Just made it ! Low carb pasta 🍝 with its bolognese!!! Thanks 🙏 for your advices @jamiedoesketo and @me_merlot_and.keto ! I rinsed them a lot! Cooked for 3 min and then pat them dry before mixing with the sauce. Then Parmesan as a finish! I agree, texture is not exactly like pasta, maybe a mix between a pasta and seaweeds salad you get in Japanese restaurants... anyway I found them delicious 😋 (not as good as regular spaghetti though but without the guilt feeling 😜). Many of you know that I am gluten free, and after asking you for good gluten free pasta brands (thank you! ❤️) I took some of your advice and used this low starch vegetable and it tasted great! .
Something I am increasingly aware of is that gluten-free doesn't automatically = healthier... (that study showing increased risk of diabetes?🤷♀️) but I think it's cos many are highly processed and refined, so I am seeking more whole-food whole-grain options. This is a great option But man, spiralizing those squash was tiring 😂😂 I need to get myself a proper spiralizer (hubs will be ecstatic at another kitchen gadget 🙊🙊)

Did I think for a second these were noodles? No 😔 no, I did not. It was like there was string cheese or maybe like melted cheese that had sort of hardened a bit in my sauce? So glad I made zoodles too just in case. Next time I'll just dump some shredded mozzarella in there for a similar effect 🤷🏻♀️ Verdict: they didn't taste bad (just like cheese - well, no duh) but I don't think they were worth the effort especially with having the extra step of letting them dry for hours. Jantarzinho Veggie e SUPER LOW CARB! ❤️😋🕊 Esse macarraozinho é o Shirataki ou Konnyaku, ele é ZERO CARBOIDRATO. Feito a partir da fibra gelatinosa de uma batata (isso batata) chamada konjac.
Essa massa é encontrada em lojas e mercearias orientais. Como é branquinha, muita gente confunde com o Bifum, que é de arroz e rico em carbo, então cuidado!! O shirataki vem em água!! Precisa ser lavado e aferventado para tirar bem o conservante, ok?! A massa tem sabor absolutamente neutro, mas pega bem o sabor de qualquer molho que vc colocar. A textura é beeem elástica, super substitui a massa de trigo.

So yesterday I made a low carb homemade "pasta". Only two ingredients - cheese and egg yolk. Recipe called for just mozzarella but I also added provolone, romano and emmental. Today I made my "pasta" with a homemade rose chicken sauce. I have to say, although quite tasty, far too heavy - I could only eat 2 forkfuls. I think I'll stick to regular pasta in small portions!👌🍝
#lowcarb pasta last night- this time with #zoodles AND boodles! Spiralized beetroot, fried for a few minutes in some olive oil, then added the zucchini noodles for another minute. Combined it with a Bolognese like pasta sauce I had made a while back, with minced beef and lots of veggies. Topped with some fresh basil and grated parmigiano - benissimo 👌
Keto Friendly Spaghetti Carbonara with Miracle Noodles🥓🍝🥚
*1 egg- beat & set aside
*In a warm bowl mix:
-1.5 T butter
-1/3 C shredded Parmesan cheese
-5 (or more) slices of crumbled cooked bacon -ground pepper
*Prepare 1 package of miracle noodles according to package directions. *Transfer hot noodles to bowl with cheese, butter & bacon. Pour egg over top. Stir vigorously. *Serve & enjoy!👍😀
