It's Monday and that means it's time for meal prep!  Don't you just love the convenience of a crockpot?  It's a fantastic way to cook up a flavorful and moist pork shoulder roast. Our crockpot will hold 4-7 lbs. Scale this recipe to make several meals for 2 or enough to please a crowd on game day. Pierce the roast several times with a fork. If your roast is 3-4 lbs drizzle 2 tablespoons of liquid smoke over the top-use more for larger roasts. Give it a good dusting of black pepper, garlic powder and course sea salt. This will freeze well so I'm cookin' up about 7 lbs. on low for 7-ish hours. Lamb shanks slow cooked for a couple of hours on the BBQ. I seared them on high for the first 30mins (to get rid if any fat I couldn't get off) and then 90 mins on low, adding a ramekin of water sat on the grill, with the lid on, to get them really tender. I once cooked, I stripped the meat ready for salad later. Baked oats/all bean for hubby's breakfasts. Hubby cycles into work and eats brekkie there. I'm batch cooking some baked oats so he can run them into work by car and chuck them in the freezer. I had some all bran to use up so used 1/3 all bran and 2/3 oats with eggs, egg whites, sweetener, vanilla, yoghurt and frozen fruit. Each of these trays is 6 servings and I accounted 1 syn per serve for the fruit. โค๏ธ๐ŸŽƒ๐ŸชBe still my basic pumpkin spice loving heart - A reduced sugar, generously spiced, pumpkin oatmeal cookie with bits of chocolate and tart dried cranberries throughout - why, hello Fall ๐Ÿ‘‹๐Ÿผ๐Ÿ‚The most amazing part of the recipe is that there's no butter and oil! I portioned my cookies even smaller, and have tried it after freezing it too (still great)! We've been eating these as on the go breakfast, an after nap treat to chase away a case of the grouchies, & to tide us over in between meals. I reduced the chocolate a bit in my second batch and swapped to mini chocolate chips for a more even distribution, and cut the sugar just a tad. I'll continue to play around with the recipe, but we love it! I portioned my cookies even smaller, and have tried it after freezing it too (still great)! We've been eating these as on the go breakfast, an after nap treat to chase away a case of the grouchies, & to tide us over in between meals. I reduced the chocolate a bit in my second batch and swapped to mini chocolate chips for a more even distribution, and cut the sugar just a tad. I'll continue to play around with the recipe, but we love it! Oh yeah. Will you just look at this scrumptious homemade chili cheese burrito? These are great to make ahead and freeze for a quick dinner, after school snack, or late night cravings. I make taco meat like I normally would for tacos (you can even use ground turkey if you want). I like my ground beef chopped fine in these so I normally pulse it a couple time with a stick blender. Then I stir in a can of refried beans, 1 cup of cheddar cheese, and then 1-2 T water to thin it out a bit. Place chili filling in 6 or 8 inch size flour tortillas with a little more cheddar or cheddar jack cheese. Roll, wrap in foil, and freeze. When ready to eat, these can go straight from freezer to microwave (just remove foil first).
Oh yeah. Will you just look at this scrumptious homemade chili cheese burrito? These are great to make ahead and freeze for a quick dinner, after school snack, or late night cravings. I make taco meat like I normally would for tacos (you can even use ground turkey if you want). I like my ground beef chopped fine in these so I normally pulse it a couple time with a stick blender. Then I stir in a can of refried beans, 1 cup of cheddar cheese, and then 1-2 T water to thin it out a bit. Place chili filling in 6 or 8 inch size flour tortillas with a little more cheddar or cheddar jack cheese. Roll, wrap in foil, and freeze. This is my new favorite way to cook potatoes. I boil small new potatoes over the weekend so that I can do something quick with them during the week. For these I just smash them with my hand on a cutting board, drizzle with olive oil and salt and then put in a cast iron skillet. After I flip them the first time, I add a few dabs of butter. You just keep flipping them over and over until they are warmed through and properly browned.

The best make ahead dinner for kids (and adults!). You can make these and keep in the fridge for upto 3 days or freeze them. Just defrost and warm up in an oven for about 8mins. You need a pack of good qualify sausages (beef, chicken or pork), 2 x sheets of puff pastry and a cup of veggies (I used frozen corn/peas and some grated carrot. Cut down the length of the sausages and remove the meat from the casing. Put in a bowl with the veg, a dash of Worcestershire sauce and season. Mix together. Cut each sheet of pastry in half length ways. Take 1/4 of the meat mixture and roll into a sausage shape and lay down the centre of the pastry and roll up. Seal the edge with a fork and cut into 4 pieces. Prick the top with a fork, put on a lined baking tray and brush with beaten egg or milk. Repeat with the other 3 pieces of pastry to give you 16 sausage rolls. Bake at 200 degrees for 30 mins until golden and cooked inside. Serve hot or cold.  I like to make these on a Sunday for those evenings when I just need dinner on the table in 5mins. Great for lunchboxes too. #foodforkids #healthykids #easymeals #makeahead#soccermom #sausagerolls
