This meal ⤴️ took me less than 10 minutes to whip up this morning. The sweet potato chips were already cooked, leftover from a previous dinner. I lightly steamed the green beans and seasoned and pan fried the salmon. Threw everything in a container on a bed of spinach, slice up a lemon and voila!

'Using up the Wilting Vegies' Aromatic Coconut Soup.....finely chop and gently fry up some turmeric, ginger, garlic and onion with some coriander and cumin powder in olive or coconut oil and then stir through whatever vegies you have in your crisper that need to be used up!!!! I like roughly chopped sweet potato, zucchini and a little beetroot all with the skin on!!! ( potato nice too if you can tolerate ). Then add in coconut cream or milk and filtered water to just cover the vegies, season with salt and pepper as you like and a generous helping of love. Simmer until just cooked and the flavours have melded. If you are a greens fiend like me then add in some finely chopped kale, silverbeet, chard or whatever you like towards the end. Meal Planning Week 2: I stayed on track with a Sunday shop to cover the majority of main course items for the week. I had to mix up my food themes a bit this week due to the kids after school sports but still planned out meals for the week...just in a different order 😉 Our Sunday #doubleheaderdinner was homemade hamburgers 🍔 which was an easy one to bbq  Sunday night and reheat the extras for the second night. I doubled the batch so in addition to having 2 nights of burgers this week I put another dozen in the freezer for a future week when I need an emergency meal 😜

Monday was more convenient this week to cook a crockpot meal (and I got discounted meat that I wanted to cook quickly) so I made Honey Garlic Chicken thighs and popped rice in the rice cooker when we got home. Turned out delicious and the whole family enjoyed (@diethood recipe shared on my Facebook page - check it out) 👍🏻 Have a great week.

🦄Counting calories is great. And it's something I think everyone should try, at least, for 30 days to get a better idea of how much they're actually eating, what appropriate portion sizes look like, and how much they need to eat to lose, maintain, & gain weight.

☕️That said, you don't *need* to count calories. And, truth be told, I've always viewed "nutrition mastery" as being able to eat intuitively without tracking every single calorie. That's why I don't count my calories anymore. I did meticulously for several years when I first started learning. But now I can look at any plate of food and guess how much it has within 50-100 cals.

🦄Now, what I have in this graphic is one of the methods I use for people who want to lose fat WITHOUT counting cals. Sometimes they just hate tracking and prefer this instead. Other times they use this when traveling or going on vaca and need some guidelines to stick to so they stay on track.

Day 1: Bacon portobello Brie burger! This was super easy to make and tasted amazing!! BACON!!! 2 portobello mushroom caps for the buns of the burger cooked  in the bacon fat, sandwiching a homemade beef patty (also cooked in the bacon fat) topped with a thin slice of Brie and a handful of arugula

Trying something new.... planning my day the night BEFORE. I usually plan my meals as I’m eating breakfast, but tonight I decided to try it earlier. I’m hoping this helps me have a smoother morning. Lately I’ve been rushed and running all sorts of places and missing meals which has led me to combining meals which has made me sick to my stomach 🤢 so I can’t handle that anymore. Here’s the deal. I actually missed the anniversary of when I started losing weight. It was on January 13. 2017. I was waiting until the 19th because that was when my first progress picture was taken. I’ll post that when the day comes. But here’s a picture I took of myself today. I got new workout leggings and did a really good cardio workout. I feel so much better than I used to and I’m so proud of where I’ve come from. I know I have a ways to go before I hit my goal, but to have been doing this successfully for a year makes me know I’ll make it to the end.

I take advantage of the slow/pressure cooker and it’s SO good to come home to a hot meal.

We are also wasting a lot less because I’m planning for fend for yourself days when we eat apart. .

Today was Christina’s very first day of snowboarding and let’s just say it was rough on her. She is exhausted, in pain from falling, and nervous to go back. I paid for 6 lessons with the snowboarding camp, and we made an agreement that she will finish the lessons when I paid for them. She will be ok, and nothing hot bath can’t fix. Today was Christina’s very first day of snowboarding and let’s just say it was rough on her. She is exhausted, in pain from falling, and nervous to go back. I paid for 6 lessons with the snowboarding camp, and we made an agreement that she will finish the lessons when I paid for them. She will be ok, and nothing hot bath can’t fix.
