Another morning, another #bulletproofcoffee and Christmas tree picture! In the two weeks that I've been back on strict #keto I've lost 6 lbs. I'm almost back to where I was before the month long carb/junk food fest. As I get ready to journey home for Christmas this week, I'm already game planning. I do want to indulge in a few #notketo things like my dads homemade zucchini and dark chocolate chip muffins and have sushi with my brother. But, I plan to stick to the course 90% or more of the time. I felt so gross and miserable the month I fed my body nothing but crap and I don't want to go back. That being said, we have a long international flight. It’s been a busy day but of course I got it done! The funny thing with this fitness thing is - it’s hard to get started, once you do, it’s hard to keep going - but if you just trust the process, at some point there WILL be a shift, where I PROMISE - you will no longer push it off, you will start to look forward to it. Trust me. But, the trick is you have to stay consistent with it in the beginning, I would say for 2-3 weeks at least. And then, when you reach that, don’t stop. Keep going. And going and going. Most importantly- when you’re doing it, do it from a place of rewarding your body with this great thing called exercise. Not from a place of “let me punish myself for that cookie I ate earlier” because if you’re doing that, you’re not going to last long. Exercise is a gift and privilege and when you start seeing it as such, the entire experience will start to mold itself into something you’ve never seen before. 😘
I made keto cheesecake brownies! 😍 They're quite bitter, so next time I'll add extra Swerve into the chocolate batter mixture. Other than that they are absolutely delicious and I can't wait to try them cold!

Cream Cheese Filling: 8 oz cream cheese softened
1 Large egg
1 tsp vanilla
1/4 cup powdered erythritol OR 12 drops liquid stevia
Brownies: 2 Large eggs1/4 cup powdered erythritol (or swerve)6 tbsp butter unsalted2.5 oz unsweetened baker's chocolate1 tsp vanilla1/4 cup coconut flour1/2 tsp salt1/2 tsp baking powder
Instructions: Preheat oven to 350 and butter an 8x8 pan. Set aside.
In a medium bowl, beat cream cheese until whipped. Mix in egg, vanilla and powdered erythritol OR 12 drops liquid stevia until well combined. Set aside.
In a large bowl, beat eggs until they are frothy. Stir in powdered erythritol and let stand about 5 minutes.
In a small microwave safe bowl, melt butter and chocolate for 30 second intervals stirring between heatings, until chocolate is completely melted.
Add vanilla, salt, baking powder and melted chocolate to the bowl with the eggs and stir well. Slowly stir in coconut flour (in 1 tbsp increments works best)
Once mixed, spread 3/4 of the brownie mixture into the prepared pan. Spoon the cream cheese mixture on top and smooth it around.
Spread the rest of the brownie mixture on top of the cream cheese mixture to create a marbled look. Bake 25-30 minutes or until a toothpick insterted in the center comes out clean.

A look back at 2017... ☺️ In the beginning I had recently had my second daughter. I was a new stay at home mom. I was lost. Extremely unhappy. Overweight. Anxious & Depressed. Had zero energy. I was dieting and working out with little results. And not making any money.
Then in comes Pruvit/Ketones in the middle of the year... I am just thankful. I am thankful I stumbled across ketones and thankful I found the opportunity.
My kids got to have a happier mom who isn't constantly yelling and annoyed.
My husband got a better wife who is willing to help him do work around the house and clean more often.
I don’t even remember what it felt like when I was anxious and depressed.. just that it was dark and I never want to go back. I have never felt more confident in myself. Debt is getting paid off. And plans for the future are being made.
