Last night was a cooler evening so Danny helped me make up a bunch of soup so that we had dinner tonight and some freezer meals.

Pork loin, rice, & peppers for meal prep this week! I just made the pork in the oven, sautéed the peppers, and steamed the rice. Threw it all together! 1) it's SO easy to make for the whole week 🙌🏼 2) it's cheap ($1.95 a day!) 😍 3) because I love food and this gives me a lot of it 🤤

Irony of ironies, Meds is now on a sweet potato, chicken, and green diet (kind of).
For a while, he's been having some skin problems on his paws, and yesterday we found out that it's because he has some allergies. They're mostly environmental allergens like grass and trees, but some of them are dietary, including some ingredients in his regular food.
So while we work on finding a dog food suited to his needs, this spoiled pup is getting a few days of hand-prepped, specially tailored raw meat and veggie meals!
It's a lot of work, so kudos to anyone who does this regularly! I don't even put this much effort into my own meals!
Everyday that I don't want to show up, dial it in or throw in the towel -- I login to the community I created and see all these other women going through LIFE but still SHOWING up. 💁

🌱 1/2 tbsp chia seeds
🍍 frozen pineapple, mango &a blueberries
🔅 Leave in the fridge overnight - the frozen fruit will defrost & the chia seeds will form a gel 😍
🐟 1 tin tuna
🍝 50g (uncooked weight) pasta
💧 squirt of light mayo
🥒 cucumber & salad leaves

This meal is very simple and high in protein. When buying tuna steaks, look for those with firm, dense red or dark red flesh and a meaty aroma.
Avoid those with strong discolouration. Thicker-cut steaks will stay juicier during the cooking process. The macronutritients for this meal are: 537 calories - 49 P - 65 C - 9 F - 2 Fiber. Feel free to adjust to your personal needs #nevernotmealprepping

While working today, I was thinking about goals. Ever hear the saying "a goal is a dream with a deadline"?

My goal is written on the calendar on the fridge + on a post-it attached to my computer screen. I've learned that when it's only in your mind, it's not really a goal... it's just a dream.

It may seem impossible today, but every day + every step is an inch closer. Focus on the future, and let go of thoughts and failures of the past (unless you're comparing to see how far you've come!) 😉

I can see why every body loves tacos 🌮 they are so delicious and super simple. Growing up it was a staple at my house 🏡
I usually get wholewheat tortilla or organic white corn tortilla 🌽, I add hummus, black beans, bell pepper, carrots, cucumber, mixed greens, and my homemade sauce, roll and enjoy 😊
