I had an entirely vegan lunch today.. feeling back to my old ways! I had organic spinach and broccoli topped with nutritional yeast alongside chorizo seitan from Whole Foods, Kite Hill almond cheese, and Siete Chips, so I don't go low! I had to correct a 130 a few hours ago and I'm trending down now, so need some extra carbs to hold me over.
Lunch today: marinated kale salad with roasted beets, sweet baked sweet potato falafel, carrots, cucumbers, olives and feta cheese (leave out the feta for a vegan lunch!). I use GF chickpea flour in the falafel and bake them @deliciouslyella thanks for the falafel and kale salad recipe!
The kale salad can be made in advanced and stored for 3 days in the fridge !
When you have a deadline but no time to fix lunch. Rolling Smoke to the rescue! Very grateful for a hubby who looks out for me. He stopped by Rolling Smoke to grab lunch for me then took the guys out so I can upload LOVE'S SILVER LINING without distractions.
