I’m sure most of you know how delicious miso eggplant is, but have you tried with with cauliflower and tofu? It’s amazing! 😍
Just coat them all in a mix of red miso, tamari, rice wine vinegar, chili flakes, oil and water to thin it and roast in the oven until caramelised and delicious. I serve it with rice, sautéed Asian greens and spring onion 🍆🍃🍚

A little obsessed recently with the vegan friendly futomaki (avocado, cucumber, carrots, oshinko, Kanpyo, shiitake mushrooms) in Sakura on McCurtain street and of course a side of edamame and miso soup (ask for the veg friendly one). So many vegan options on the menu to choose from and the friendliest staff. ❤️ Louise
