It's been close to a year since I've had a sourdough starter fermenting on my counter! Today the bread books came off the shelf and the starter came out of the fridge and my baking adventure is picking up where I left it. The weekend will deliver some loaves of Vermont Sourdough a la Bread by Jeffrey Hamelman. I cannot wait to mix, shape, proof and bake!
In all of my non-sourdough bread classes I encourage students to make the dough by hand. You learn so much more, and there is something special about working with dough by hand - feeling it change as you work with it. In my sourdough workshop I talk about how in some ways I wish I had been taught to make sourdough by hand. @chremley makes all of her bread by hand and asked what it would take for me to have a go at making my sourdough by hand. I am taking it as a bit of a challenge, since I don’t teach again until the end of January, I won’t be making as much bread, so - all of the bread I do make, I am making by hand! The reason I use a machine is because it’s how I was taught and although I know how to make sourdough by hand, the machine is what’s familiar. The second reason I must admit is a bit of a contradiction - it’s convenient.
