way every time (usually baked with butter, coconut oil, real salt and  cinnamon). So here's a great curried sweet potato recipe to mix it up on those "lighter" nights. It can even be served as a side dish to a bigger meal (hopefully mid-day)! Ingredients for Curried Sweet Potato Lentils with Chard:

2 lb sweet potatoes (orange inside), peeled and cut into cubes
1 ½ c soaked lentils
4-5 c broth
1 red onion, chopped
4 cloves garlic, minced
1 (1”) piece ginger root, peeled and grated
1 ½ t curry powder
1 jalapeno pepper, seeded and minced (optional, for heat)
1 ½ t garam masala
1 lb swiss chard, center ribs removed, leaves sliced thinly
1 t sea salt (and more to taste)
black pepper, to taste
zest of 1 lime
1 bay leaf
1/3 c chopped cilantro (fresh)
juice of ½ lime
¼ c chopped scallions (garnish)
Directions for Curried Sweet Potato Lentils with Chard:

Add all ingredients except chard leaves, cilantro, lime zest and juice, and scallions to clay pot, then stir to incorporate all ingredients
Cover, seal and cook on “stew” setting for 30 minutes
If it looks at all dry, stir in more broth
Stir in chard and cook another 30 minutes, sealed
Stir in chard and salt and pepper, and continue cooking until lentils are tender and chard is cooked, about 30 to 45 minutes total.
Just before serving, stir in the lime zest and juice and cilantro. Sprinkle with scallions.

After the incident with my cottage pie, I decided to remake the mixture and have it as a prep food so I can have it with Jacket potatoes, Pasta, rice, toast, whatever basically! Now I’ve mastered this lentil recipe it’s time to move on to something new! But first, this is how I approach this delicious 1 Pan vegan lentil thingy majiggy.

x1 Can Green Lentils
x1 large diced white onion 
x1 Finely chopped Broccoli
x2 Finely Chopped Carrots
x1 Can of Chopped Tomatoes 
2 tablespoons of Tomato Purée
x2 cloves of garlic chopped 
x1 Bit if Ginger chopped Finely (or powder alternative)
x1 Vegan Stock Cube
Some Fresh or Potted Thyme
2x heaped Tea spoons of Cumin
A Sprinkle of chia seeds
A sprinkle of flax seeds
A small cup of water

First I pre heat a small amount of olive oil in the pan, then chuck in the onion, garlic, carrot, broccoli, ginger, cumin, thyme and leave it on for around 5- 10 minutes. When it’s looking good and brown throw in your tomatoes, puree, lentils with the juice and seeds! Leave it to simmer for around 20 minutes until the liquids reduce slightly. Keep tasting as it cooks and season to your taste. Throw in extra cumin, thyme, salt pepper etc...until satisfied! 
Want to try something Vegan? Not sure how to start...This is the perfect 1 Pan dish. Cheap as chips too. Enjoy!

The chicken breast is cooked in the Crock-Pot. I cook it in big batches, to have it available for the next days as i need it.

The lentil dish is cooked in a non stick pan. First I sweat a small onion and 4 cloves of garlic, then I add one cup of lentil and 2 cups of water. Let it cook until all the water is evaporated.

So far, my #threeyearold will eat anything if I can make it a "nugget". I couldn't stop with Chickpea nuggets, so here we have #lentil #nuggets ... Next goal is to sneak veggies into a nugget. :-D

Vegan Pecan Lentil Piccadillo! I chopped a cup of pecans and toasted them, then added 1/3cup lentils, 1c water, cumin, oregano, and chili powder, and simmered covered for fifteen minutes. Then I added a bay leaf, green chili, chopped olives, raisins, a can of diced tomatoes, and cider vinegar, and simmered for 20 minutes, then reduced, uncovered, until thickened tobdesired consistencey. Super yum! This version is closest to a Cuban style preparation.
