Today's dinner situation was very Middle Eastern of me💁🏻
If you're unfamiliar with this dish (you're missing out on life), it's basically spicy 🌶 tomato-y middle eastern rice -some cook it with vegetables- that's topped with toasted raisins + nuts - I used cashews and slivered almonds ..others may use one or the other, or pine nuts, etc.
Typically it can be eaten alone, but many enjoy it with a simple Middle Eastern side salad (no leaves, just diced cucumber, tomato, lemon, salt, and olive oil).
I decided to make mine with a yogurt salad, my mother in law's must have next to this rice, and my husband's favorite!
For the KEBSA: place a pan on medium high heat (I used my @instantpot because it's ahhhmazing and has a sauté function 😍) add some olive and let it heat up while you dice 1 whole onion + 1/2 a red, orange, and yellow bell pepper. Place them in the pan to cook and add in a bag of shredded carrots (I used it for convenience, as well as having it on hand..you can easily just cube/julienne about 3-5 carrots. Once the vegetables have cooked down, add salt to taste, your kebsa spices (you can find this at your local Middle Eastern, Turkish, or Indian market), as well as 1 tsp ground cardamom. Then add in about 2 tbsp tomato paste + 1 whole jalapeño(or your favorite pepper) sliced in half and seeded.
You can cook your rice in the same pot as the vegetable mixture, which is what I did..but that will give you more of a rice-a-roni texture (which I didn't exactly want) or you can cook the rice separately and then add on the vegetable mixture later once the rice is done and has had time to sit for 10 minutes.
*feel free to add some chicken broth in the rice cooking process*
For the SALAD: chop up about 1 cup of fresh mint, parsley, and cilantro + 3 roma tomatoes + 3 🥒 + 1 red or white onion. Add all these to a bowl and dump a huge tube of your favorite plain yogurt (if yours has a bit of tang that's even better). Then squeeze in 2 whole 🍋 + half a lime + 1 jalapeño + sea salt to taste.

Experience in the Syrian cuisine is not essential provided you have a passion for food and the desire to learn.
You will be motivated and interested in exploring new flavours and meals and it is essential that you are prepared to taste test all our food as part of the routine checks that is carried out daily.
You will be able to work in a high-pressure, high-turnover environment, have excellent interpersonal and communication skills, be a team player and also able to work unsupervised. You will also be able to work a flexible schedule including days, evenings, weekends and public holidays.
Whilst we are always welcoming applications from all ages, please note that part of the nature of your work might include running stalls in events and festivals and so you must be of an age that allows you to independently run a stall outside of the premises. You will most likely be left to work alone after a period of training therefore applicants should NOT be of an age where such restrictions may apply.
