Meal prepping for the week is done πŸ˜‹ 〽️I made the chicken parm stuffed peppers... from the recipe I shared this morning. Instead of adding breaded chicken I decided to add a little bit of quinoa and grilled the chicken and mix it all up. 〽️I also went ahead and baked chicken, I used Mrs. Dash Lemon Pepper seasoning. What a week last week: I ended up working about 60 hours and I'm still dead tired from it. I've gotten little sleep, but have been able to get my weekend workouts in and also got to spend lots of time with family friends and coworkers, so I can't complain. Here's my meal prep for this week especially for my vegetarian friends @marisamichetti and @bbg_zee1.0 ❀❀:
1) organic romaine lettuce
2) home-made veggie patty 
3) organic free-range hard-boiled egg whites 
4) organic raw beet slaw 
5) organic quinoa salad (quinoa, corn, celery, bell pepper, carrots, English cucumber, cranberries, salt/pepper, cumin, olive oil, balsamic vinegar)

Whether I'm ready for Monday or not, it's gonna come. Dreading it a bit, but I'm in the mindset of I'm gonna do the best job i can. I'm gonna try my hardest at work, work my hardest in the gym/studio and hope for the best. Happy Sunday night loves! πŸ’ͺ🏼πŸ’ͺ🏼❀❀

We all have eyelashes too, but we don't call each other eyelashes! πŸ€” FAT has always been the dietary bad guy yet we all need some fat from food. Fat is a source of energy, is needed to build and repair cells, and is necessary for muscle health and to avoid inflammation.

But some fats are better than others 🐟 🌰. Most of the time, unless I'm having a cheat meal, I try to incorporate healthier fats into my day. I've been getting a lot of messages asking WTF (where's the fat) and how to incorporate more fat into our diet. These are some of my favorite fats to include in my #mealprep! Meal 1) Turkey/quinoa meatballs served with mash potatoes topped with walnuts and cherry tomatoes.

Meal 2) Loaded quinoa bowls. With a bell pepper and almond sauce.

Actually haven't meal prepped in MONTHS for various reasons and I definitely saw a decline in my energy. Now that I have a more set schedule, I definitely need to meal prep or else I will be going #hungry. I was very tired today so I just did the same meal-- brown rice topped with seasoned garbanzo beans and veggies- with different sauces. And I #burned my rice (I'm very tired and stressed out so it's showing in my work now) so my last bowl is a bean dip with chips. I also did breakfast.
