Served with a Raspberry Chia Vinagriette
Toss together Organic Baby Spinach, Cherry Tomatoes, Shaved Cucumber, Feta Cheese And Sliced Almonds.
Top with Grilled Shrimp and Drizzle Dressing.
¼ cup fresh raspberries, puréed and strained
1 cup olive oil
2 Tbsp. raspberry vinegar
1 Tbsp. minced shallots
1 tsp. agave syrup
1 tsp. Dijon mustard
2 Tbsp. chia seeds, ground
½ tsp. salt
¼ tsp. ground black pepper
Combine ingredients in a blender until smooth.
Adjust seasoning with salt and pepper.

175 gr de panela
75 gr de aceite de coco

1 cucharada sopera de canela de Ceylán
Un puñado de nueces de Pecán
Un puñado de pasas
Primero mezclar ingredientes secos y luego húmedos y después mezclarlo todo, menos pasas y nueces que se echan al final.
45 o 50 min al horno a 180°depende cada horno el mío requiere ese tiempo y temp.
Los cambios de estación son el mejor momento para desintoxicar! Preparar el cuerpo para el frío y las pocas horas de luz es vital! Los germinados son una pieza clave en este proceso!
I recently completed a 30 day raw vegan challenge.
My take aways:
My perspective towards food has changed, raw vegan has shown me that foods could be transformed into so much more than what we traditionally use them for.
During the 30 days I dropped 5.6lbs, including 2 inches each off my waist and hips and dropped .5"+ in my legs and arms.
My body felt great, any headaches or stomach aches I had completely vanished. I never felt the need for any type of everyboosting drink like coffee, since I never really felt sluggish.
Eating raw does cost maybe 25% than what I would normally spend on food and I had to get creative but I saw it as either eat better as preventative care or pay for it later in health care bills.
Cashews are the most amazing food! You can turn them into creams, chesses, but butter, icecream, and "crusts". Raw vegan food is probably the tastiest easy on the stomach food there is. I found myself loving veggies and fruits so much more than I had previously.
Hardcore cardio, like running long distances were very challenging. I couldn't seem to eat enough to not feel like I was hitting the energy wall every time. Strength workouts seemed to be unaffected.
I've found many new restaurants!
Living the lifestyle has shown me what my food resticted (whether by choice or for health) friends go through when they go to restaurants, stores, or even travel. I've learned to appreciate restaurants and places that offer vegan, gluten free, and raw options. Its allowed me to be way more aware and supportive and know how to accomodate the different eating styles.
I've learned that 30 days trying a different lifestyle is all a state of mind in aligning your values to your goal, committing, and not thinking that you're missing out.
I have a better understanding of how foods like sugar, caffeine, and meats make me feel.
It's been overall very perspective changing. I've really loved this challenge and I'm very happy that I got to fully experience it.
I found a vegan option at the Denver intl. airport. Hummus & veggies platter, near gate A44.
There were plenty options in this trip to Utah, compared to others.
I still brought my lunch box just in case. You don't have to be forced to eat unhealthy food just because it's more popular.
Bring your food and only rely on street foods as a secondary option.

It was a beautiful day for touring the garden with Paul at Back to Eden!!! Much more in depth learning than I realized I was going to receive. Our Father is good and He wants us to know His wisdom in all things...even gardening. He has a natural plan for our lives and it is beautiful. So grateful!!!
I think it's been long enough since my last matcha post to justify another one 🍵😂 spending a few days in my hometown in San Diego...and catching up on all the new food I've been missing! @holymatchaa delivered! This 🍓Strawberry Matcha Latte🍓 was to die for! Layered with strawberry purée, almond milk and ceremonial grade matcha. This matcha freak was in heaven!
If you haven't tried matcha yet, you absolutely should. My love for food trumps all- and if you know me, you'll know how before last month I was the type to make it clear i would neverrrrr give up my fried chicken. But little did I know I would be persuaded from every cell in my body to quit eating the animals...& start eating clean for the purpose of my soul; to shed away any little thing morally that didn't fit in with my beliefs and save animals in the process. I don't even eat meat but in many parts of the world people eat grubs and bugs as part of a low fat high protien diet. They say crickets eat far less than Cows but have equal protien value. Do you think you'd eat them if you had to. I saw a vegan woman and man eat rat when they got Hungry enough on Naked and Afraid. Also I once caught a Asian co-worker woman eating tiny snails out of my exotic flower pot at work with her ramen soup. I was like carry on' i'm back early from lunch, i'll be back.
