The next time you need a fancy drink for a party or just because, this strawberry ginger punch is your answer! It's made with @zevia (#ad ) ginger beer which is naturally sweetened with stevia plus a homemade strawberry sorbet and topped with cranberry juice 👌
3 cups Zevia Ginger Beer
3 cups cranberry juice, unsweetened
10-12 scoops of strawberry sorbet
Add sorbet to punch bowl, top with @zevia Ginger Beer and cranberry juice & serve! So easy and delicious.
Chickpea pancakes. Basically what I have been living off while on holiday from work and with very little money. Chickpea flour is my saving grace. It's gluten free and the ratio is simple, 1 part flour, 1 part water, then you're free to flavour. I've also been adding in a flax egg as a binder and just for some omega 3. I've been doing a savoury pancake in the mornings with whatever vegetables I have diced up (carrots, zucchini, spinach, kale, corn, peas, etc), usually some form of fried onion/leek/scallion, always loads of nooch for b12, garlic powder, smoked paprika, mustard powder, salt, pepper and sriracha to give the dough some flavour. Yesterday I added cooked quinoa aswell for some protein and it was a really delicious addition. Always topped with some form of cashew cream, pickles and extra sriracha. Such a simple breakfast and so good for you.
Seafood Bisque - perfect for a chilly night!!
1/4 cup butter
1/2 lb raw medium shrimp, thawed and peeled
1 lb crabmeat
10.5 oz can cream of mushroom soup
10.5 oz can cream of asparagus soup
10.5 oz can cream of potato soup
2 cups half and half
2 cups milk
2 teaspoons salt (plus more to taste)
1/2 teaspoon pepper
Melt butter over medium heat in a stock pot. Add raw shrimp and cook until pink, about 5 minutes.
Add in remaining ingredients, except oyster crackers. Bring to a boil stirring occasionally. Reduce heat, cover, and cook over medium low heat for 20 minutes.
Add more salt as desired. Serve in bowls topped with oyster crackers.
I’m still sunk in the January winter blues :( and dreaming of vacations… have been thinking of the magical days we spent some years ago in sleepy ancient Luang Prabang, in the mountains of northern Laos - with its beautiful old French colonial as well as traditional Lao architecture, monasteries and monks in their saffron robes everywhere. We stayed in a little house by the river. We'd wake up, chat with people who lived on the street, have lunch at a table by the river, with the neighborhood cat hanging out with us. Well, we basically bribed her by sharing our food with her, so she’d happily come over and sit on my lap while we ate long leisurely meals, drank wine, read, watched the river and whatever little action or non-action happened on the road… Everyday for lunch I’d eat a dish called Laap, I became quite addicted to it. (You can find somewhat close approximations at Thai restaurants in NY now, they call it larb; but larb is quite different from the laap they made in Luang Prabang.) Luckily I was able to take cooking classes there, and learned to make some delicious Lao dishes, including laap. The recipe is super easy, takes about 30 minutes to make. It’s healthy too, and fantastically infused with the fragrance of fresh herbs. Our friend who was visiting from #capetown loved the dish when I made it for dinner. After years of (admittedly, half-hearted) attempts to find a good meatloaf recipe, we love the simple one from Romy’s baby-led weaning cookbook. Beef, sausage, breadcrumbs, egg, carrot, onion, tomato paste, dried basil, dried oregano and a pinch of dried thyme. It was one of her favorite meals in those early months and I haven’t made it in a while. We’ll see if she still likes it 🤞🤞🤞
