Happines is ...... seeing things in a different perspective ๐Ÿคธ๐Ÿฝโ€โ™€๏ธ. For this #MindfulMonday I encourage you to try to look at something or someone differently. If someone you work with drives you nuts, try to see what it is that makes them upset. If you take a particular route to work everyday, try a different one. If you do the same workout or make the same type of meals, try to step out of your routine or comfort and try something new. If you always come home to watching TV, try reading a book or educational blog or magazine..

For me, being back at work and struggling significantly with chronic fatigue, I am going to spend the day trying to focus on making positive comments to everyone I engage with instead of complaining how exhausted I am โœ–๏ธ ๐Ÿ˜ด โœ”๏ธ ๐Ÿ˜

Nothing says fall like some cinnamon apple oatmeal muffins, ammirite? ๐ŸŽ
THE GOODS:
โ€ข2 cups oats โ€ข2 scoops vegan vanilla protein powder โ€ข2 apples, chopped โ€ข2 tbsp olive oil โ€ข1 cup almond milk โ€ขDash of cinnamon
โ€ข1 tbsp vanilla extract โ€ข1-2 tbsp of stevia or your choice of natural sweetener (maple syrup, agave, etc)
โ€ข1-2 tbsp almond butter 
MAKE IT:
1. Pre-heat oven to 350 F
2. Grease muffin tin with olive oil spray or coconut oil 
3. Ground oats in food processor or blender, place in mixing bowl
4. Chop apples and pulse in food processor or blender, add to mixing bowl along with all other ingredients 
5. Add mixture to muffin tins (should make 6 large muffins or 12 mini muffins)
6. Bake for 18 minutes in oven & top with almond butter ๐Ÿ‘Œ๐Ÿป

Pulses, including white beans, are part of the legume family, but when we talk about pulses we refer only to the dried seed. Legumes are good sources of proteins, amino acids, fibre, iron, B group vitamins and other nutrients. 
Those of you who are regular followers of my blog already know that I am a Gourmet Guru of the Pulses organization @lovepulses (http://pulses.org/recipes/meet-the-gourmet-gurus/604-meet-margarita-ribot ) with whom I shared one of my pulses recipes for Global Pulse Day representing both Spain and Ireland. 
And I am also proud to be a contributor to the International Year of Pulses of the FAO (Food and Agriculture Organization) of the United Nations @unfao with whom I shared a few of my pulses recipes.

Legumes are a staple of the Mediterranean diet and for this reason you can find plenty of vegetarian and vegan pulses recipes on my blog under the "Beans & Other Legumes" category.

This recipe unites the nutrients of white beans with the nutrients of Brussels sprouts that are surprisingly high in protein for a green vegetable and they are rich in antioxidants, anti-inflammatories compounds, fibre, folates, vitamin A, vitamin C, vitamin K, vitamin B6, folate, potassium and manganese. Together with the rest of Mediterranean ingredients in this recipe, this is a highly nutritious and tasty vegan dish perfect for @meatfreemonday ๐Ÿ˜‹

It is so easy to judge yourself based on supposed popularity, social media and how well you fit the โ€˜norm.โ€™ However this weeks #mondaymantra is all about not trading authenticity for approval. Although it sounds like a cliche, this doesnโ€™t make it any less true. Your quirks, individuality and personality is what makes you special and not how you mould yourself on others. This week donโ€™t devalue yourself by trying to seek approval through changing yourself, but be authentic and genuine. Remember you are capable, brilliant and unique and that is what you are loved for. ๐Ÿ‘Œโค๏ธ๐Ÿ’ช

Stress is, imo, one of the biggest causes of disease. Stress definitely led and continues to contribute to all my gut health problems. The concepts around telomeres (genetics) and epigenetics is so interesting to me and the fact that you can possibly biohack (ever heard of biohacking?) your body to give you amazing health is not too distant from becoming mainstream. --

Delicious Mediterranean dinner takeout, hold the pita bread! It was a lovely family affair today celebrating a birthday. Our morning involved a fun trip to the Santa Cruz Mountains to ride the classic engines Thomas/Percy. I definitely recommend it if you are in town and have a train obsessed child. We packed lunch of baked chicken thighs+fresh cucumbers+red peppers+sweet potato+seasonal fruit. Finger type foods you can eat cold. Snacks like #grassfedjerkychews came to the rescue in the car, because even the most satisfied bellies always need something to munch on during a long car ride. When dinner came around we ordered from one of our favorite Mediterranean restaurants. I must have had three servings of whatโ€™s on my plate + the staples like baba ganoush and hummus with nutritious chicken liver (#yum, I know). Kids had veggie soups with a side of play time, too busy to eat (mine had to recoup calories right before bedtime). Iโ€™m beat but looking forward to tackling tomorrow!๐Ÿ‘ŠHope you had a fantastic Sunday! Night.

I'm doing a VERY minor sugar detox this coming week to see if it helps out with my digestive issues... normally I'd be totally against any sort of "restrictive diet" but I'm trying to pinpoint what's causing all my stomach problems and maybe this'll help. Sometimes your body just needs a little re-set... so back in the kitchen tomorrow and back to a busy week of school work!! {NEW IDEA} Spiralized Yellow Zucchini & Carrots in a Sunflower Butter Sauce with lime. AKA my healthy clean version of noodles with peanut sauce. It was a craving and it had to be made. Completely inspired by @gfjules peanut sauce she had on her Instagram. I couldnโ€™t have most ingredients but it did inspire me to create something I could have. Yum! 
There are 2 ways you can make this...

FULLY RAW - massage the sunbutter with lime juice then massage it into the noodles.

ALDENTE (as pictured). First the sunbutter and lime juice in the pan. Then add the Zoodles. Then cook it for a minute or two and then transfer to your bowl and eat. Remember you do NOT want soggy noodles. Keep as close eye when making this to prevent mush!

How are you 9 months old already?! Nutrition wise, heโ€™s still nursing every 3-4 hours between 7am-6pm. He is currently eating bfast, lunch, and a snack or two. I nurse him an hour before each meal. You're all going to laugh at me when I tell you this but I don't mind because I know I'm a nerd ๐Ÿ˜Ž. Can you handle the suspense?....hahaha. Here it goes... I got a wagon for the farmers market! So anticlimactic, I know, but for me it was so exciting!!! We have been schlepping our food around the market since we moved here, but no more. Now I don't have to carry anything. Nothing at all! Poor Gregory, though. He has to pull the darn thing. He didn't complain though, so it must be fine. Pulling is better than carrying. Completely different experience today at the farmers market. Good evening all ๐Ÿค— New week, new goals ahead ๐Ÿ™Œ๐Ÿป... taking it one week at the time is the best way to go sometimes ... even taking it day by day is okay! Make every move and ever meal count. Make every extra minute of sleep count. It all accumulates โค๏ธ

For this week I did a mini meal prep and itโ€™s mainly protein - Chicken + tuna salad; I also cooked some quinoa which I will use for my plant based lunches this week ( I forgot to take a picture of it ๐Ÿ™Š); I roasted cauli and some zucchini for the next 2 days and then I will use dinner leftovers for lunches for the rest of the week. Cooking little extra at dinner time really helps the next day!

This week I am focusing on protein and fiber snacks such as nuts @powerupsnacks , dairy free yogurt @foragerproject, eggs and hummus; I took out some sweet yogurts and granolas for the next few weeks, I feel like my body could use some change; my sugar will come from high fiber fruits such as berries and apples , as well as sweet vegetables such as butternut squash (will finally share that soup recipe with you all); point here is, always listen to your body ques ๐Ÿ‘Œ๐Ÿป

Take a peak inside my fridge this week. Heavy on veggies and lot of goodies for soups! I am also encouraging my kids to eat more fruits as snacks instead of typical bagged stuff, so I put some clementines and cut up strawberries next to their yogurts and cheeses as a reminder ๐Ÿ˜‰
