1 cup fresh methi (fenugreek)
10-12 soya chunks
Red chilly, Turmeric, coriander powder
Red Chilly and garlic mix paste
Jeera (cumin seeds)
1-2 spoon curd
Ghee or oil
First soak soya chunks in warm water for about 20 minutes so that they become soft.
Now chop methi and wash properly so that all the dust get out.
Now squeeze extra water from soya badi and cut it into small pieces.
Heat some oil or ghee in a pan add a pinch of hing and cumin seeds.
Then add 1/4 spoon Turmeric, 1/2 spoon red chilly and 1/2 spoon coriander powder.
Now add methi and little salt.
Add red chilly and garlic paste about 1/4 spoon.
Add soya chunks.
Saute for 2 minutes.
Add ginger powder little.
Add 2-3 spoon of curd. Mix well.
Add garam masala. Cook for some minutes.
When water dissappear turn off gas.. Serve hot with roti or paratha.

Carrots, grated without the core (the core I feel just dilutes the taste and the colour of the halwa as well), homemade ghee, crushed cardamom, almonds, cashew, pistachios, milk with cream, sugar, khoya or mawa (can’t make halwa without this ingredient), and finally saffron (soaked in little warm milk)! Hands down, it will be the yummiest halwa you would have ever eaten!! ——————————————
