One of my favorite things to eat this time of year is delicata squash. It's so quick and easy to make, and it's filling. I put ghee, lemon juice, salt, and fresh sage on this one and cooked it at 350 for 45 minutes.

Me encanta el carpaccio 😍 sobretodo para cenar porque tardo super poco en preparar el plato y así aprovecho la tarde haciendo otras cosas. 
El carpaccio que más me gusta es el que venden en Mercadona 😍. Hoy lo he preparado con un poco que boniato cocido, un poco de aguacate, tomate cherry, semillas de girasol, albahaca y queso cottage sin lactosa (Carrefour).

My pumpkin pancakes from Sunday!  Always try and make extra batches of waffles or pancakes when doing up your batter, because they make such a quick easy snack anytime of the day! Add nut butter on top, hemp seeds and a drizzle of clover honey! Presto, simple easy snack or meal!

There are so many choices when it comes to honey and Manuka honey happens to be my go to when it comes to buying honey;  but I've been experimenting with different varieties lately.  Today I used raw and pure clover honey for a little drizzle over my pancakes.  Clover honey is made by the bees feeding on the clover plant. 
Like manuka honey, clover honey is great for wound healing as Its anti-inflammatory affect make it a best remedy for slow healing injuries. It also contains High amounts of minerals such as iron, potassium and copper and vitamins such as vitamin C. It also works effectively against antibiotic resistant bacteria and is low fodmap. So a win win for gut healing and gut health. Raw Clover honey can help alleviate liver problems, and it also helps to remove bad cholesterol efficiently. It can help regulate and reduce blood pressure. This is just a few benefits of consuming 1-2 teaspoons of raw clover honey per day!

I took off work today to relax and do me. In my smoothie: almond milk, peanut butter, vanilla protein, blueberries, and spinach. Topped with something that blew off the tree above me 😂

YOU GUYS. Peanut butter old bay shrimp lettuce wraps 🤤. I finally figured out a way to use the peanut butter old bay I've been swooning over from the farmers market. And they were SO DANG GOOD. If you don't have peanut butter old bay, ya should get some, or you can just mix some peanut butter and old bay together 🤷🏻‍♀️. Might sound weird but don't knock it till you try it! 🍤

Savor it: 
In a skillet, heat 2 tbsp coconut oil with about a 3/4 of peanut butter old bay over medium heat. Stir frequently until melted and combined - peanut butter will still be pretty thick. 
Toss in a half pound of thawed, peeled, shrimp. Cook, stirring frequently, until shrimp turn pink. 
I assembled the wraps with peppers sautéed in olive oil, more sprinkles of old bay because I'm from MD and what else do you expect, and a little fresh cilantro. 
I made a ton of shrimp because I wanted lots of leftovers (and mainly because I was cooking for Henry too 🙃), so you can adjust for a smaller portion!

1/4-1/2 c water 
5 slices frozen zucchini 
1 c frozen raspberries 
1/2 banana 
1 spoonful of coconut butter (if you haven't tried this yet it's a game changer. I love @eatingevolved or @artisanaorganics) 
2 scoops protein (I used @furtherfood collagen) 
Splash of vanilla 
Option add ins: @mountainroseherbs rhodiola and @sunpotion ashwaghanda + cordyceps

We whipped up low FODMAP pesto fettuccini made with basil, EVOO, pine nuts, Parmesan and garlic infused olive oil 🌱😍 Followed it with a fruit platter of pineapple, strawberries, blueberries, cantaloupe and mango (I can tolerate mangoes, yay!) 🍍🍓🍈🍇 On the side we had gluten free marshmallows, melted dark chocolate and Nutella 🍫 
Paired with a bottle of red wine 🍷 this was my ultimate girls night feast! Went perfectly with watching the princess diaries!

Lunches for this week are mini frittatas and a side salad 🍳🥗 For the frittatas, I used roast pumpkin (which I made the other night), asparagus (blanched in boiling water for 1-2 minutes), goats cheese, chives, egg, salt and pepper. Although asparagus is considered high in fodmaps, each frittata has less than 1 whole spear in them and I seem to tolerate them fine. If you can't you could substitute spinach for some greens! 
Really healthy and REALLY filling 🤤
I had 2 with lunch and feel quite satisfied and that equals to about 2 eggs. I think maybe even 1 and a half would fill me though. Everyone is different!

Ya habeis probado las barritas de @quinua_real ? La tenéis en 5 variedades: normal, de coco, con cacao, con arándanos y con almendra 😋 están endulzadas con sirope de arroz así que los que tenemos malabsorcion de fructosa podemos tomarlas sin problema (evitar la de arándanos 😉). Mis favoritas son la de almendra y la de coco 😍 soy una lover del Coco no puedo remediarlo🙈🙈
Son perfectas para media mañana, llevar en el bolso para una emergencia, para la merienda, para llevárselas al cole.... 💙💙💙 Y para días feos como hoy también 😁 cuando está así el día necesito algo rico para comer y así me alegro un poco🤗

Today's lunch probably wasn't the healthiest, especially after a killer gym session. But, my god, it was the tastiest! 
Fodmap friendly fettuccini aglio e olio using gluten free fettuccini (I use @sanremopasta), @cobramestate extra virgin olive oil and a touch of garlic oil to get that garlic taste, cherry tomatoes, parsley, chilli flakes and pecorino cheese. I also topped it with some herbed grilled chicken and served with a side of Sicilian olives 🍝🍅🌶🧀❤️ I am half Italian and thoroughly enjoy eating Italian foods. I love fresh and simple ingredients that are easy to throw together. This dish is an all time fav because it's simple, delicious and super quick to make!

Who said being low FODMAP means that you can't still enjoy some avo toast? 🥑 
I like my avo toast best when the avocado is mashed with lime and mint! By far the tastiest combination I've tried so far. If you haven't tried it, highly recommend giving it a go! I also enjoy some pumpkin seeds for added texture, and a tiny bit of goats cheese to make it a little creamy 🐐🧀🥑🍞💕 The recommended fodmap serving size for avocado is 1/4 of an avo at a time. As avocado is high in sorbitol, exceeding this can really be tough on some individuals tums. Just stick to the recommended serving size until you've tested your individual tolerance. I still find I can cover two slices of toast decently with just a quarter! And then I mash and portion the other quarter of an avo into an airtight jar for my breakfast the next morning and keep the other half of the avo for adding to a salad etc.

If you haven't tried it, highly recommend giving it a go! I also enjoy some pumpkin seeds for added texture, and a tiny bit of goats cheese to make it a little creamy 🐐🧀🥑🍞💕 The recommended fodmap serving size for avocado is 1/4 of an avo at a time. As avocado is high in sorbitol, exceeding this can really be tough on some individuals tums. Just stick to the recommended serving size until you've tested your individual tolerance. I still find I can cover two slices of toast decently with just a quarter! The chefs are rockstars and made me my very own special menu for delicate beings (LOL). This is a millefeuille of tomatoes with some avocado hidden in between layers. It was absolutely fantastic and am so grateful they took the time to create this 🙌🏻

BUT this is delicious and you have to try it!
Quinoa Chicken Grape Salad
1/2 cup cooked quinoa
3 ounces chicken
1/2 cup 🍇 
2 tbsp walnuts
2 tbsp feta
1 tbsp EVOO
Parsley and pepper to taste

Mix ingredients together and beast it! Best eaten cold.

Macros: calories- 448, carbs-37.7, protein-28.1, fat-20.5

I have for real been trekking all around Barcelona the last two days, looking at the Mediterranean from every vista, but only thinking of the Atlantic. I've been asking the same question all day...

What can I do?

And it's an empowering, like seriously, what the fuck am I GOING to do, because I may be halfway around the world, but that's no excuse. Maybe you've been thinking the same thing? What can I do right now from where I am? My favorite way to contribute is time because it's something I really really value. But how can I contribute my time right now?

I connected with a few Floridian clients, who clearly are not in a place to be meal prepping over the stove tonight, I realized I CAN contribute time in a new way that also gives you the opportunity to contribute while working on your health + nutrition, just as my loves wish they COULD right now.
