This is one of those fish recipes that everyone loves. My hubby doesn’t really like fish and even this gets a 👍🏻 up from him.
Duke’s Macadamia Nut Fish
4 (6 oz. size) Opah (Moonfish) fillets
Pinch of kosher salt
1/2 tsp. ground white pepper
1 cup panko
1/2 cup Parmesan cheese
1/2 cup finely chopped unsalted macadamia nuts
1 Tbsp. basil
2 Tbsp. minced garlic
1/2 tsp. thyme
2 Tbsp. olive oil
Season fillets with salt and pepper. Combine remaining ingredients except olive oil; coat fillets with mixture. In a skillet, heat olive oil over medium-high heat. Sauté fillets until golden brown, about 4 minutes on both sides. Serve with Lemon-Butter Wine Sauce with Capers.
Lemon-Butter Wine Sauce with Capers:
In a saucepan, heat 1/4 cup dry wine, 1/4 cup chopped onion, 2 tablespoons chopped parsley, 2 tablespoons chopped chives, and 1/4 cup lemon juice. Cook until liquid reduces to half. Add 1/4 cup heavy cream; simmer for 2 minutes. Remove from heat and whisk in 1 1/2 cups softened unsalted butter, a little at a time. Add 1/2 teaspoon salt, 1/4 cup capers, and 1/4 teaspoon lemon juice. Makes about 1 cup sauce. .

Jan 17: I was really hoping hubby would have a better food picture but not today. Breakfast was MCT coffee and the @atkinsnutritionals blended shake I posted earlier. Lunch was leftovers - the red pepper stuffed chicken from the @wickedstuffed Wicked Good Ketogenic Cookbook. Snacks were cheese stick and macadamia nuts. Dinner was chicken, bacon, mushrooms and pesto with cheese. I tried to mimic my lunch the other day but I think I need to bake it. I got my shipment of @sportsresearch MCT oil that was 50% off on Amazon this week! I think we are good for a while 😂! Funnily this was the last thing I did before catching my long haul flight from San Diego to London: relish in the childhood pastime of collecting macadamia nuts from the neighbor’s tree and having a whale of a time cracking them open with the hammer. Nutcrackers are too destructive - its got to be a few gentle taps of the hammer in order to preserve the shape of the nut without smashing it to smithereens. As a kid I loved opening tons of these and munching the buttery coconutty meat in the shade of the macadamia tree on a hot summer’s day. Go get your hands on some of these babies, raw or roasted 🥥 .
Omg!!!! I went to another co-op today and found my absolute fav original hemp milk. Soooo good in coffee it’s seriously as creamy as a coffee creamer! Afternoon snack! It’s things like this that just make me feel that LCHF is a totally sustainable approach to eating. Since cutting back our carbs 10 weeks ago, I’ve lost over 5kg & am finally down to my pre-pregnancy weight. I am excited to keep going as I still have more weight to lose. Jan 16: So I noticed that once I started entering MCT oil and macadamia nuts into my daily intake my fats have been on point. So simple to add and healthy fats too! Pretty easy day today. Breakfast was MCT oil coffee and protein bar. Snacks were cheese stick and macadamia nuts. Lunch was this amazing chicken filet. It was a sandwich but I told them no bun. It was a chicken breast, aioli sauce, bacon, sautéed mushrooms and Monterey Jack cheese - it was so yummy!!! I was so excited I ate a few bites before I remembered to take a pic - oh and that side salad lol. Dinner was leftovers from last night 🤤. A few pork rinds and dip before.
