Art, or meat? We'll let you decide, because Chef @john_blevins is definitely an artist with charcuterie. Fermented summer sausage: 50/50 hand cut to ground pork farce, fennel pollen, currants, seeds and pate spice. #damn#cloveandhoof
The conversation I had with my physician about hunting was fairly comical, but I'm cleared to go. Now more than ever eating wild game is so important to me, and I can't wait to raise this little guy growing inside me healthy organic food with guaranteed no hormones, and a respect for where our food comes from.
Unlike most seventy five years olds, who enjoy a round of golf and a snooze on the sofa of an afternoon, Bob likes to moose hunt. Here he is paddling his canoe containing a thousand pound moose across a beaver pond. We had to muscle it over a couple of dams, across numerous semi submerged trees, past an angry cow moose I named Mrs. McStampy, before finally dragging it over dry land to get back to the boat. I hope I'm as badass as Bob when I'm seventy five! #goals
Warning: this is what food looks like. Two days of hard work from the moment my buck hit the dirt Monday. Field dressing, quartering and cooling the meat overnight in a September snowstorm, followed by a long, steep pack out of the wilderness (thanks @mysteryranch backpacks!). Once home, a light rinse to remove ash and grime, some trimming, pat down and drying again in front of two fans, and then back on frozen jugs in the @yeti to bleed and tenderize for another day. I even snuck in a simple first meal, and it was incredible. Lean, healthy, organic, wild meat fresh from the North Cascades. Tonight comes the delicate part: butchering and breaking down the quarters, loins, and flanks into steaks, roasts, stew meat, burgers and jerky. It would be easy to pay someone to do most of this, but for me there's no fun or satisfaction in that. #meateater#hunting#DIY#huntfishgathercook#muledeer#venison
@fishingjosh was on top of the world when he climbed to the apex of this rock formation to get a good vantage point. But when the sun had set, watching him struggle to find his way back down was the highlight of the day for @jmburt25 and me.

You often head out on these hunts to do a specific thing. Some of the group will accomplish that task, others won't. But the real trophy is buried in the experience. The most prominent component of that is who you meet and the relationships that are formed that often will last a lifetime. Often you have no clue who is going to be in camp with you. But, sometimes, just sometimes, you meet a group of guys that inspire you, change you, and that have gone to battle for you and I's freedoms. If you met one of these guys you likely only get an evening of their company. We were lucky enough to get a whole week.
