Super simple and easy. 👨🍳 .
A quick tip about tofu is to remember to let excess water 💦drain from it before cooking it then it will get nicely fried if you are using a firmer tofu. .

Spinach & Feta triangles!
This recipe is courtesy of Nanna @traceyahern_
- 200g feta, chopped into small pieces
- 250g frozen spinach
- 1 cup grated cheddar
- 1 egg
- Salt n pepper
- 1 tsp parsley
- 1 packet of filo pastry
- 1 tbsp butter, melted
- Preheat oven to 180 degrees celsius.
- Thaw spinach as per instructions on packet, squeeze as much liquid out as you can.
- Put all ingredients into a bowl (except the filo pastry) and mix well.
- One sheet of filo, folded in half and half again lengthways so it’s a long skinny length and cut in half.
- Brush with melted butter.
- Add a spoonful of feta & spinach mix to one end and fold to desired shape, I did triangles, and brush some more butter on top.
- Place on a baking paper lined tray and bake for 10-15mins until they are golden.
- Enjoy on their own as a snack or as a side!
Both of my boys have enjoyed these, feta is super low in lactose so Hamish is fine to have them... I just didn’t add in the grated cheese!
Cheesy chicken hash brown casserole!! Ingredients:
1 lb cooked chicken (I used a rotisserie)
2 cups corn flakes
3 tbs butter
1/3 cup milk
10 1/2 Oz can cream of chicken soup
2 cup sour cream
3/4 tsp pepper
1 tsp salt
40 Oz shredded potatoes
2 cups Colby jack cheese
Preheat oven to 400, in a large bowl mix together the hash browns, cheese, sour cream, salt, pepper, soup, milk, and the chicken. Scoop it all into a lightly greased 9x13 pan. In a small bowl mix together the corn flakes & melted butter. Sprinkle over top of fish and bake for 45 min to a hour until top is golden brown. I’ve been obsessed with this shake recipe for the past couple weeks 😍
8 oz unsweetened almond milk
1 cup frozen mixed berries (raspberries, blueberries and blackberries)
1 scoop vanilla superfood powder
A few ice cubes & blend
They say ABS are made in the kitchen🥦 Making me some abs right now! Sometimes I think we forget how amazing and crazy our bodies are and how they function. I just feel like it is so important to fuel our bodies with the nutrients they need to function properly! I’m NOT saying I eat perfect all day everyday 🤪 But making sure you get a dose of those nutrients everyday belongs at the top of our health priorities lists 💕
Let’s talk about something that’s all too real for me around the holidays: unknown calories, anxiety, guilt and shame. It’s this time of year that’s hardest for me and my eating disorder. So many yummy foods, so MUCH food it can be overwhelming. I have an internal struggle, worrying that I won’t be able to control myself. Worries that I’ll end up binging everyday and weight gain will occur. Anxious that I can’t workout because I’m not a member of a gym in my hometown since moving away. Worried I’m going to feel so much guilt and shame for even eating. My mind calms me down by reminding me I can just not eat. Skip breakfast, have a small lunch and it will be okay. But it’s not okay, it never is. This messed up way of thinking always gets me into trouble. I’m not sure what to do, or how to handle this. What I do know is this breakfast was nearly 600 calories when you factor in my coffee...yeah, it’s really bugging me. I woke up so hungry and this sounded SO GOOD. #wholewheatbagel with #peanutbutter and #berries ? How could you go wrong? My brain is on high alert, squawking at me that I’m going to lose control later (as if this meal predicts the rest of my day?). A part of me feels bad for “eating so much.” But was it really that much? I don’t think so. Energy dense but not unhealthy or unrealistic. I obviously needed the calories if I woke up and this is what my body wanted. It’s this rational/irrational battle that gets me down and zaps my energy. How can both be occurring simultaneously? I don’t know, but I don’t like it and wish it would stop.
Be number 1 at Thanksgiving this year, bring some of our bread and everyone will thank you! T-minus 6 hours to get those orders in via online, or by 9pm at the restaurants!🍞🥖 Remember, bread will be available for purchase at both restaurants but on a limited first come first served basis 🤗

I freaking LOVE Yoga! 💕 Today is the first day of my 3-week retreat and I am so stoked about that.🤸🏼♂️ I have been really needing this and I’m remembering after my practice today how AMAZING it makes me feel. I went from slightly unmotivated this am to full on energized!
