85% hydration was a little too hard to handle in this instance. I've been playing around with my hydration level recently. I'm thinking I might keep the 85% hydration and bump up the rye to 30-40%, what do you think?
Breads been turning out pretty good lately, even in this crazy heat wave we've been having! The restaurant is definitely not set up to bake bread, tiny oven, janky mixer, janky scale, doors constantly being left open letting cool air in which affects the proof, but all that to say...I've found the methods that work with what i've got and it feels good to see how far the bread has come!
