There's a new(ish) - at least to me - Merchant House, just off Fleet Street. It's from Nate Brown and Lewis Hayes, co-founders of The London Bar Consultants and owners of the other Merchant House, just off Bow Lane. This one focuses on whiskies, and the walls are adorned with the stuff: over 500 bottles. Nate and Lewis are two of London's foremost bartenders, but their X-factor is their hospitality, which is unsurpassed. Pictured is American Oak Westland, a 3-year Seattle Whiskey. It's immense, with chocolaty undertones, overtones and every tone in between. I also tried Kavalan, Taiwan's insanely popular (outside the UK); Dunville, Ireland's only single malt; and India's slickly bottled Paul John. I wish one of the Merchant House bars was in my neighbourhood. If you live or work close by to either, drop by and give Nate and Lewis my regards.
