Totally unexpected weekend, but got everything in that I wanted and then some! No time for food posts and my training didn't fit in on Saturday, because we were out and about having too much fun with the little man. Plus my motorbike lesson was shifted to an earlier slot. But that's okay! Sometimes things don't go as planned. The new thing for me is to try and roll with it without letting go of all my new habits. So I made up for the missed workout early this morning, and even had time for brunch with a friend afterwards and a visit to the petting zoo. And to top it all off tonight we had a spontaneous home cooked traditional Japanese meal and sake with some friends and complete strangers. Today's #easyketo meals is #chicken#spinach casserole. First I cut up a pound of chicken and add that to a greased casserole dish then I add a can of spinach, I get mine from Kroger's because with the dietary fiber there's no carbs, then I add a teaspoon of #garlicpowder and 5 tablespoons of #mayonnaise . I mix all that together and put it in the oven at 350 degrees for 30 minutes. No carbs at all in these meals!
Jamón Ibérico with Momofuku's Redeye mayonnaise, which is homemade mayonnaise with Sriracha and instant coffee. I wanted to try this recipe for such a long time, because it sounded like such an exciting combination. The bitterness of the coffee together with the spiceness of the Sriracha perfectly fits to the saltiness of the ham. Very impressive! #jamon#foodies#homemade#berlino
My BF is the best 🙌 he was at the snackbar last week and saw the advertisement of "the asparagus croquette". He directly asked the guy behind the counter if he could buy it frozen for his GF. Fry potatoes and sausages a little in a pan. In the mean time stir eggs in a bowl and add a little mayonnaise sauce (1 tsp for 2 eggs) and stir well. Add tomatoes to the pan then pour the eggs on it. Put a lid on the pan and wait until the eggs are done. The time depends on how much you want your eggs to be cooked. I like them well done.
