I started the #fitnesscarlimealchallenge today which meant I had to take “before” pictures last night. 😬After seeing them I wanted to cry myself to sleep, but I have to remember that I am more than a picture, pant size, or a number on a scale. Snagged a few things that we didn't NEED but will help me in later weeks 👉🏼 like dried beans. I picked up almond milk, who knows why 🤷🏼♀️ but we'll use it up. So no worries. And I splurged on lobster & crab ravioli, but they were DELICIOUS. 🦀

Pretty typical for us to cook up our favorite lemon, garlic, white wine sauce and toss in a lean protein, lots of chopped veggies and a carb for a complete one dish meal.
Protein: diced up chicken breast
Veggies: green beans, peppers, onions, broccoli
Carb: whole grain brown rice and quinoa mix (love those little packages that make it so easy to add)
Keep it simple and make enough for lunch the next day so you're not guessing what you're going to have and then end up finding yourself in a drive-thru.

KWEENOHAH? I struggled with the pronunciation of quinoa at first but after learning it's health benefits, I've been willing to give it another chance 😉 It is one of only a few plant foods that are considered a complete protein, containing all nine essential amino acids. And paired with beans and guacamole (always guacamole! 🥑), it makes for a perfect #meatlessmonday meal!

What do you get when you put layers of rich alfredo, fresh broccoli, and lots of melty cheese on top of tender chicken breast? A really crazy delicious dinner, that’s what! With just a few ingredients and minutes of prep you can have this puppy in the oven and be on your way to a family pleasing dinner! -

Broccoli Alfredo Chicken Bake -
3-4 boneless, skinless, chicken breasts
2 cups alfredo sauce
1 head of fresh broccoli, finely chopped (about 2 cups)
1 cup mozzerella cheese, shredded
1 tsp garlic powder
1 tsp salt
1 tsp ground pepper
1. Preheat the oven to 375F.
2. Wash and finely chop the broccoli head, then set aside.
3. In a large baking dish, lay each chicken breast side by side in a single layer. Then sprinkle the garlic powder, salt and pepper evenly over the top of them to season.
4. Spread the broccoli florets evenly over the chicken, then pour the alfredo sauce over the broccoli and finally top with the mozzarella cheese.
5. Place in the oven on the middle rack for 40-50 minutes or until the chicken is cooked through and the broccoli is tender.
6. Remove from the oven and allow to cool for 5-10 minutes. Then serve hot over pasta, rice, mashed potatoes, or sautéed spinach.
7. Enjoy! -

I didn’t get in day 20 of my Bootcamp program but I DID get in a HIIT workout on my Sweatflix system. .

Now I will be the first one to admit it isn't always easy, but...nothing worth having comes from a place of "easy." You have to want it and work for it! The support, motivation and accountability that being part of a challenge group provide me helped me to keep pushing!

And sometimes we make mistakes – like what I learned that I did at work – sent documents to the wrong client 🤦♀️ #legallife#toobusy#crazytown at work – But the one thing that I know I am complete control of = ME 👏🏻 I control how I treat my body – by exercise 🏋️♀️🤸♂️the foods I eat🍅🍑🍒🍉🍓 and what I feed my mind 📚 So, every day I try my best to treat myself the best. And 9/10 the way we feel is a direct reflection of what we put in our bodies. If you eat like crap 💩 you’ll feel like crap 💩 And you know what else? It’s proven that your gut health has a direct impact 🎯on your brain function. So when you hear “you are what you eat;” it is a pretty accurate statement. Don’t get fuzzy brain, or feel run down because you aren’t fueling your body property – choose your health, over the fries 🍟 and burgers 🍔 - it's ok 👌🏻 to have them occasionally - I do! 🙋just not all the time
And guess what else? Healthy TASTES GOOD 🙌🏼when you learn healthier options and what to make. I had my left over honey 🍯 chipotle slow cooker chicken 🍗 tossed into a salad 🥗 and it was DELICIOUS! And, I made sure to not over eat – because YES, you can have TOO MUCH of a good thing. My color coded containers make meal planning, and work lunch prep EASY. And I am a busy mom and wife and I need simple accountability.
Eat like you love yourself. Give yourself grace when you mess up. And live your healthiest, happiest life! ❤️🙌🏼

I have started working out on a regular basis using the Kayla Itsines app. Although I really think the app should undergo a huge improvement, I do think the work-outs help me get and feel fit. But eating healthy is also important! Therefore I plan my (read: our) meals ahead together with my mom. Mainly because I want to make sure we won't fall for our unhealthy cravings.
Mealplanning en boodschappen lijst. De maandag avond wordt/is mijn mealplan avond en dan wordt ook het boodschappen lijstje gemaakt wat we op woensdag allemaal gaan halen. Op zaterdag kan er nog wat vers bijgekocht worden maar ip daar buiten geen supermarkt bezoekjes (scheelt slechte dingen kopen en eten hoop ik😅)
