Fried hummus with melted feta cheese, dipped in chopped spring onion and ginger, mustard, turmeric, garlic and onion inside. Along with pickled chili and mangetouts 😋

✌🏼2 finely chopped chicken breasts sautéed with coconut oil + coconut aminos + hot sauce + sesame oil + s&p + @justins peanut butter + fish sauce (I don't really measure just add a tsp. at a time & taste as I go 😜)
Lastly- chopped mini cucumber & radish and tossed in s&p + white vinegar for about 20 minutes and served on top of the chicken & boston lettuce cups. //

Meeting new foodie friends in Spokane has its perks. Complimentary drinks and food made especially for us from the chef of Hotel RL. Everything was so yummy. Can't wait to come back to try new dishes from their fabulous menu. My paleo choice tonight was Thai lettuce wraps. The complex favors delighted my tastebuds 👍👍
emptied the refrigerator and wrapped weekend chicken fajitas leftovers in romaine lettuce and dinner was served. my prepped roasted cauliflower with pepita seeds and sweet potatos from the weekend filled the other half of my plate. the combination of savory and sweet was the 💥. .

Okay I never thought I'd say this, but these lettuce wraps are yummier than egg rolls! (There should really be an emoticon for tofu, just sayin) Take out chinese is my downfall. I looooove egg rolls, y'all. One time I was really sad and ordered 8 egg rolls as my dinner (shhh). Of course, though, I always feel mega bloated and out of shape the next day. Food hangovers are real! I found the recipe for these lettuce wraps and couldn't wait to try them with tofu😍 And they're so simple to make! All you need is a head of lettuce, tofu, green onion, carrots, and soy sauce! This meal literally only cost about $5 to make. And I have a lot of leftovers. 💁
