YOU HAVE TO TRY THIS FOR BREAKFAST TOMORROW!! These French Toast Roll ups are absolutely lovely and a must taste for the summer 😍😍😍😍 In a small microwave-safe bowl, melt 3 tablespoons butter until just melted. With a fork, stir in 3 tablespoons granulated sugar, 2 tablespoons brown sugar and 1 tablespoon cinnamon until a smooth spreadable mixture forms. Set aside.
In a shallow bowl, whisk together the eggs and milk. Set aside.
In another small bowl, stir together 2 tablespoons granulated sugar with 2 teaspoons cinnamon. Set aside.
After trimming the crusts from each slice of bread, roll one slice out to about ⅛-inch thickness with a rolling pin. Spread each slice with a thin layer of the butter mixture and roll up tightly. Repeat with remaining bread slices and butter mixture.
Place 3 tablespoons butter in a large non-stick saute pan and let melt over medium heat. (If using a small saute pan, use just 2 tablespoons butter and saute the roll-ups in two batches) Dip one roll at a time in the egg mixture and place in the saute pan. Allow roll ups to saute for 1-2 minutes per side until golden brown and slightly crisp on the outside. Remove to a work surface and sprinkle each roll up generously with the cinnamon-sugar mixture.
Serve immediately with maple syrup.

Sweet Potato Tuna Melts
Sweet Potato Buns
1 sweet potato, sliced into 1/2 inch rounds
1 teaspoon olive oil, more as needed depending on the size of the sweet potato
1 teaspoon Himalayan sea salt
2 cans Genova tuna in olive oil, liquid removed
1/4 cup red onion, diced
3/4 cup celery, diced
1/4 cup mayonnaise
1 teaspoon lemon juice
1 tablespoon parsley, roughly chopped
1 teaspoon paprika
1/2 teaspoon Himalayan sea salt
1/2 teaspoon black pepper
Optional: 1 teaspoon whole grain mustard
1 roma tomato, sliced 1/2 inch thick
1 avocado, sliced thinly
Optional: cheddar Cheese, sliced thin
Pre-heat oven to 400°F and line a baking sheet with parchment paper.
Slice sweet potato into 1/2 inch rounds and toss with olive oil and sea salt.
Place sweet potato rounds on the parchment lined baking sheet and roast for 30 minutes, or until tender.
While sweet potato is cooking, mix all tuna salad ingredients in a large bowl. Taste and adjust seasoning as desired.
Slice topping ingredients and set aside.
Once sweet potato buns are ready, place 3 tablespoons of tuna salad on each of the buns. Top with tomato, avocado, lettuce or any other toppings you desire!
If adding cheese, top each slider with a thin slice of cheddar cheese. Broil on high for 3-4 minutes, or until cheese has melted completely.
Dinner was super yummy and colorful 😍. We always go out to eat on Friday's so tonight we went to @chilis and I got the chili mango chicken. I opted out for the rice it came with and doubled the broccoli to make it more points friendly i also did away with the thick sauce on mu plate it just ain't my jam. So i'm counting this as 8SP out of the 15SP it say's it is. So yuummmyyy!
I don't do salads often (just not my thing) but when I do crave a salad it's @moessouthwestgrill close talker (no shell) this HUGE salad is only 10 SP.
pro tip: skip the dressing and use salsa 💃 less calories and does the job. Also, skip the things like guac, queso, cheese and sour cream and pile up the things like onions cucumbers and pico 🙌🏻
