Even though things are really hectic at the moment, I found time to try this new salmon recipe which was absolutely delicious!
Baked Balsamic Strawberry Salmon
1 lb salmon fillet
1 cup fresh strawberries, halved
1/3 cup strawberry flavoured sugar free syrup (WF)
1/3 cup soy sauce
2 tbsp lemon juice
2 tsp dijon mustard
Place the salmon fillet in a resealable plastic bag. In a separate bowl, combine the syrup, soy sauce, lemon juice and mustard. Pour the syrup mixture into the bag and allow the salmon to marinate at least 30 minutes.
Upon completion of the marination process, place the salmon with all the marinade in a baking dish which has been lightly coated with non-stick cooking spray. Add the halved strawberries and cover with foil. Bake at 400F for about 25 minutes, or until the salmon flakes easily with a fork. Serve warm with sliced almonds + crumbled feta cheese.

But seriously, this sucked. At first, I was blown away by the 20g protein they managed to cram inside of 100 calories. But I didn't like it, it gave me weird cramps. I'm not sensitive to artificial sweeteners and not sensitive to excess protein either. So I dunno why I had this queasy feeling in my stomach. It's so easily available and it would've been a perfect food to love. But no such luck. Sigh.
