On Monday I like to scramble a ton of eggs, and then make breakfast burritos for the week. A shaker bottle is perfect for this because there’s so much less mess, fewer dishes, and you just shake warm soapy water afterwards to clean up. And then I have a week’s worth of burritos (for lunch) at the ready both for me, and for Ellie on our home days.
Had a bunch of tiny bags of grains, nuts, and seeds and didn't want to waste them but each one was only about 2 tablespoons at most...so added them all to a pot and made a big batch of hot cereal for the week 🙌 #nowaste#cjnutrition

I portioned my cookies even smaller, and have tried it after freezing it too (still great)! We've been eating these as on the go breakfast, an after nap treat to chase away a case of the grouchies, & to tide us over in between meals. I reduced the chocolate a bit in my second batch and swapped to mini chocolate chips for a more even distribution, and cut the sugar just a tad. I'll continue to play around with the recipe, but we love it! PUMPKIN PIE #OVERNIGHTOATS :
🍁 1/2 c rolled oats 🍁 1 T flaxseed 🍁 1/4-1/2 t pumpkin pie spice (to taste) 🍁 2 T pumpkin purée 🍁 1/2 c unsweetened milk of choice 🍁 1/4 t vanilla 🍁 2-3 t maple syrup 🍁 1/4 c Greek yogurt, optional (makes oats creamier & adds a little extra protein) 🍁 2 T hemp seed, optional (⬆️ protein)

I decided to make my version of Lactation Muffins 🍼& tho I'd add fruit or brown sugar next time to give it a little more sweetness, they're actually really good & good for me (& the baby!). 🍞Muffin Mix package, any flavor (I used Banana Nut) 🍶3/4 cup Soy Milk
1 tbsp Hemp Powder
1 tbsp Flax Seed Meal
🍚1 package Instant Oatmeal, plain (flavored would be another variation!)
Bake as directed on package!
We love entertaining and I always turn to my collection of trusty themed menus when cooking for a large crowd. This weekend is going to be a Mexican menu, most of which will be made in advance so I can sip cocktails with our guests rather than sweating in the kitchen! Oh yeah. Will you just look at this scrumptious homemade chili cheese burrito? These are great to make ahead and freeze for a quick dinner, after school snack, or late night cravings. I make taco meat like I normally would for tacos (you can even use ground turkey if you want). I like my ground beef chopped fine in these so I normally pulse it a couple time with a stick blender. Then I stir in a can of refried beans, 1 cup of cheddar cheese, and then 1-2 T water to thin it out a bit. Place chili filling in 6 or 8 inch size flour tortillas with a little more cheddar or cheddar jack cheese. Roll, wrap in foil, and freeze. When ready to eat, these can go straight from freezer to microwave (just remove foil first).

Sally's focus on her blog isn't healthy baked goods, so I was surprised to find this was the clear winner over a couple other ones I tried from other bloggers. I omitted the nuts so my girls would be more open to trying it, and added a Tb of flax seeds to it. I froze a couple of them and had defrosted one overnight in the fridge to see how it would fare. While I was packing my daughter's school snack and lunch, I heard my husband say, "oh there was more?" And then he JACKED my cookie. My sweets averse husband thinks it's far better than a clif bar. I think this would be great fuel for his bike rides! This is my new favorite way to cook potatoes. I boil small new potatoes over the weekend so that I can do something quick with them during the week. For these I just smash them with my hand on a cutting board, drizzle with olive oil and salt and then put in a cast iron skillet. After I flip them the first time, I add a few dabs of butter. You just keep flipping them over and over until they are warmed through and properly browned.
The best make ahead dinner for kids (and adults!). You can make these and keep in the fridge for upto 3 days or freeze them. Just defrost and warm up in an oven for about 8mins. You need a pack of good qualify sausages (beef, chicken or pork), 2 x sheets of puff pastry and a cup of veggies (I used frozen corn/peas and some grated carrot. Cut down the length of the sausages and remove the meat from the casing. Put in a bowl with the veg, a dash of Worcestershire sauce and season. Mix together. Cut each sheet of pastry in half length ways. Take 1/4 of the meat mixture and roll into a sausage shape and lay down the centre of the pastry and roll up. Seal the edge with a fork and cut into 4 pieces. Prick the top with a fork, put on a lined baking tray and brush with beaten egg or milk. Repeat with the other 3 pieces of pastry to give you 16 sausage rolls. Bake at 200 degrees for 30 mins until golden and cooked inside. Serve hot or cold. I like to make these on a Sunday for those evenings when I just need dinner on the table in 5mins. Great for lunchboxes too. #foodforkids#healthykids#easymeals#makeahead#soccermom#sausagerolls
This lemon blueberry buttermilk breakfast cake was a total hit at work! I got the recipe from @alexandracooks and the only thing I changed was that I added some cinnamon to the sugar topping. I really like this recipe because there was a tip about preparing the better the night before and cooking fresh the day of. It's really nice when recipes have flexible options like that 👏🏻
@budgetbytes slow cooker white chicken chilli. Tip: I always sautée onion separately in a skillet before adding it to the crock pot because otherwise it gives everything a sulphurous flavor.
