Life has been crazy, in a beautiful kind of way, to the point where I've started drinking coffee again. I do miss sharing my daily meals with you and getting your feedback and am doing my very best. Feeling a bit under the weather today so the thought of cooking from scratch on this FODMAP plan proved a bit too much tonight. In more positive news, apparently I'm fine to eat cheese on (gluten free) toast with Tabasco 🍞🧀🍅🌶
I am spontaneous by nature and a night owl and yet I have always been very particular about my morning rituals. Whether food or aerobics Oz Style orientated, I've always known that the start to a day is pretty important.
Even my hubs knows how imperative my big plate of green sit down meal is for me, so he made me today's one.

This is Tesco's FreeFrom take on a Tiramisu, the taste was good at first but like with some other FreeFrom products, there was a strange after taste... 🤔

LOW FODMAP/GF POLENTA EGGS BENNY 🍳✨ breakfast used to be my favourite meal of the day but giving up avocado, bread and honey had me giving up some of my favourite breakfast items, my favourite being eggs benny 😵 kept this low FODMAP by frying some sliced tube polenta from @traderjoes in garlic infused oil, then topping the slices with arugula/rocket, poached eggs, hollandaise and pepper 💛🖤 I cheated with this hollandaise as it came out of a packet but there are tons of homemade recipes out there using simple ingredients you will likely already have in your cupboard x
Stopped by the @cornerjuicebar on my morning walk this morning to treat myself to a birthday smoothie 💁🏻. It's the little things that make me so incredibly happy. I took off work today to relax and do me. In my smoothie: almond milk, peanut butter, vanilla protein, blueberries, and spinach. Topped with something that blew off the tree above me 😂
YOU GUYS. Peanut butter old bay shrimp lettuce wraps 🤤. I finally figured out a way to use the peanut butter old bay I've been swooning over from the farmers market. And they were SO DANG GOOD. If you don't have peanut butter old bay, ya should get some, or you can just mix some peanut butter and old bay together 🤷🏻♀️. Might sound weird but don't knock it till you try it! 🍤
In a skillet, heat 2 tbsp coconut oil with about a 3/4 of peanut butter old bay over medium heat. Stir frequently until melted and combined - peanut butter will still be pretty thick.
Toss in a half pound of thawed, peeled, shrimp. Cook, stirring frequently, until shrimp turn pink.
I assembled the wraps with peppers sautéed in olive oil, more sprinkles of old bay because I'm from MD and what else do you expect, and a little fresh cilantro.
I made a ton of shrimp because I wanted lots of leftovers (and mainly because I was cooking for Henry too 🙃), so you can adjust for a smaller portion!

1/4-1/2 c water
5 slices frozen zucchini
1 c frozen raspberries
1 spoonful of coconut butter (if you haven't tried this yet it's a game changer. I love @eatingevolved or @artisanaorganics)
2 scoops protein (I used @furtherfood collagen)
Splash of vanilla
Option add ins: @mountainroseherbs rhodiola and @sunpotion ashwaghanda + cordyceps
As going full-time vegan is a no-go for my system, I've been looking at other ways to include more #crueltyfree products into my lifestyle and it's a natural step to change my beauty routine using @lushfrance wonderful products. Next step is reducing my plastic footprint and that one might be tougher than I think 💪🏻💪🏻
Things have been crazy lately guys. After a busy family weekend indulging in gluten and dairy (and immediately regretting it, obvs), I've been managing my first work event. The chefs are rockstars and made me my very own special menu for delicate beings (LOL). This is a millefeuille of tomatoes with some avocado hidden in between layers. It was absolutely fantastic and am so grateful they took the time to create this 🙌🏻
HURRICANE DISASTER RELIEF
I hate that I just wrote "disaster" in full caps, but a girl's gotta do what a girl's gotta do to share her message, right? I have for real been trekking all around Barcelona the last two days, looking at the Mediterranean from every vista, but only thinking of the Atlantic. I've been asking the same question all day...
