I've been testing recipes for Christmas cookies.....first was Chocolate Chip Sea Salt cookies. Today's test is Chewy Ginger Molasses, these can be made completely animal product free and turn out great.
Melt 1/4 cup butter (or coconut oil) just until chunky. Add 1/2 cup brown sugar and 1/4 cup unrefined granulated sugar. Stir until the sugar dissolves. Add 1/3 cup unsulphured molasses, and 1 beaten egg (omit if egg free, add 2 tbsp water or almond milk and 1/2 tsp baking pwd). To the wet add 2 cups spooned and leveled organic unbleached flour, 1 tsp baking soda, 1.5 tsp cinnamon, 1 tsp ginger, 1/2 tsp ground cloves and 1/8 tsp salt. Mix to combine well. Chill for one hour.
Roll about a tablespoon of dough into a ball, roll ball in sugar. Bake at 375 Fahrenheit for 8 minutes or until lightly browned.
