I used to live off Mike and Ike’s, Doritos, Camel Lights, large iced caramel lattes with extra cream and extra sugar, and Red Bull. I felt like shit and just assumed it was normal. Now, my life revolves around our homemade lemon-tahini Buddha Bowls with as many vegetables as possible. Good morning and happy Friday! 😄🎉🙌✌️ I hope everyone is having a great start to their weekend! What you see here is my dinner from last night! 😋 It was meant to be a super salad, because yes...I am obsessed 😂 But instead it tuned into what you see here and let me tell you, it was amazing! I eat a lot of random stuff 😄 A lot, if not all of my recipes have been foraged from somewhere in my imagination 🤔💭🙌! I believe being creative in the kitchen is a must, I mean we have to eat for the rest of our lives, so let's make it fun! 😄 So what I have here is some 90/10 extra lean grass fed ground beef! I threw that into a hot pan and got it cooking! Next I threw in one whole chopped orange belle pepper, one jalapeño, and a half of a red onion! And I must note that I didn't add any additional fat to cook the vegetables, instead I took advantage of the fat in the beef! 👍 I also served that with a side of asparagus that I baked in the oven. I simply preheated the oven to 425 degrees, lined a pan in foil (easy cleanup! 😄👍) cleaned and prepared the asparagus, sprawled then with some 100% lire avocado oil spray, and topped them off with some Himalayan salt, black pepper and some cayenne pepper for that extra heat! I threw them in the oven for 6 minutes and 💥 boom...perfection! Also I served this dish with a side of some artichoke hearts and some sliced black olives 😊 Now being that this is a very low card dish I make sure to get in enough salt! If you watch my Instagram stories maybe you have already heard me talk about this before. Being in a keto diet or a low carb diet or what I like to call keto my way, you need to make sure that you are getting enough quality sodium into your diet! I suggest cooking with Himalayan salt because of its high mineral content! Don't rely on just normal table salt, that will simply further dehydrate your body! When you are in a low carb or a ketogenic diet you will be going to the bathroom more frequently because when you eliminate carbs you also eliminate a lot of water retention.
