Cacao nibs on everything at the moment 😊. They have an intense chocolate flavour but not sweet. Not only do they taste yum they are also full of health benefits. Cacao beans are one of the best magnesium rich foods. Magnesium is key to muscle and nerve function. Cacao also contains iron. Iron deficiency has side effects like fatigue and is something for women and vegans to be mindful of in particular. To ensure proper absorption pair it up with a vitamin C source. Fancy something warm and nourishing but without all the kcals this Saturday? What about a sausage casserole.. Ingredients
12 chicken sausages - I used heck
1x tin of reduced sugar and salt beans
1x tin of chopped tomatoes
1x celery stick
2x bay leaves
300ml chicken stock
450g potatoes - thinly sliced
Preheat the oven to 180°C/
In a large casserole dish, heat the kcal spray and fry the sausages, so they are browned on all sides. Remove from the dish and set aside.
Add the chopped onion, celery and carrots and fry for 3-4 mins until softened. Add the stock, chopped tomatoes and baked beans and stir well.
Return the sausages to the dish, add the bay leaves and season well. Bring back to the boil, then layer the potato slices over the top of the casserole dish.
Spray the potatoes with some more kcal spray and cover with a lid and put in the oven for 40 mins.
After 40 mins, turn up the heat to 200°C, remove the lid and cook for a further 15-20 mins or until the potato is brown and crisp.
Serve with green veg

I had a bit of a baking win and fail today! I made two lovely looking Roman style spelt loaves, and the smell of the warm bread was making me salivate wafting from the oven 😋 I then read the flour packet (it was Doves Farm Spelt flour) and realised it wasn't gluten free! 😣 I blame Sainsbury's for putting it in the free from section 😬😂 anyway at least my family will get to enjoy them over the next few days, as much as I love eating what I make I really enjoy cooking and baking for others, and sharing the food love 💕
I decided to try a new flavor of shake and oh my goodness!! I’m in love😍😍 It’s delicious and exactly what I needed this morning!! I love that I have so many flavor options and never get bored! But I’m still getting all the same nutrients and vitamins I need🙌🏼 Now, I’m off to Chattanooga to take care of my girls soccer team in their sub-state game! Wish them luck💪🏼⚽️
