Dinner tonight was a mash up as I haven't started prepping for the week yet.
6oz ground beef
1.5 cups cauliflower rice
1/2 cup of diced jalapeños and red onion
Some liquid aminos .
Browned the ground beef, then threw in the cauliflower rice jalapeño and red onion. With some dashes of liquid aminos for flavor and cooked it for a little longer on the stove top to toast it all up! Even got approval of my wife which is nearly impossible with cauliflower rice! Seasoned with a little black pepper.

30lbs gone!!! I started the Pledge the first week of January and ONLY because my best friend was doing it. I had NO intentions of it being successful. I did not take measurements prior to starting(HUGE MISTAKE) because again no hopes of seeing changes. My pick 3 are 7500 steps, Drink the water, and cut back on the carbs. Sugary drinks And fried foods weren't part of my lifestyle prior to the pledge. I have 4 kids so cutting carbs out of my family meals was not going to happen. But what started to change was my appetite and proportion sizes. The 30lbs was gone in 90 days and has remained off. If I had to rate how well I Do with the lifestyle changes....on average I would rate myself 70% with the steps and carbs. 20% on getting enough water in, I struggle with this so BAD!! I'm not perfect with hitting them every day of the week. I RARELY weigh myself! Scales don't control my success. I have continued the pledge because the products do so much for my body aside from weight loss/control. My digestive system is wonderful, my energy is where it needs to be, my skin is great. I hope this helps answer the many of questions! You all have been a HUGE inspiration for me over the last 6 months and the nurse in me loves seeing the all the health transformations! Keep going we are all worth it!!! 😘
One of our "go to" meals we have multiple times throughout the week. A healthy version of chicken "fried" rice with liquid aminos instead of soy sauce. We throw in eggs and veggies a lot too. When we have busy weeks we like to make a bunch in bulk so we can pack it for lunch.

Keeping it nice and simple (yet delicious) for dinner. Sorry for the lack of activity today. I tried testing out a new waffle recipe this morning, but it was a bit of a fail, then I had work this afternoon, but better late post than never! .
➡️Stuffed peppers recipe:
1️⃣Slice your peppers in half, scoop out the seeds and baked them in the oven while you are prepping the rest of your ingredients (on 400 for ~25 minutes)
2️⃣Cook your ground turkey on the stove and your farro (or any grain) in a separate pot.
3️⃣Once the turkey is browned, drain any excess liquid and add your cooked grain (farro for me) and cooked peas (sounds weird, but I swear it's a great combo!)
4️⃣(optional) I like to add coconut or liquid aminos to my mixture to give it a bit of an Asian stir fry taste. Not required, but insanely delicious!
5️⃣Stuff your peppers with the mixture and put them back in the oven for ~15 minutes (or when your peppers are soft enough for your liking) .
👉🏻BTW: you will have a bunch of left overs. I obviously had more of the mixture once I finished these peppers! I love eating it the next day with lettuce wraps or over spinach!
