Autumn is coming - part II.
My love for pumpkins is unconditional and everlasting. Aside the fact that they are very photogenic, pumpkins have an interesting nutritional profile: very low in calories (just 26kcal for 100g!), rich in vitamins A, B group anc C, Calcium, Magnesium and Phosphorus, this vegetable is recommended in diets. Besides, it’s delicious.
For this soup I used some red lentils (about 100g) to increase the protein amount, onions, carrots and tomatoes. For seasoning I added rosemary, cardamome, sweet paprika and nutmeg, with just a pinch of black pepper to taste.
Oh how I need to go grocery shopping. Lunch was a, "omg what do I have that is yummy, filling and healthy-ish?", lunchbox! 🤣 • Greek yogurt with coconut

• carrots and ranch
• coconut see cluster
Protein✔️ veggies ✔️ fruit ✔️ carbs ✔️ I got it covered with what I could muster up!
