I love it when chefs can use different inspirations and backgrounds to push food forward. The @dalchinimelbourne banquet infused great Indian influences into modern cooking techniques and ingredients. The starters of Idli (steamed flour cakes) with sambar (lentil stew) and uni were packed full of flavour. The bheja puffs with lamb mousse was a great contrast of textures and flavour. Lastly the tomato shorba (usually a stew but the flavours were infused into a tomato consomme type drink) was super refreshing. The rest of the meal all had wonderful flavours from a coddled egg with asparagus and a curry sauce to a crystal bad prawns khichdi (rice dish like a risotto) were all to my liking. Reminiscing last Monday night at @dalchinimelbourne pop up. Mango Mousse Yoghurt Sponge Pomegranate. I love the mango mousse inspired by mango lassi so much, so creamy and the yoghurt sponge is super creative. I want this all to my self.
So I decided to treat myself to a lovely Brunch today. @thestablesbar do a wonderful brunch on Saturday between 11am -3pm. A very civilised hour I think. For $45 you get this lovely savoury plate, a glass of Chandon, unlimited tea and coffee and an amazing dessert plate (that will be my next post 😉). Anyway this plate was Arancini balls filled with goats cheese, Mac n cheese croquet with cauliflower puree, brioche with cream cheese, fennel, candied walnuts and balsamic plus a beef slider with spicy tomato sauce.
