This is my strawberry steak salad served with baby spinach and beets in a balsamic dressing. The steak can be served as an main with sides or in a pita as a sandwich or in this delicious salad. The options are endless.

Mash the banana & blueberries, add in the egg and whisk, finally add in the whey if your using it 😉

Chili is by far one of my favourite, easy go-to dinners in the winter. I love it because: 1. You can batch freeze, 2. It’s so easy with very few ingredients, 3. If you make a good one, it’s such a satisfying meal.
I think as moms we’re all struggling to figure out what to make for dinner. It seems to never get easier.

Thai green chicken curry noodle bowl.
To make the Thai green curry sauce I blended-
1-2 handfuls coriander leaves and stalks
1 stem lemongrass
1 spring onion
2-3cm fresh ginger
1 garlic clove
1 tbsp coconut oil
1/3 carton coconut cream
4 tsp coconut aminos
1 cup homemade chicken stock
Juice of a lime
Pinch of chilli
Splash of water
I used buckwheat noodles but you could substitute them for courgetti/zoodles or omit. I also added broccoli and topped my bowl with coriander, chilli flakes, slices of spring onion and a wedge of lime.

Rib Eye StirFry/ Korean BBQ Beef & Broccoli ... dinner for 2(although it really could serve 4)and we fought over the last pieces...ps- I won. Ya ya, another sesame sprinkled beef stir fry? Yes, but no...this one is even simpler then the last. By now you’ve caught on to my no frills, no fuss dinners, tonight being no exception,I simply followed the directions on the bottle of the new Korean BBQ sauce by Mikee, but with a few small tweaks here and there. Simply slice approx. 2 lbs of boneless ribeye and or filet steak in strips. Add 1/2 c bbq sauce and refrigerate overnight. Before cooking, cut up and separate /soak/ check 1 head of broccoli 🥦 or use frozen. Heat 2 tbsp stir fry oil of choice in a wok or large sauté pan, drain sauce off beef(reserve marinade) and sauté until brown. Add broccoli and keep cooking. A lot of water will come out of both the beef & broccoli (use asparagus, green beans, snow peas). Pour off liquid and reserve once again. Transfer beef to an oven proof dish. Add reserved liquid to wok/pan, turn heat up to high and add a tsp of corn starch whisking continuously to avoid any lumps. You can also add more sauce from the bottle.Bring to a boil and continue to cook until sauce thickens. Reduce heat and let it simmer a while more. Pour thickened sauce over beef and broccoli. At this point I put my beef in the oven on the top rack at 375 Bc I like my beef crispy...serve over steamed rice ( I use Trader Joe’s microwave rice. Because it’s just that easy) another #fakeouttakeout For you and your family to enjoy. If you’re shopping on the way home from work & looking for dinner inspiration try this super tasty & satisfying fresh winter salad. Ready in 5 minutes and with about 5 ingredients even @jamieoliver would approve! An Italian mixed salad that includes a splash of lush read radicchio leaves is what makes this a real winner! Packed with vitamin C to help fight off flus n colds!
1. Toast seeds & nuts on the frying pan
2. Assemble salad leaves, orange segments & crumbled blue cheese of choice.
3. Toss in nuts & seeds
4. Season with salt & pepper and drizzle with olive oil & balsamic vinegar. Yum!
A super quick trout, veggie and spelt pasta with lemon for the little ones dinner tonight!! So easy when you have portions of trout ready to go in the freezer along with pre cooked pasta! Grated veggies means they cook through quick so you have a meal made in less than 10 minutes!!

Lemony Fettuccine w/ Garlic Chicken
This pasta reminds me of longer days and warmer temperatures with its citrusy flavour. It's quick, easy, and brightens any dismal day. .
Dice chicken breast. Fry in olive oil with crushed garlic, salt and pepper. Set aside. .
Zest and juice 3 lemons. Set aside separately. .
Warm 2 tbsp butter on a skillet and melt over medium heat. Add 1/2 cup heavy cream and simmer 2 mins. Add lemon juice and half of zest and cook for 2 more mins. .
Place pasta in skillet with cream and butter mixture. Add half cup of pasta water + 1 cup grated parmesan + 1 small packaged arugula. Toss to coat. Add more pasta water if needed (up to 1 cup). Serve with Parmesan cheese, salt and pepper. .
Plate. Add Chicken. Sprinkle parmesan flakes on top. Serve.
Ah yes, it’s that Monday morning when I realized, I got side tracked, and didn’t put the pasta fagiiole in the Rockcrok!
It’s ok, the whole chicken in the fridge can be made in 30 minutes in the Deep Covered Baker!

This is my lunch today - super easy #keto - raw veges with dip and tuna. It looked so pretty I had to take a photo - though I got mocked by @identifymarketing team for using our lighting... There can be a feeling keto is completely carb free - but there are heaps of veges here! They are just low carb and in quantities that don’t add up in terms of net sugar. You can still eat a rainbow. This is one of my favourite lunches. Dip. I love dip.

Chicken Apple Broccoli Salad
I posted this recipe months ago, but I got a message today from a client I used to meal prepped for asking if I'd share it. She used to request this salad weekly, and it's hands down one of my all time favorites, so I figured it was worthy of a re-post
Not only is it easy to throw together, but it's absolutely delicious. I’ve made this for friends, family, and clients many times over the years and it always gets rave reviews.
I didn’t list specific amounts for the ingredients but that was purposeful because it can be made as a single serving, or in a large batch that can last for 3-4 days (it's even better the next day). If you want to make a large batch, I’d suggest using 2-3 chicken breasts, 1 apple, 2 cups of broccoli, and 1 Tablespoon of oil and mustard. But you can easily adjust the amounts of all the ingredients to suit your specific taste.
For the dressing, I’d suggest olive or avocado oil as they are the most neutral tasting. I personally use stevia to sweeten it a little, but sugar, honey, maple syrup, or even Splenda will work well.
Give it a try; I promise you won’t be disappointed.
