It's been summer for like five days but already sooooo many fun summer festivities going on in Milwaukee!
Festivals, weddings, and other events have kept us busy and have gotten me off track a lot of the weekends. But ya'll know I preach balance and not depriving yourself of the things you love. ✌🏼 Here's part of the reason I decided to to my favorite three-day plant based cleanse this week. I finally feel like I've found FOOD FREDOM and don't sweat it when I indulge on the weekends (because I eat 99% clean during the week) but I've been sleeping like crap for weeks and feel a mental fog.
Not trying to lose weight or find a quick fix - I haven't even gained a pound. I'm hoping to cleanse some of the sludge out of my system so I can feel 100% again.
It's worked for me before and I know it will again! 😊
Tomorrow I'll be posting all of my meals and snacks throughout the day (this cleanse actually lets you eat REAL FOOD!) so you guys can see EXACTLY what it entails. Just check out my story!! 🤗
A continuation post of yesterday afternoon meal prep. I've found for me the key to eating healthy and staying mindful of what I'm eating is prepping my snacks/desserts. Not only does it help us from binge eating unnecessary sugary processed mess (especially if you work in an office environment where that stuff always seems to be laying around somewhere) but we will also be more satisfied and not experience a sugar crash afterwards. Talk about a win-win situation!👌🏼 It just takes a little commitment in the beginning. 🍒🥝🍓Just be sure to eat fruit at least 1 hour after you've had a cooked meal to prevent possible gas!🙊

📷 @jacquelineadan44: A lot sure can change in one year! At the beginning of my journey I weighed over 500 pounds. When I started Bootcamp I had already lost over 200 pounds. This picture on the left is my first day and than almost exactly 1 year later! I not only hit the onederland during that year (which was HUGE) but I even saw muscles which I had never seen before and was totally crazy to me! Do not be overwhelmed by the journey. Take baby steps and just keep moving forward. One day at a time. Small steps forward lead to big results! Just keep going! Because a lot can happen in a year!

Happy Sunday Meal Prep day! What's on everyone's plates this week?
Recipe will be up on the blog soon for these zoodles with paleo meatballs and OMG they're so good. I mixed some ground beef with turkey and the combo was unreal. I'm definitely keeping this recipe in my pocket for future dinners. Next I want to try adding nutritional yeast to these to see if that gives them a cheesy taste. Speaking on nutritional yeast- what else do you use it for? Help a girl out because I have a whole bag of it and I'm clueless 😂. This prep took only an hour so we know how happy that makes me. Short preps are the best preps! .
Haven't done a proper meal prep in like 3-4 weeks. 😶 Forgot how good it feels to have some healthy, wholesome meals ready for lunch and some great side dishes for dinners. 👍🏼 This week is a lot of broccoli 🌳, kale, rice noodles, courgette 🥒, sweet potato... 🥔and my signature roasted cauliflower salad with parsley, tahini and pomegranate seeds. 😋
#mealprepsunday is Monday's best friend. Organic chicken and carrots smothered in a ton of spices and @fourthandheart ghee, (made in my stories), organic grapes cleaned in water and vinegar and ready to snack on, and boiled @vitalfarms eggs 🥚🍗🍇
I actually had to go back to the store because as soon as I prepped the first batch of grapes I turned around and Freddy had almost eaten all of them in one day (as you can see here, he kept reaching for the second batch, but I liked the way his hand looked when I snapped the pic so it worked out haha).

Ingredients for 4 servings: ⠀
-1 package @ancientharvest Pow Green Lentil Penne⠀
- 28 oz. can @wholefoods 365 organic diced tomatoes (no salt added)⠀
-2 3oz. pckages @lightlifefoods original tempeh⠀
-2 large red bell peppers⠀
-Cooking Spray ⠀
1.) Preheat oven to 350 degree. Add 4 quarts of water to a large pan and bring to a boil. ⠀
2.) Add pasta to boiling water and cook 7-9 minutes, stirring every so often. ⠀
3.) While pasta is cooking, dice tempeh and slice peppers. Layer on a sheet pan, covered in cooking spray. Bake Tempeh + Peppers ~10 minutes.⠀
4.) Drain pasta and allow everything (pasta, tempeh and peppers to cool). ⠀
5.) Once cooled, layer in four containers as follows (I just split everything evenly and eye-ball the measurements): ⠀
-1/4 c. diced tomatoes⠀
6.) Voila! Store in the fridge and reheat when you're ready to eat. ⠀

A weekend well spent brings a week of content! We had so much fun soaking up all the sun and water we could over the weekend! But we really enjoyed lounging around Sunday morning and getting down on our meal prep grind! I'm on a #slaw kick! Here, I created different varieties of cabbage slaws like taco salad, Asian stir-fry, and original coleslaw. THEY'RE BAAACK!! 🤣 It's so great to be able to prep again!! These are roasted cauliflower and mini penne salads that I made last night. They also have kalamata olives, sun-dried tomatoes, red onion slices, a little feta, and a home-made citrus Vinaigrette! 😋
