- With a fork, mash all ingredients together
- Add 200 grams of cooked Pasta (50gram carbohydrates)
- Mix together and serve

To make the Thai green curry sauce I blended-
1-2 handfuls coriander leaves and stalks
1 stem lemongrass
1 spring onion
2-3cm fresh ginger
1 garlic clove
1 tbsp coconut oil 
1/3 carton coconut cream
4 tsp coconut aminos
1 cup homemade chicken stock 
Juice of a lime
Pinch of chilli
Splash of water

I used buckwheat noodles but you could substitute them for courgetti/zoodles or omit. I also added broccoli and topped my bowl with coriander, chilli flakes, slices of spring onion and a wedge of lime.

I posted this recipe months ago, but I got a message today from a client I used to meal prepped for asking if I'd share it. She used to request this salad weekly, and it's  hands down one of my all time favorites, so I figured it was worthy of a re-post

Not only is it easy to throw together, but it's absolutely delicious. I’ve made this for friends, family, and clients many times over the years and it always gets rave reviews.
#
I didn’t list specific amounts for the ingredients but that was purposeful because it can be made as a single serving, or in a large batch that can last for 3-4 days (it's even better the next day). If you want to make a large batch, I’d suggest using 2-3 chicken breasts, 1 apple, 2 cups of broccoli, and 1 Tablespoon of oil and mustard. But you can easily adjust the amounts of all the ingredients to suit your specific taste.

For the dressing, I’d suggest olive or avocado oil as they are the most neutral tasting. I personally use stevia to sweeten it a little, but sugar, honey, maple syrup, or even Splenda will work well.

I made this chia seed pudding with chia seeds, cocoa nibs, shredded coconut and coconut milk and let that sit in the fridge over night. In the morning I topped it with fresh raspberries and diced mango along with my favourite Coconut Clusters with super seeds by @innospecialty.

Rib Eye StirFry/ Korean BBQ Beef & Broccoli ... dinner for 2(although it really could serve 4)and we fought over the last pieces...ps- I won. Ya ya, another sesame sprinkled beef stir fry? Yes, but no...this one is even simpler then the last. By now you’ve caught on to my no frills, no fuss dinners, tonight being no exception,I simply followed the directions on the bottle of the new Korean BBQ sauce by Mikee, but with a few small tweaks here and there. Simply slice approx. 2 lbs of boneless ribeye and or filet steak in strips. Add 1/2 c bbq sauce and refrigerate overnight.  Before cooking, cut up and separate /soak/ check 1 head of broccoli 🥦 or use frozen. By now you’ve caught on to my no frills, no fuss dinners, tonight being no exception,I simply followed the directions on the bottle of the new Korean BBQ sauce by Mikee, but with a few small tweaks here and there. Simply slice approx. 2 lbs of boneless ribeye and or filet steak in strips. Add 1/2 c bbq sauce and refrigerate overnight. This pasta reminds me of longer days and warmer temperatures with its citrusy flavour. It's quick, easy, and brightens any dismal day. . 
Dice chicken breast. Fry in olive oil with crushed garlic, salt and pepper. Set aside. .
Zest and juice 3 lemons. Set aside separately. .
Warm 2 tbsp butter on a skillet and melt over medium heat. Add 1/2 cup heavy cream and simmer 2 mins. Add lemon juice and half of zest and cook for 2 more mins. . 
Place pasta in skillet with cream and butter mixture. Add half cup of pasta water + 1 cup grated parmesan + 1 small packaged arugula. Toss to coat. Add more pasta water if needed (up to 1 cup). Serve with Parmesan cheese, salt and pepper. . 
Plate. Add Chicken. Sprinkle parmesan flakes on top. Serve.

I posted this recipe months ago, but I got a message today from a client I used to meal prepped for asking if I'd share it. She used to request this salad weekly, and it's  hands down one of my all time favorites, so I figured it was worthy of a re-post

Not only is it easy to throw together, but it's absolutely delicious. I’ve made this for friends, family, and clients many times over the years and it always gets rave reviews.
#
I didn’t list specific amounts for the ingredients but that was purposeful because it can be made as a single serving, or in a large batch that can last for 3-4 days (it's even better the next day). If you want to make a large batch, I’d suggest using 2-3 chicken breasts, 1 apple, 2 cups of broccoli, and 1 Tablespoon of oil and mustard. But you can easily adjust the amounts of all the ingredients to suit your specific taste.

For the dressing, I’d suggest olive or avocado oil as they are the most neutral tasting. I personally use stevia to sweeten it a little, but sugar, honey, maple syrup, or even Splenda will work well.

SHRIMP COCONUT CURRY 🤤

What you need👇🏼
500g peeled, deveined medium shrimp
2 tbsp coconut oil 
1 small onion, finely chopped
3 garlic cloves, minced
1 green bell pepper, chopped
1 cup baby spinach
Handful of Snow peas, chopped
Handful of Baby corn, chopped
1 tsp ginger, finely chopped
4 tbsp fish sauce
1 small lime, squeezed
300ml canned coconut milk
3 tbsp peanut butter
1/4 tsp black pepper 
Chopped basil and parsley

Sauté the onion and garlic with the coconut oil for 5 mins on medium heat. Add the #veggies and continue to sauté for another 5-7 mins. Mix the ginger, fish sauce, lime, peanut butter and coconut milk together in a bowl 🥄. Add the sauce to the vegetables and cook on medium heat until thickened. In the meantime cook the 🦐 separately on medium heat for 3 minutes then add to the sauce & vegetables. Cook for another 5 minutes, or until done. Garnish with basil and parsley and serve alongside, rice/quinoa/cauliflower rice 👍😍
