M and I went and floated at Deep today. Floating is a great way to recover quickly from training/competing (I floated 2 days after my 110 mile race and was ready to ride that very next day). It's also wonderful in a therapeutic sense for anyone suffering from anxiety/depression. M loved it and I think it was the first time she didn't utter a word within a 45 minute time span! (Floats are typically 60-90 minutes long .... she got antsy at minute 45...I was betting on minute 20 so I was actually happy to made it until minute 45!) Simple side salad ❤️ red leaf lettuce, spicy mustard sprouts, tomatoes and green onions. Easy as 1, 2, 3. 😋oil-free dressing can be as simple as balsamic vinegar, apple cider vinegar or lemon juice, dijon or yellow mustard (optional) and maple syrup. I use homemade no-salt seasoning (dehydrated and powdered celeri and papaya seed). Learn to "cook" with whole foods ❤️
⭐️One of my staple meals: Pad Thai❤ Ingredients: kelp noodles, spiralized carrots, spiralized zucchini, sweet peppers, red cabbage and green onion. This time the sauce was 1/4 cup almond, cashew or peanut butter, 1 tbsp tahini, 1/2 cup orange juice, 1/2 cup apple juice, juice of 2 limes or 1 lemon (about 1/4 cup), 2 tbsp coconut aminos/tamari/braggs, 1/4 cup hemp seeds, 1 tbsp dried ginger. Add chili flakes to taste. To reduce fat intake, reduce hemp seeds and nut butter and add mangoes and/or peeled zucchini to get a creamy sauce 😋 ALWAYS DELICIOUS!! ❤️
🍎Made a smoothie and cut an apple for my daughter as a snack, but she wasn't that hungry 🤔so I made myself a smoothie bowl with her leftovers 😋 I never made this before but it was delicious! ❤️RECIPE: smoothie: 1 cup frozen blueberries, 1/2 cup frozen strawberries, 1/2 cup frozen mangoes, add coconut water or apple juice to make it to desired consistency, added about 1/4 tsp dehydrated papaya seeds and 1/2 tsp alfalfa powder. Assembly: chop apple, chop banana, add raisins and dried mulberries. Mix and pour smoothie in the bowl. YUM!!! ❤️
❤️ Raw Simple Salsa: Tomatoes, sweet and/or hot peppers, green or red onion, lime juice, apple cider vinegar (optional), fresh cilantro (optional), fresh garlic (optional), pinch of cumin (optional). Delicious with raw jicama tortilla chips ❤️ Taste like summer ☀️😃
Simply because we can ALL benefit from playing more, having more FUN and enjoying life, I hosted a wholefood-plant-based party last night and we played "Crazy 8's" and Scopa ❤️ We were having so much fun, we even forgot to get the POKER chips out AND I didn't even have a chance to take a picture of my famous pear cake with caramel sauce, it's all GONE!! ❤️ Sushi combos were Mango/Green Onion, Sweet Potato/Avocado, Cucumber/Avocado/Green Onion, Asparagus/Green Onion/Carrots, Cucumber/Red Pepper/Green Onion, Carrots/Cucumber/Green Onion and served with my famous Mango/Ginger Sauce, Miso/Maple Sauce, Garlic/Chili flakes Soy Sauce (I tried Tamari, but I find that Braggs taste so much better, coconut aminos is good but not a crowd pleaser because it's not as salty), plant-based and sugar-free wasabi and homemade sugar-free pickled ginger (next time I will make it with Maple Syrup). Sushis were made with Regular sushi rice and Quinoa, but I also make them with Sprouts, Carrot rice, Parsnip rice and Jicama rice to make raw versions.

When you are not sure which orange to eat, get one of each 😂☀️🌈 The 7 kinds are (from biggest to smallest) Ruby Grapefruit, Cara Cara Orange, Navel Orange, Florida Orange, Honey Tangerine, Moro Blood Orange and Sweet Lime (which the smell reminds me of lemongrass candles?)
Vanilla Nicecream with Blueberry coulis ❤️ Ingredients: frozen ultra ripe bananas, vanilla to taste and frozen wild blueberries thawed and blended until smooth (if you want is sweeter, add dates to taste. If you want to add a little twist, add lemon peel. Eat as a meal until satisfied and notice how good it makes you feel!!
Maple Syrup Season ❤️ Banana nicecream (in Vitamix or food processor until smooth, 6 frozen ultra ripe bananas, 1 tbsp maple syrup and vanilla to taste), transfer to plate, add chopped fresh ripe bananas, unsweetened coconut flakes, dried mulberries and drizzle maple syrup on top❤️ When I crave startches, bananas can satisfy the craving. This breakfast for me is a healthier version of toast with maple syrup 😋
