Alright friends. Here it is -- the weekly grilled cheese installment -- and it is KILLER.
For our Merlot, we tried a slight variation of the Huckle-Bacon Brie found over at bakingbytes.com. (Go check it out!) There's one slight twist: We added a few shavings of dark baking chocolate to this sandwich to play up the beauty of chocolate / wine, chocolate / bacon, chocolate / berry pairings. The slight bitterness of dark chocolate also adds a bit of subtle depth. This is our favorite yet!
Our tasters said they liked it equally well with and without the chocolate so we leave that element up to you.
The Merlot highlights the jammy tart sweet huckleberry and complements the crispy bacon like a dream.

It is so great to be back, but I just got to experience what it was like to see a new culture, a new place and feel almost...free. No school or drama, meeting new amazing people, and learning so much from experiences and from others. Man do I have a bad case of wanderlust...😂
I used to go to physical therapy for 6-7 hours a day 5 days a week to try and gain movement and to get better. One day, my trainer asked me what I was applying all of my therapy towards. I simply said “nothing really”. She reminded me that the whole reason of me putting in the hours to get better was to enjoy the things that I used to. In the midst of all my therapy, I had forgotten to do just that. As soon as I took my therapist’s advice and started enjoying what I used to love, I noticed that I started improving at double the rate I was before; both mentally and physically. From then on, I made it my goal to enjoy one of my most favorite things of all, the great outdoors. That’s why I took an extra day to get outside here in Montana and enjoy the mountain air with a great group of guys. A lot of people ask me what the best kind of therapy there is to get better and my answer is always whatever puts a smile on your face and brings joy to your life. For me, that’s getting outside .
